BUTTERMILK HOE CAKES



Buttermilk Hoe Cakes image

Number Of Ingredients 16

2/3 cup warm water (about 105 degrees F, no higher than 110)
1 teaspoon active dry yeast
1/2 teaspoon sugar
1 cup finely ground yellow cornmeal
1 cup all-purpose flour
1/2 teaspoon salt
2 tablespoons, firmly packed brown sugar
1/3 cup buttermilk
2 eggs
1/2 cup canola oil, divided
4 tablespoons butter, divided
1/2 teaspoon large flake sea salt
Hot Molasses Butter, recipe follows
1 stick salted butter, room temperature
1/8 teaspoon cayenne pepper
1 tablespoon unsulphured, dark molasses

Steps:

  • In a glass measuring cup, add the warm water, stir in the yeast and the 1/2 teaspoon of sugar and let bloom until foamy, about 10 to 15 minutes.
  • Combine the cornmeal, flour, salt and brown sugar in a large bowl. Pour the yeast mixture into dry ingredients. Combine the buttermilk and eggs in the same measuring cup used for the yeast, and add it to the yeast and flour mixture. Mix well with a whisk. Set aside for 10 minutes.
  • In a large nonstick skillet over high heat, add 1/3 of the oil and a tablespoon of the butter and heat until hot. Ladle 2 ounces of batter per cake into the pan, cook for 2 to 3 minutes, flip, and cook for 2 minutes more. Remove the cake to a towel lined plate, then sprinkle lightly with sea salt. Repeat with the remaining batter, adding additional oil and butter per batch. Arrange the hoe cakes on a serving platter and serve immediately with Hot Molasses Butter.
  • In a small bowl, beat the butter with a hand mixer until light and creamy. Add the salt, cayenne, and molasses and mix well.
  • Guy's Tip: If you have time, turn the butter mixture out onto a piece of plastic wrap and form it into a cylinder. Wrap tightly and refrigerate until firm, about 1 hour. Slice into 1/4-inch rounds and serve with Hoe Cakes.

2 teaspoons of bacon drippings
2 cups of self rising flour
1/4 cup very cold butter, cubed
3/4 to 1 cup cold buttermilk
2 tablespoons of butter, melted, optional

Steps:

  • In an 8-inch cast iron skillet, melt the bacon fat over medium high heat. Meanwhile, cut the cold butter into the flour. Add only enough buttermilk to the flour to form into a shaggy dough, turn out onto a floured surface, sprinkle a small amount of flour on top and quickly shape into a disc. Turn over, sprinkle additional flour on top and tighten disc, just slightly smaller than the skillet. Use a wide spatula to transfer the dough to the hot skillet. Cover and reduce heat to between medium and medium low. Cover and cook until the bread browns on the bottom, then flip over, pour melted butter on top if desired, cover and cook until browned on the other side. Break off pieces or cut into wedges and serve with pure butter, honey, sorghum or cane syrup, or use your favorite jam, jelly, preserves or fruit butter.

1 cup yellow cornmeal
1 tablespoon sugar
3 1/2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
3/4 cup buttermilk
1/3 cup water
1/4 cup vegetable oil
Vegetable oil for frying

Steps:

  • In large bowl, mix flour, cornmeal, sugar, baking powder and salt. In another bowl, beat eggs, buttermilk, water and 1/4 cup oil with whisk. Add to dry ingredients; stir just until combined.
  • In cast-iron or other heavy skillet, heat about 2 tablespoons oil over medium heat. For each hoecake, pour about 1/4 cup batter into hot skillet. Cook until browned on both sides. Repeat with remaining batter, adding more oil to skillet as needed.

1/4 cup or bacon grease vegetable oil
or butter or clarified margarine, for frying oil
1/3 cup plus 1 tablespoon water
3/4 cup buttermilk
2 eggs
1 tablespoon sugar
1 cup self rising cornmeal
1 cup self rising flour

Steps:

  • Mix all ingredients together except for the frying oil in a bowl until well combined. Heat the frying oil or butter in a large skillet over medium heat. Drop the batter into the hot skillet. Use about 2 tablespoons of batter per hoecake. Fry each hoecake until brown and crisp; turn each hoecake with a spatula, and then brown the other side. With a slotted spoon, remove each hoecake to drain on a paper towel-lined plate. Makes about 16 hoecakes.
  • Chef's Note: Leftover batter will keep in refrigerator for up to 2 days.

Hoe Cakes were the first simple forms of corn bread in the South. Simple corn meal mixed with water and salt and then baked. Originally, Native Americans cooked these on hot rocks in an open fire. They were commonly referred to as Ash Cakes. Later, settlers from Europe adopted the recipe, cooking the cakes on the blades of their hoes in the fireplace. Slaves baked theirs on a plank or the cotton hoe on hot embers. This is where they get the name "Hoe Cake". Serve Hoe Cakes as bread or as a side item with dinner or as breakfast with butter and syrup.

2 cups boiling water (may need a little extra)
bacon fat (or use butter or vegatable oil for frying)

Steps:

  • Put water on to boil. In a large cowl combine the cornmeal and salt. When the water boils, measure it in a metal or tempered-glass measuring cup and measure 2 full cups water. Pour the boiling water over the cornmeal and stir. The cornmeal will swell up, absorbing the water and making a very thick mash. Heat a very well oiled large skillet over medium high heat, re-oiling the pan after each batch. Scoop out about ¼ cup of hot mash and shape into a patty. Fry the cakes in hot oily skillet until brown & crispy on both sides.

2 large eggs
1 cup buttermilk, plus more if needed
1 cup yellow cornmeal
1 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
1 teaspoon kosher salt
1/4 cup vegetable oil, plus more for the skillet
Unsalted butter, for the skillet, plus more for serving, optional
Syrup, for serving, optional

Steps:

  • Preheat the oven to 200 degrees F. Line a baking sheet with a wire rack.
  • Whisk the eggs and buttermilk in a medium bowl until beaten and combined. Whisk together the cornmeal, flour, sugar, baking powder and salt in a large bowl.
  • Combine the wet ingredients with the dry ingredients. Add a splash of water or an extra splash of buttermilk if it feels too thick. Add 1/4 cup of the vegetable oil and stir until just combined, being careful not to overmix. This is a thick batter.
  • Melt equal parts (about 2 tablespoons each) butter and vegetable oil in a large cast-iron skillet or griddle over medium heat. Working in batches, use an ice cream scoop to add small scoops (about 3 tablespoons each) of the batter to the skillet. Cook the hoecakes until bubbles start to appear in the face-up batter, 2 to 3 minutes. Flip and cook for another 1 to 2 minutes.
  • Remove the hoecakes to the wire rack and keep in the oven until they are all finished. Wipe out the skillet in between batches and add more butter and oil before repeating with the remaining batter.
  • Serve hot and fresh with butter and maple syrup if desired.

4 -5 tablespoons oil, for frying

Steps:

  • In a large bowl, measure the corn meal and salt. Pour the boiling water over the corn meal and stir it up. The corn meal will swell up, absorbing the water, and making a very thick mash.
  • Heat the oil in a large skillet over medium high heat. You can use as little as two tablespoons of oil per panful, but it is a little easier to use 4-5 tablespoons of oil for each panful. Use your waistline and frying skill as the final judge. Now scoop up a little of the corn meal mush (about 1/4 cup) and shape it into a patty. It will still be warm from the boiling water, so don't burn your self. Plop the patty into the hot fat and get it to frying. Make some more, unti you have a panful. When the underside is crispy brown, turn them and cook the other side. When both sides are crispy and brown, transfer them to a plate to keep warm, and start another batch.
