1 pound ground sausage
1 white onion (diced)
1 1/2 cups sliced celery
1/4 cup salted butter
1/4 cup all-purpose flour
2 cups low sodium chicken broth
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups heavy cream
1 large egg
1 pound stale loaf bakery-style bread* (cubed)
1 cup dried cranberries
1 tablespoon minced fresh sage
1 tablespoon minced fresh rosemary
1 tablespoon minced fresh thyme

Steps:

  • Preheat oven to 425 degrees. Lightly grease a 9x13 pan.
  • Heat a large skillet over medium high heat. Add in ground sausage and cook until browned, about 5 minutes.
  • Add in onion and celery and saute until onions are soft and translucent, about 5 to 7 minutes, and sausage is cooked. Add in butter and allow it to melt.
  • Whisk in flour until all white specks disappear and cook 2 minutes. Pour in the chicken broth, season with salt and pepper, and whisk to combine. Bring to a boil. Once boiling the mixture will thicken quickly. Once it thickens remove from heat and set aside.
  • In a small bowl whisk together the egg and heavy cream. Set aside.
  • In a large mixing bowl mix together the stale diced bread*, dried cranberries, and fresh herbs. Slowly pour the cream mixture over it and stir to moisten everything. Then pour the chicken broth and sausage mixture over and stir to combine. Immediately transfer it to the prepared 9x13 pan and spread it out in an even layer.
  • Bake at 425 degrees for 30 minutes, until the top starts to brown. Serve hot.

1 pkg Johnsonville Italian Mild Sausage links, casings removed or 1 pkg Johnsonville italian all natural mild ground sausage
12 slices or 1 1/2 pkg Texas Garlic Toast
1/2 cup butter
2 medium onions, chopped
2 cups celery, chopped
1 cup green pepper, chopped
1 tsp rubbed sage
2 eggs, lightly beaten
2 cups chicken broth
salt and pepper

Steps:

  • Preheat oven to 425. Bake Texas toast for 10 minutes; cool and cut into 1-1/2" pieces. Put in a bowl. Lower oven to 325. In a large skillet, brown and cook crumbled sausage until no longer pink. Drain sauage on paper towel. In the same skillet, melt buttter and saute onion, celery and green pepper until tender. In a large mixing bowl, combine sausage, vegetable mix, toast and sage. Add eggs and broth. Toss gently, salt and pepper to taste. Spoon into a buttered 3-4 qt baking dish. Cover with foil. Bake for 60 minutes. Uncover and bake 10 min longer or until lightly browned. Check internal temp - it should read 165 when done.

1 tablespoon olive oil
4 tablespoons unsalted butter
2 scallions, finely chopped
1 cup finely chopped celery (about 2 stalks)
1 cup finely chopped Vidalia or sweet onion
1/2 cup dried cranberries
2 packets Hidden Valley® Homestyle Italian Dressing & Seasoning Mix
4 cups plain stuffing cubes
4 cups low sodium chicken broth, plus more for texture
Cooking spray

Steps:

  • Preheat oven to 350 degrees F. Saute the sausage. In a large pan on medium-high heat, add olive oil and sausage. Cook until heated through and browned. Remove to a large bowl along with any remaining fat from the pan. Saute the vegetables and fruit. In the same pan add butter and melt on medium heat. Add scallions, celery, onion, cranberries and Hidden Valley® Homestyle Italian Dressing & Seasoning Mix. Cook while stirring until the vegetables are tender and cranberries become a bit plump, about 6-8 minutes. Remove all to the bowl with the sausage. Mix stuffing. Add stuffing cubes to the bowl and toss. Pour over the chicken stock adding 1/4 cup or so more if cubes are not moist enough, this should feel like thick mashed potatoes. Bake stuffing. Coat the bottom and sides of an 8" x 8" baking dish with cooking spray. Pour in stuffing and press down, leveling off the top with a rubber spatula or back of a spoon. Bake until top is golden, about 35-40 minutes.

1 cup (2 sticks) unsalted butter, plus more
1 1/2 pound loaf sourdough bread, sliced 1" thick, torn into 1/2"-3/4" pieces
1 tablespoon extra-virgin olive oil
1 pound breakfast sausage, casings removed if needed
1 large onion, finely chopped
1 fennel bulb, finely chopped
4 celery stalks, finely chopped
2 teaspoon Diamond Crystal or 1 1/4 tsp. Morton kosher salt, plus more
1 tsp. freshly ground black pepper, plus more
1/2 cup dry white wine
1/4 cup finely chopped parsley
1 tablespoon finely chopped sage
1 tablespoon finely chopped thyme
3 large eggs
4 cups Thanksgiving Stock or low-sodium chicken broth, divided

Steps:

  • Place racks in middle and top of oven; preheat to 300°F. Butter a 3-qt. baking dish. Divide bread between 2 rimmed baking sheets and bake on middle rack, tossing occasionally, until dried out (do not let brown more than just a bit around the edges), 25-35 minutes. Let cool.
  • Meanwhile, heat oil in a large skillet over medium-high. Arrange sausage in a single layer and cook, undisturbed, until browned underneath, about 3 minutes. Break up into bite-size pieces with 2 spatulas or spoons and continue to cook, tossing occasionally, until cooked through, about 5 minutes longer. Transfer sausage to a plate.
  • Reduce heat to medium and melt 1 cup butter in same skillet. Add onion, fennel, and celery; season lightly with salt and pepper. Cook, stirring occasionally, until vegetables are very tender but not browned, 12-15 minutes. Add wine and scrape bottom of skillet to release any browned bits. Bring to a boil and cook until wine is evaporated, about 3 minutes. Toss in parsley, sage, and thyme and let mixture cool in skillet.
  • Increase oven temperature to 350°F. Whisk eggs and 2 cups stock in a very large bowl. Add bread, sausage, and onion mixture and toss well to combine. Add 2 tsp. or 1 1/4 tsp. salt and 1 tsp. pepper. Drizzle remaining 2 cups stock over and toss again to combine. Let sit, tossing occasionally, until bread absorbs all of the liquid, about 10 minutes.
  • Transfer stuffing to prepared dish; butter a sheet of foil and cover dish, butter side down. Bake on middle rack until very hot throughout (it should feel too hot to comfortably touch in the center; an instant-read thermometer inserted into the center should register 160°F), 35-40 minutes.
  • Increase oven temperature to 425°F. Remove foil and transfer baking dish to top rack. Continue to bake stuffing until golden brown, 25-30 minutes longer.
  • Stuffing can be assembled 1 day ahead. Cover and chill.

This stuffing has lots of flavor and is nice and moist. You can also change the ingredients to your liking. I quadruple this recipe and make the extra in my electric roaster, that's how much everyone loves it. This recipe is very adaptable, you can change it around anyway you like and it will still be delicious!

¾ cup margarine, melted
¾ cup finely diced onion
1 ½ cups chopped celery
8 cups soft bread cubes, divided
3 teaspoons poultry seasoning

  • Place sausage in a large, deep skillet; cook over medium-high heat until evenly brown, about 10 minutes. Remove sausage from the skillet and let drain on paper towels. Combine melted margarine with the sausage drippings until there is 1 cup of drippings and margarine combined.
  • Cook and stir onion and celery in the margarine-dripping mixture in the same skillet over medium heat until onion is tender but not browned, about 10 minutes . Stir in about 1/3 of the bread cubes. Pour onion mixture into a large bowl and stir in remaining bread cubes, sausage, poultry seasoning, and pepper. Watch your hands, it's hot. Mix well. This stuffing is ready for baking.

2 tablespoons olive oil, divided
2 pounds sweet Italian sausage, casings removed, divided
1 stick unsalted butter, cut into pieces
3 medium onions, chopped
4 large celery ribs, chopped
5 garlic cloves, minced
4 large eggs, lightly beaten
¾ cup heavy cream, divided
½ cup turkey giblet stock or reduced-sodium chicken broth
1 cup grated Parmigiano-Reggiano (2 ounces)
½ cup coarsely chopped flat-leaf parsley

Steps:

  • Preheat oven to 350°F with rack in middle. Generously butter baking dish.
  • Put bread in 2 shallow baking pans and bake, switching position of pans halfway through baking, until just dried out, about 10 minutes.
  • Heat 1 tablespoon oil in a 12-inch heavy skillet over medium-high heat until it shimmers, then cook half of sausage, stirring and breaking it into small pieces, until golden brown, about 6 minutes. Steps:

  • Preheat the oven to 375°F (190°C). Grease a 9 x 13-inch baking dish with butter.
  • Crumble the cornbread into a large bowl, then add the biscuit pieces and toss to combine.
  • Heat the olive oil in a large pan over medium-high heat. When the oil is shimmering, add the sausage and use a wooden spoon to break up into small pieces. Cook until browned, 6-8 minutes.
  • Add the onion, celery, and mushrooms and cook until softened, about 6 minutes.
  • Add the thyme, rosemary, and sage and cook until fragrant, 1-2 minutes. Season with the salt and pepper. Remove the pan from the heat.

  • Transfer the stuffing to the prepared baking dish and cover with foil. Bake for 30 minutes, then remove the foil and bake for another 20 minutes, until the top is golden brown.
