STICKY CARAMEL-APPLE PIE
This apple pie is rich and full of gooey caramel and soft, sweet apples and it's nowhere NEAR healthy. I love to make it in fall on a cold day and serve it warm. The recipe was adapted roughly from the New Joy of Cooking, apple pie 11, but it was my decision to make the caramel for the filling. I don't know if there's any other recipes for apple pie that include caramel (probably is), but I know this is good, and it's usually better the next day (for breakfast, of course.)

Steps:
- Combine the flour, salt and sugar in a large bowl. Add the shortening in large chunks and blend with a pastry blender. Drizzle the ice water over the flour mixture and cut into/across the dough repeatedly with a rubber spatula. The quicker the pastry is made, the better. Refrigerate for at least 30 minutes.
- Slice the apples a 1/4 inch thick. Heat 2 tbsp of butter in a large frying pan and sauté the apples until soft on the outside. Add 1 cup sugar and the cinnamon and nutmeg. Cover and cook for about 15 minutes. Take the apples out of the pan and arrange them on a plate or cookie sheet to cool.
- Preheat oven to 350°F.
- Add the remaining 4 tbsp of butter and 1 cup brown sugar and cook, (medium heat) for 2 minutes. Add 1 tsp of baking soda and stir. Don't be afraid of he colour it turns, that's because of the baking soda, it's keeps it from hardening. The great thing about this caramel is it tastes like caramel apples because the apples were cooked in the butter.
- Take the pastry dough out of the fridge and role it out into 2 12 inch circles. place one in a 10 inch pie pan.
- Combine the caramel and the pre-cooked apples in a bowl and transfer into the pie crust. Place the second round of pastry over the pie and seal around the edges, rolling up any excess dough. Using a sharp knife, cut 4 slits in the top layer of pastry, to prevent explosion. Bake in the oven for 30-35 minutes, or until the crust is golden brown.
- When the pie comes out of the oven, make sure you let it cool for at least 4 hours before eating it so it can set.

SPICED APPLE PIE

- For the filling: Cut the apples into 1/4-inch slices and place them in a large bowl. Toss with the lemon juice to keep them from browning. Add the brown sugar, cornstarch, Warm Spice Blend, kosher salt and cinnamon and toss to combine. Mix in the boiled cider syrup and vanilla. Cover the mixture and let it sit at room temperature while you make the pie dough.
- For the pie dough: Add the flour, granulated sugar and kosher salt to a food processor and pulse to combine. Add the butter and pulse to incorporate so that about three-quarters of the mixture is mealy and the rest has some slightly larger, pea-sized bits of butter. Combine the ice water and cider vinegar in a measuring cup. Drizzle the water and vinegar into the food processor and continue to pulse just until the mixture comes together to form a dough. If it seems dry or is having a hard time coming together, add a bit more water, a few drops at a time, until it comes together.
- Turn the dough out onto a clean surface and use your hands to press on any stray crumbs. Divide the dough in half, then divide one of the halves in half again so that you have 3 pieces of dough. Pat each piece into a disc and wrap in plastic wrap. Refrigerate for at least 30 minutes or until ready to roll out for the pie.
- For the assembly: Flour a work surface and roll out the largest disc of dough into a circle just larger than 12 inches. Place it in a 9-inch pie plate and refrigerate. Roll out the 2 remaining dough discs to about 10 inches each. Cut the dough into 2-inch-wide strips for making a lattice top. Set the strips aside.
- Position an oven rack in the lower third of the oven (with a pizza stone if you have one) and preheat to 400 degrees F.
- Fill the pie crust with the apples (it will seem like a lot but they bake down!) and pour the juices over it. Distribute the butter over the top. Weave the dough strips together over and under to form a lattice crust over the top. Pinch the edges to seal, trim, fold the edges over and crimp. Give the edges a little hug to make sure they are sitting snugly on the rim of the pie plate; otherwise they could fall off in the oven. Freeze the pie for 15 minutes.
- Brush the lattice with the egg wash, then sprinkle with the turbinado sugar and flaky salt. Place the pie on a baking sheet and bake until the internal temperature reaches 195 degrees F, 45 to 55 minutes. Let cool slightly.
- Serve the pie with large dollops of whipped cream.
- Layer the cardamom, ginger, cinnamon, cloves and nutmeg in a medium glass jar and tighten the lid. Shake to combine. Keep on hand to add to your favorite desserts and beverages -- or just toast with butter!
APPLE WALNUT STICKY BUNS
Steps:
- Preheat the oven to 400 degrees F. Generously butter a 12-count muffin tin.
- Peel, core and dice the apples into 1/2-inch cubes. In a medium bowl stir together the diced apples with the walnuts and brown sugar.
- Divide the apple mixture evenly into the muffin tin. Put 12 cinnamon buns, cinnamon side up, on top of the apple mixture. Put the muffin tin on a baking sheet and bake until the tops are golden brown, about 8 to 10 minutes. (Bake off remaining 4 buns for Round 2 Recipe Cinnamon Roll French Toast.)
- Remove the muffin tin from the oven and allow to cool for 5 minutes. Put a clean baking sheet on top of the muffin tin and flip to remove the sticky buns.
- In a small bowl, combine 1 container of the vanilla frosting (save the other for Round 2 Cinnamon Roll French Toast) with the pumpkin pie spice and 1 to 2 teaspoons of water. Mix until very thick and of pourable consistency. Drizzle over buns and serve.

We raise wheat, and I bake a lot of bread using our own flour. This is one of my family's favorite recipes. I like it because it's fast and easy to make.

- In a large bowl, combine 1-1/2 cups flour, yeast, sugar and salt. In a saucepan, heat the milk, water and butter to 120°-130°. Add to dry ingredients; beat just until moistened. Add egg; beat until smooth. Stir in remaining flour and apples. Do not knead. Cover and let rise in a warm place for 30 minutes., Meanwhile, in a saucepan, combine the topping ingredients. - In a large bowl, dissolve yeast in water. Add the eggs, sugar, butter, salt, vanilla and 2 cups of flour. Beat until smooth. APPLE WALNUT CINNAMON ROLLS

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Roll 1 can of crescent rolls out on a cutting board. Make one single piece of dough by rolling the dough with a rolling pin to a 9x13-inch rectangle; make sure the seams don't separate. Repeat with remaining can of crescent rolls. Set 1 dough sheet atop the other to make a double crust.
- Mix 1/2 cup white sugar, brown sugar, cinnamon, crushed walnuts, and diced apples in a bowl. Sprinkle evenly over the dough.
- Roll the dough lengthwise, so you end up with a long tube. Cut into 1-inch slices. Place the rolls into prepared dish facing up.
- Melt butter with 1 1/2 cup white sugar in a saucepan over medium-high heat. Cook and stir until sugar dissolves completely, about 5 minutes. Remove saucepan from heat and whisk citrus-flavored soda into the butter mixture; pour over cinnamon rolls.
- Bake in preheated oven until golden brown and no longer doughy in the middle, about 30 minutes. Set aside to cool slightly, 5 to 10 minutes. Flip the rolls out of the baking dish onto baking sheet and allow the sticky sauce to drip over the rolls.

HOLLY'S STICKY AND NUTTY APPLE PIE
A variation on an old favorite. For nut, and spice lovers . I was just messing around with it, and ended up winning second place with it. So the syrup on this and the lattice top was more for display purposes.

- Preheat oven to 375 degrees. Skin and slice the apples into 1/2 inch thick slices. In a large bowl mix together the filling: apples, sugar, brown sugar, flour, corn starch, cinnamon, and nutmeg (making sure to coat the apples). Set aside.
- In medium bowl, mix flour and salt. Using a pastry blender cut in the shortening until pieces are pea sized. Add 6 tablespoons of the water and mix. Continue adding one tablespoon at a time until dough is moist and a ball forms. Knead the dough in the bottom of the bowl to pick up the rest of the dry ingredients in the bottom of the bowl. Divide the dough in two, leaving one part slightly larger.
- On a lightly floured surface roll out the larger ball so that it will cover your pie dish. Place the dough in the pie dish.
- Mix the nuts in with the apple mixture and pour filling in the pie dish with all of the juices.
- Roll out the smaller ball and cut into strips. With the strips create a lattice top. Cut the extra dough off so that it does not go over the edge of the pie dish. Using a for crimp the bottom and the lattice strips together.
- Cover the edge of the pie and place in the oven for 40 minutes.
- Remove the foil and bake 20 minutes more or until golden brown.
- While the pie is cooling, mix the honey and water and heat in the microwave, just until runny. Brush the mixture on the pie to give it a little sweetness and shinny.
- Let cool and enjoy.
