More Philly Stuff? You got it! Here's how to make a real Hoagie. The word Hoagie came from the sandwiches that used to get eaten by workers over on a place that was nicknamed "hog island" The workers there would bring crusty rolls with Italian meats and some olive oil and they became known as "hoggies" which eventually morphed into hoagie... Now that I've sounded like a Cliff Claven... the only other thing I have to say is don't make this with a soft roll! It has to be a GOOD crusty Italian Long Roll!

2 teaspoons red wine vinegar
1 tablespoon dried oregano
1 tablespoon olive oil
4 hoagie rolls
1/4 lb prosciutto di Parma, thinly sliced
1/4 lb capicola, thinly sliced
1/4 lb genoa salami or 1/4 lb soprassata salami, thinly sliced
1/4 lb provolone cheese
1 large tomatoes, thinly sliced
1 small onion, thinly sliced
1/8 cup shredded lettuce

Steps:

  • Slice the rolls, but not all the way through.
  • Place the vinegar and oregano in a small bowl. Slowly whisk in the oil until emulsified.
  • Remove some of the bread from the center of each half of roll.(if desired)
  • Drizzle a little of the olive oil mixture on the bread.
  • Place first the meats, then the cheese in layers.
  • Top with the tomatoes, onions, then the lettuce. Drizzle with more of the dressing, as desired.

I used to work in a sandwich shop as a teen. I don't know how many sub sandwiches I made, but I'm sure it was in the thousands. It doesn't take much to jazz up a simple sandwich. This Hoagie dressing is all you need.

3 tablespoons red wine vinegar
1 teaspoon dried basil
1 teaspoon dried parsley
1/4 teaspoon dried thyme
1 teaspoon sugar
1 clove garlic (grated)
3 tablespoons red onion (grated)
1/2 small jalapeno pepper (minced)
1/2 lemon (juiced)
1/2 cup extra virgin olive oil
1 tablespoon Dijon mustard
kosher salt
freshly ground pepper

Steps:

  • Combine the vinegar, basil, parsley, thyme, sugar, garlic, red onion, jalapeno and lemon juice.
  • While whisking the mixture, slowly pour in the oil.
  • Whisk in the mustard. Add salt and pepper and whisk until well combined.

1 cup packed fresh basil leaves
5 cloves garlic
2 cups mayonnaise
2 tablespoons lemon juice
Kosher salt
1/4 cup red wine vinegar
1/4 teaspoon red pepper flakes
2 tablespoons honey
1/4 cup olive oil
Kosher salt and freshly ground black pepper
4 heads romaine, finely shredded
2 red bell peppers, very thinly sliced
2 yellow bell peppers, very thinly sliced
Kosher salt and freshly ground black pepper
One 6-foot hoagie roll
4 pounds spicy capicola, sliced
4 pounds mortadella, sliced
4 pounds genoa salami, sliced
1 pound provolone, sliced
12 Roma tomatoes, sliced
2 cup sliced green olives
2 cups sliced pepperoncini
2 cups sliced roasted peppers

Steps:

  • For the basil mayo: Puree the basil, garlic, mayonnaise, lemon juice and salt to taste in a blender until smooth. Transfer to a bowl.
  • For the red wine dressing: In a Mason jar with a lid, combine the red wine vinegar, red pepper flakes, honey, olive oil, and salt and pepper to taste. Shake vigorously until well combined.
  • For the hoagie: Mix together the romaine, bell peppers and some vinaigrette and season with salt and pepper.
  • Cut the roll horizontally, then remove the insides of the top of the roll to create a well. Spread basil mayo on each side.
  • Place the capicola, mortadella, and salami along the bottom, then top with the provolone. Add the tomatoes, and then top with the olives, pepperoncini and roasted peppers.
  • Fill the well in the top of the roll with the dressed romaine and bell peppers and form a sandwich. Cut into small slices and serve immediately.

½ pound cooked ham, thinly sliced
½ pound Genoa salami, thinly sliced
1 pound processed American cheese, sliced
2 cups mayonnaise
2 teaspoons dried oregano
1 onion, chopped
½ head iceberg lettuce, shredded
2 tomatoes, diced
12 hoagie rolls, torn into pieces for dipping

Steps:

  • Tear the ham, salami and American cheese into small pieces. Place in a large bowl.
  • In a medium bowl, blend the mayonnaise and oregano. Mix the mayonnaise mixture into the ham mixture 1/2 cup at a time, until meats and cheese are well coated. Mix in the onion.
  • Before serving, mix in the lettuce and tomatoes. Serve with the hoagie roll pieces for dipping.

1/2 cup diced red onion
1/2 cup hot banana peppers, finely chopped (optional)
1/2 cup mayonnaise
1 tablespoon Italian seasoning
3-4 cups finely chopped iceberg or Romaine lettuce

Steps:

  • In a large bowl, combine the chopped meats and cheese, onion and banana peppers. Add the mayonnaise and Italian seasoning and stir to combine.
  • Just before serving, stir in the chopped lettuce. Serve with baguette slices or crackers.

1 tablespoon sugar
1/2 teaspoon dried Italian seasoning
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 clove garlic, minced
1/4 shallot, chopped
1/2 cup olive oil

Steps:

  • Place the vinegar, mustard, sugar, Italian seasoning, salt, pepper, garlic and shallots in a blender or food processor. While the machine is running, slowly drizzle the olive oil through the blender top or feed tube until the dressing is combined and emulsified. Adjust the seasoning if necessary; add more oil if you want it less acidic. Store the dressing up to 2 weeks in the fridge.

  • In a small bowl, combine butter and salad dressing mix; spread 1 tablespoonful inside each bun. On bottom of each bun, layer one slice of meat, two slices of cheese and another slice of meat; replace tops. Spread 1 tablespoon butter mixture over top of each bun. , Place on a baking sheet.
