APRICOT WASSAIL



Apricot Wassail image

Apricots lend golden color and goodness to this fruity beverage from Ruth Seitz of Columbus Junction, Iowa.

Provided by Taste of Home

Time 30m

Yield 2 quarts.

Number Of Ingredients 7

1 can (16 ounces) apricot halves, undrained
4 cups unsweetened pineapple juice
2 cups apple cider
1 cup orange juice
18 whole cloves
6 cinnamon sticks (3-1/2 inches), broken
Additional cinnamon sticks, optional

Steps:

  • In a blender or food processor, blend apricots and liquid until smooth. Pour into a large saucepan. Add pineapple juice, cider and orange juice. Place the cloves and cinnamon sticks in a double thickness of cheesecloth; bring up corners of cloth and tie with a string to form a bag. Add to saucepan. (Or place loose spices in saucepan and strain before serving.) Bring to a boil. Reduce heat; cover and simmer 15-20 minutes. Serve hot in mugs. Garnish with cinnamon sticks if desired.

4 cups hot brewed tea
1 cup sugar
1 bottle (32 ounces) cranberry juice
1 bottle (32 ounces) apple juice
2 cups orange juice
3/4 cup lemon juice
2 cinnamon sticks (3 inches each)
24 whole cloves, divided
1 orange, sliced

Steps:

  • In a large kettle, combine tea and sugar. Add the juices, cinnamon sticks and 12 of the cloves. Bring to a boil and boil for 2 minutes. Remove from the heat. Serve warm or cool. Garnish punch bowl with orange slices studded with remaining cloves.

½ gallon apple cider
1 (46 fluid ounce) can pineapple juice
46 fluid ounces cranberry juice cocktail
1 orange, thinly sliced
5 cinnamon sticks
1 tablespoon whole allspice berries
1 tablespoon whole cloves

Steps:

  • Pour apple cider, pineapple juice, and cranberry juice into a stockpot. Place orange slices, cinnamon sticks, allspice berries, and cloves in a muslin pouch or directly into the apple cider mixture. Bring apple cider mixture to a boil; reduce heat and simmer until flavors have blended, 15 to 20 minutes. Remove orange slices and spices before serving.

This wassail has been a holiday tradition in my house for many years. An added bonus - the house smells wonderful while it's simmering!

6 cinnamon sticks
16 whole cloves
1 teaspoon allspice
2 (6 ounce) cans frozen apple juice concentrate
2 cups cranberry juice
1/4 cup sugar
1 teaspoon bitters
1/4 cup rum

Steps:

  • Place the cinnamon sticks, cloves, and allspice in the center of a large paper coffee filter. Fold the ends over and roll up burrito-style. Tie closed with dental floss or thread, leaving long ends.
  • Mix apple juice concentrate with water as directed on can (you should end up with 6 cups of juice).
  • In a saucepan combine apple juice, cranberry juice, sugar, and bitters. Bring to a boil. Tie the ends of the "spice bag" string to the middle of a wooden spoon and lay the spoon over the top of the pot so that the "spice bag" hangs in the juice without touching the bottom of the pot. Reduce heat and simmer at least 10 minutes.
  • Remove from heat and add rum.
  • Once I've made the wassail and added the rum, I pour this into a crock pot on low temp so that the warm wassail can be served up throughout the evening!

This is a family recipe that I played with year after year until it's just perfect. This year's version will be made from apples picked from our own orchard! This recipe is famous at our family Christmas party.

1 gallon apple cider
6 apples, cored and cut into 1 inch chunks
4 (2 inch) whole cinnamon sticks
¼ teaspoon ground mace
¼ teaspoon anise seed
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground ginger
3 tablespoons brown sugar
1 orange, thinly sliced
1 lemon, thinly sliced

Steps:

  • Combine the cider, apple chunks, and cinnamon sticks in a large kettle and bring to a boil over medium heat. Turn the heat down to low and add the mace, anise seed, ground cinnamon, nutmeg, ginger and brown sugar. Stir to combine, and simmer for 20 minutes until the spices have developed their flavor.
  • Drop in the orange and lemon slices, simmer for 5 more minutes, and turn off the heat. Ladle the wassail punch into mugs and serve hot. Include a few pieces of cooked apple or a cooked orange or lemon slice in each mug.

  • Combine all ingredients in a Dutch oven. Bring to a boil. Reduce heat and simmer 15 minutes. Strain and discard spices. Serve hot. Fun Fact: The beverage typically served as "wassail" at modern medieval-themed feasts most closely resembles mulled cider. Historical wassail was completely different, more likely to be mulled beer. Then, sugar, ale, ginger, and cinnamon would be placed in a bowl, heated, and topped with slices of toast as sops.
