1 cup mayonnaise
1 teaspoon paprika
1 ½ cups dried cranberries
1 cup chopped celery
2 green onions, chopped
½ cup minced green bell pepper
1 cup chopped pecans
1 teaspoon seasoning salt
ground black pepper to taste

Steps:

  • In a medium bowl, mix together mayonnaise with paprika and seasoned salt. Blend in dried cranberries, celery, bell pepper, onion, and nuts. Add chopped chicken, and mix well. Season with black pepper to taste. Chill 1 hour.

½ medium yellow onion, diced
3 ½ cups butternut squash, cubed
1 large celery stalk, chopped
4 cups wild rice, cooked al dente
3 ½ cups Walmart® Rotisserie Chicken, shredded
½ stick unsalted butter
4 tablespoons all purpose flour
1 ½ cups milk
1 cup chicken stock, or broth
2 teaspoons kosher salt
½ teaspoon freshly ground black pepper
½ teaspoon poultry seasoning
½ teaspoon garlic powder
1 teaspoon fresh thyme, chopped
1 tablespoon lemon juice
½ cup dried cranberries
½ cup shredded parmesan cheese
1 tablespoon fresh parsley, chopped

Steps:

  • Preheat the oven to 400°F (200°C).
  • Add the onion, butternut squash, celery, wild rice, and shredded Walmart® Rotisserie Chicken to a 9x13-inch (22 x33 cm) baking dish.
  • Melt the butter in a medium saucepan over medium-low heat. Whisk in the flour and let bubble for 1 minute. Slowly pour in the milk and chicken stock, whisking constantly, until combined. Simmer for 4-5 minutes, stirring frequently, until thickened and creamy.
  • Reduce the heat to low and whisk in the salt, pepper, poultry seasoning, garlic powder, thyme, and lemon juice until combined.
  • Pour the cream sauce over the chicken and rice mixture in the baking dish and fold with a spatula until well combined.
  • Sprinkle the dried cranberries over the bake, then top with the shredded Parmesan.
  • Cover the baking dish tightly with foil and bake for 30-35 minutes, or until the vegetables are tender. Uncover and bake for another 5 minutes, or until the cheese is browned. Remove from the oven and let rest for 5 minutes.

1/4 cup butter
1 bag fresh spinach, cooked and well drained
4 ounces cream cheese with herbs (I like Rondele)
1/2 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon nutmeg
2 eggs, beaten
1 package Ritz cracker, crushed (sleeve)

Steps:

  • Melt butter in a 9x13 inch baking dish.
  • Lay 4 chicken breasts, not in the baking dish, and top with 1/4 of the spinach and 1 oz of the cheese on each breast.
  • Place another chicken breast on top of each one and press down.
  • Mix together the flour, salt and nutmeg and then dip the breast"sandwiches" in the mixture, then in the eggs, and then in the cracker crumbs.
  • Place in the baking dish and keep each sandwich from touching.
  • Bake at 500 for 15 minutes, or until completely cooked.

1 carton (8 ounces) spreadable chive and onion cream cheese
1 can (8 ounces) sliced water chestnuts, drained and finely chopped
1-1/4 cups shredded Swiss cheese
1-1/4 cups shredded part-skim mozzarella cheese
1-1/4 cups cubed cooked chicken
3 green onions, chopped
2 jalapeno peppers, seeded and minced
1/4 cup finely chopped sweet red pepper
1/4 cup finely chopped green pepper
3 tablespoons coleslaw salad dressing
2 teaspoons Worcestershire sauce
1 teaspoon hot pepper sauce
1/4 teaspoon pepper

Steps:

  • Preheat oven to 375°. Unroll crescent dough and separate into triangles. On an ungreased 12-in. pizza pan, arrange triangles in a ring with points toward the outside, wide ends overlapping and leaving a 3-in. circle open in center. Press overlapping edges of dough to seal., In a large skillet, cook sausage over medium heat 4-6 minutes or until no longer pink, breaking into crumbles; drain and transfer to a large bowl. Stir in remaining ingredients., Spoon mixture across wide end of triangles. Fold pointed end of triangles over filling, tucking points under to form a ring (filling will be visible). 2 shallots, chopped
1/2 small onion, minced
2 cups fresh mushrooms, sliced
2 (17 1/4 ounce) packages frozen puff pastry, thawed
2 tablespoons milk
2 tablespoons dry sherry
1 teaspoon grated parmesan cheese
1/8 teaspoon salt
1/8 teaspoon pepper
2 (17 1/4 ounce) packages frozen puff pastry, thawed
12 ounces sliced swiss cheese (12 slices)
12 ounces sliced country ham (12 slices)
1 egg white, lightly beaten
1/2 cup butter or 1/2 cup margarine, melted
1/4 cup Dijon mustard
1 teaspoon poppy seed
1 teaspoon lemon juice

Steps:

  • Sprinkle chicken with garlic salt.
  • Cook chicken in a lightly greased nonstick skillet over medium-high heat 7 to 8 minutes on each side or until lightly browned. Remove from skillet; chop chicken, and set aside.
  • Melt 2 tablespoons butter in nonstick skillet over medium heat; add shallots and onion, and sauté 3 minutes. Add mushrooms, and sauté 5 minutes. Reduce heat to low; add cream cheese and milk, stirring until blended.
  • Remove from heat; add chopped chicken. Stir in sherry and next 3 ingredients.
  • Unfold 3 pastry sheets on a lightly floured surface; cut into fourths. Roll into 10-inch squares.
  • Place 1 cheese slice and 1 ham slice on center of each puff pastry square; top with 1/4 cup chicken mixture. Bring corners together over filling, gently pressing to seal.
  • Cut remaining pastry sheet into thin strips; tie each bundle with pastry ribbon. Place on a baking sheet; brush with egg white.
  • Bake at 400° for 35 minutes or until golden. Whisk together melted butter and next 3 ingredients. Serve over pastry bundles.
