PISTACHIO DESSERT

When I first fixed dinner for my father in law, he put this in his mouth and just sit there, I had no idea, I thought he wanted to spit it out, but once he swallowed it, he said he loved it and just wanted to hold it in his mouth. This was his very favorite, and everyone loves this. The cream cheese layer is sometimes hard to spread, I use the back of a large spoon and run cold water over it. Prep time includes 4 hours in the fridge before serving.

1/2 cup butter, melted
1/2 cup pecans, chopped
1 cup flour
8 ounces cream cheese
1 cup powdered sugar
1 cup Cool Whip
2 (3 ounce) packages pistachio pudding mix
1 cup Cool Whip
1/2 pecans, chopped

Steps:

  • Mix butter flour and pecans together.
  • Press in 9 x 13 pan.
  • Bake ar 350 for 15 minutes.
  • Cream together cream cheese, powdered sugar and cool whip.
  • Spread on cooled crust.
  • Make pistachio pudding with 2 cups milk.
  • Spread over cheese layer.
  • Top with a thin layer of cool whip and sprinkle with nuts.
  • Refrigerate for 4 hours before serving. Store in refrigerater.

1/2 cup chopped walnuts
1 tablespoon brown sugar
6 tablespoons cold butter
1 package (8 ounces) cream cheese, softened
1 cup plus 1 tablespoon confectioners' sugar, divided
1 cup heavy whipping cream, whipped, divided
2-1/2 cups cold 2% milk
2 packages (3.4 ounces each) instant pistachio pudding mix
Chocolate curls, optional

Steps:

  • In a small bowl, combine the biscuit mix, walnuts and brown sugar. Cut in butter until mixture resembles coarse crumbs. , Press into an ungreased 13x9-in. baking pan. Bake at 375° until lightly browned, 10-12 minutes. Cool on a wire rack., In a small bowl, beat cream cheese and 1 cup confectioners' sugar until fluffy. Fold in half of the whipped cream; spread over crust. Stir remaining confectioners' sugar into remaining whipped cream; refrigerate until serving. , In another bowl, whisk milk and pudding mixes for 2 minutes. Let stand until soft-set, about 2 minutes. Spread over cream cheese layer. Cover and refrigerate for at least 4 hours before serving. , Garnish with sweetened whipped cream and, if desired, chocolate curls.

1/4 cup finely chopped pistachios
1/4 cup reduced-fat butter, melted
1-1/4 cups fat-free milk
1 package (1 ounce) sugar-free instant pistachio pudding mix
6 ounces reduced-fat cream cheese
1 carton (8 ounces) frozen fat-free whipped topping, thawed, divided
1 package (12 ounces) frozen unsweetened raspberries, thawed
2 tablespoons sugar
2 tablespoons orange liqueur or orange juice
2 tablespoons chopped pistachios

Steps:

  • In a small bowl, combine the wafers, finely chopped pistachios and butter. Press onto the bottom of a 9-in. springform pan coated with cooking spray. Place pan on a baking sheet. Bake at 350° for 10 minutes or until lightly browned. Cool on a wire rack., Meanwhile, in a small bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. In a large bowl, beat cream cheese until smooth. Beat in the pudding., Set aside 3/4 cup whipped topping for garnish; fold remaining whipped topping into cream cheese mixture. Steps:

  • Crust: Put flour and butter into bowl. Mix until crumbly. Stir in pecans.
  • Press into ungreased 8x8 or 9x9 pan.
  • Bake at 350 F for 15 minute Cool.
