How to Make Cinnamon Rolls Recipe by Tasty image

Here's what you need: whole milk, sugar, unsalted butter, active dry yeast, all-purpose flour, baking powder, kosher salt, light brown sugar, unsalted butter, ground cinnamon, cream cheese, unsalted butter, milk, vanilla extract, powdered sugar

Provided by Gwenaelle Le Cochennec

Categories     Breakfast

Time 3h10m

Yield 12 servings

Number Of Ingredients 15

2 cups whole milk, warm to the touch
½ cup sugar
8 tablespoons unsalted butter, melted
2 ¼ teaspoons active dry yeast
5 cups all-purpose flour, divided
1 teaspoon baking powder
2 teaspoons kosher salt
¾ cup light brown sugar
12 tablespoons unsalted butter, softened
2 tablespoons ground cinnamon
4 oz cream cheese, softened and cubed
2 tablespoons unsalted butter, melted
4 tablespoons milk
1 teaspoon vanilla extract
1 cup powdered sugar

Steps:

  • Make the dough: In a large bowl, whisk together the warm milk, sugar, and melted butter. The mixture should be just warm, registering between 100-110˚F (37-43˚C). If any warmer, allow to cool slightly.
  • Sprinkle the yeast evenly over the milk mixture, stir, and let sit in a warm place for about 10 minutes until the yeast has bloomed.
  • Add 4 cups (500 g) of flour to the milk mixture and stir with a wooden spoon until just combined.
  • Cover the bowl with a kitchen towel or plastic wrap and let rise in a warm place for 1 hour, until nearly doubled in size.
  • Generously butter 2 9-inch (23 cm) round baking pans and set aside.
  • Make the filling: In a medium bowl, combine the brown sugar, butter, and cinnamon. Mix well, then set aside.
  • Remove the plastic wrap from the dough and add the remaining cup of flour, baking powder, and salt. Stir well, then turn out onto a clean surface. Leave a bit of flour nearby to use as needed, but try not to incorporate too much.
  • Knead the dough for at least 10 minutes, adding more flour as necessary, until the dough just loses its stickiness and does not stick to the surface or your hands. The dough should be very smooth and spring back when poked.
  • Roll the dough out into a large rectangle, about ½-inch (1 cm) thick. Fix the corners with a bench scraper or a spatula to make sure they are sharp and even.
  • Spread the filling evenly over the dough.
  • Starting from one short end, roll up the dough into a log and pinch the seam closed. Place seam-side down. Trim any uneven ends.
  • Using unflavored dental floss, cut the log into evenly pieces, about 1½ inches (8cm) thick. Place the cinnamon rolls in the prepared pans, 1 in the center and about 5 around the sides. Cover with a towel and let rise in a warm place for 35-45 minutes, until expanded by about half of their original volume. If you're saving the cinnamon rolls for later, cover with plastic wrap and freeze for up 3 months.
  • Preheat the oven to 350˚F (180˚C).
  • Bake the cinnamon rolls for 25-30 minutes, until golden brown.
  • While the cinnamon rolls are baking, make the frosting: In a medium bowl, whisk together the cream cheese, melted butter, milk, and vanilla extract until smooth. Gradually add the powdered sugar and whisk until homogenous and runny.
  • When the cinnamon rolls are finished, let cool for about 10 minutes.
  • Drizzle the frosting over the cinnamon rolls, using the back of a spoon to spread if desired.
  • Enjoy!

CINNABON'S CLASSIC CINNAMON ROLL

Cinnabon's Classic Cinnamon Roll image

Though this recipe requires a time span of several hours, only part of that is hands-on. They're the perfect lazy-weekend project, especially with kids in the kitchen. Each time you make the recipe, you'll develop more of a "feel" for the yeast dough. Or if you have a bread machine that can handle 2-pound loaves with a sweet-dough setting, prepare the dough in it by adding the ingredients in the manufacturer's suggested order. Time 1h29m59S

Yield 8

Number Of Ingredients 19

1 1/2 cup confectioners' sugar
3 tablespoon reduced-fat neufchâtel
3 tablespoon light butter from a stick, softened
1/2 tablespoon fat-free milk
1 teaspoon vanilla extract
butter-flavored cooking spray
2 tablespoon light butter from a stick
1 cup fat-free milk
1/3 cup granulated sugar
1/4 cup artificially sweetened fat-free vanilla yogurt
1 egg
1 egg white
one 1/4-ounce packet active dry yeast
4 cup unbleached flour, plus more as needed
1 teaspoon plus 1 tablespoon ground cinnamon
1/2 teaspoon salt
3 tablespoon corn syrup
3 tablespoon packed brown sugar
1/2 teaspoon vanilla extract

Steps:

  • In a mixing bowl, combine the sugar, Neufchâtel, butter, milk, and vanilla extract. Mix on low speed with an electric mixer fitted with beaters or stir with a spoon until combined, about 1 minute. If using a mixer, increase the speed to high.
  • Beat or stir vigorously until smooth, about 30 seconds. Allow the frosting to set for at least 10 minutes. Place in an airtight plastic container. Refrigerate for up to 3 days. Just before using, stir well with a spoon.
  • Lightly mist a large bowl with cooking spray. Set aside 1 tablespoon of the butter to soften.
  • In a large microwavable measuring cup or a medium-sized microwavable bowl, combine the milk, granulated sugar, and the remaining butter. Microwave on high power until the milk is hot (130 degrees), 2 minutes.
  • Add the yogurt. Whisk until the sugar dissolves (some small lumps of yogurt may be visible). Add the egg and egg white. Whisk to beat well. Add the yeast. Whisk until dissolved.
  • In the bowl of an electric stand mixer fitted with the dough hook or in a large mixing bowl, combine 2 cups of the flour, 1 teaspoon of the cinnamon, and the salt.
  • Mix or stir by hand with a wooden spoon to blend. Add the milk mixture. Mix on medium power or stir vigorously to blend. (The mixture will be very sticky.) Add the remaining flour, mixing or stirring until absorbed.
  • Lightly flour a work surface. Turn the dough onto the work surface. (A plastic dough scraper or brittle plastic spatula is helpful for getting out all of the dough and starting the kneading.)
  • Knead until smooth and elastic, about 5 minutes. Add scant amounts of flour as needed. (The dough should be soft but not sticky.) Place in the reserved bowl. Lightly mist with cooking spray. Cover the bowl tightly with plastic wrap. Allow to rise until doubled in size, about 1 hour.
  • Meanwhile, in a small bowl, combine the corn syrup, brown sugar, the remaining cinnamon, and the vanilla extract. Stir to blend well. Set aside.
  • When the dough has doubled in size, gently punch it down and place it on the lightly floured surface. Knead for about 1 minute. Dust lightly with flour. Cover and let rest for 10 minutes.
  • Lightly mist an 11-by-7-inch nonstick baking dish with cooking spray. Set aside. Using your hands or a floured rolling pin, press or roll the dough into an 18-by-12-inch rectangle.
  • With a butter knife, evenly spread the softened butter over the dough. Drizzle on the filling. With a knife or spatula, spread it evenly to the edges. Starting at one shorter side, roll the dough, jelly-roll fashion, into a tube, ending seam side down. Cut into 8 equal pieces. Place, spiral side up, in the reserved dish.
  • Cover the dish with a damp kitchen towel and place in a warm spot. Let the rolls rise for another 30 minutes.
  • Preheat the oven to 350 degrees.
  • Bake until very lightly browned but slightly doughy in the center, 22-28 minutes. With a spatula, transfer 1 roll to a plate. Using a butter knife, spread 1 ½ tablespoons of frosting over the top and ½ tablespoon down the sides. Repeat with the other 7 rolls.

Provided by Joanna Cismaru

Categories     Breakfast     Brunch     Dessert

Time 2h10m

Number Of Ingredients 15

2 ¼ teaspoon active dry yeast (or instant yeast)
1 cup milk (lukewarm)
½ cup granulated sugar
⅓ cup butter (unsalted, softened, or margarine)
1 teaspoon salt
2 eggs
4 cups all-purpose flour
1 cup brown sugar (packed)
3 tablespoon cinnamon
⅓ cup butter (unsalted, softened, or margarine)
6 tablespoon butter (unsalted, softened, or margarine)
1 ½ cups powdered sugar (also known as icing sugar, or confectioner's sugar)
¼ cup cream cheese (at room temperature)
½ teaspoon vanilla extract
⅛ teaspoon salt

Steps:

  • For the rolls, dissolve the yeast in the warm milk with a tsp of sugar (you can take a tsp out of the 1/2 cup of sugar) in a large bowl. Let it sit for about 5 minutes. If the yeast is good, it will start to froth up.
  • To the bowl of your mixer add the sugar, butter or margarine, salt, eggs, and flour and mix until well incorporated.
  • Pour the milk/yeast mixture over the flour mixture and using the dough hook, mix well until well incorporated and the dough comes clean from the side of the bowl.
  • Place the dough into an oiled bowl, cover and let rise in a warm place about 1 hour or until the dough has doubled in size.
  • Combine the brown sugar and cinnamon in a bowl.
  • Grease a 9x13 inch baking dish with cooking spray or butter.
  • Roll the dough out on a lightly floured surface, until it is approximately 16 inches long by 12 inches wide. It should be approximately 1/4 inch in thickness.
  • Spread the 1/3 cup of butter evenly over the dough, then sprinkle with the sugar evenly over the surface of the dough.
  • Working carefully, from the long edge, roll the dough down to the bottom edge.
  • Cut the dough into 1 1/2 inch slices, and place in a lightly greased baking pan. You can also use floss to cut into slices, as seen in the video. Place the cut rolls in the prepared pan. Cover with a clean kitchen towel or plastic wrap and let them rise for another 30 minutes, or until doubled in size.
  • Preheat oven to 350°F.
  • Place the baking pan in the oven and bake for 20 minutes or until golden brown. Cooking time can vary greatly!
  • While the rolls are baking make the icing by mixing all the icing ingredients and beat well with an electric mixer until fluffy and smooth.
  • When the rolls are done, spread generously with icing.

Categories     Breakfast     Dessert

Time 2h40m

Number Of Ingredients 17

1 cup whole milk (warm (105 degrees F))
½ cup + 1 Tablespoon granulated sugar (divided)
1 Tablespoon Active dry yeast
2 large eggs (room temperature)
6 Tablespoons salted butter (melted)
1 teaspoon pure vanilla extract
4 to 4 ½ cups all-purpose flour
1 teaspoon fine sea salt
1 teaspoon ground cinnamon
1 cup brown sugar (packed)
2 ½ Tablespoons ground cinnamon
6 Tablespoons salted butter (softened)
8 oz cream cheese (softened)
¼ cup salted butter (softened)
2 cups powdered sugar
½ tsp pure vanilla extract
1/8 tsp fine sea salt

Steps:

  • Warm milk in the microwave milk for 45-60 seconds. It should be warm but not hot to the touch (about 105 degrees F).
  • Place milk into the bowl of your standing mixer, then add 1 TBS sugar and 1 TBS yeast to the warm milk. Stir and let it sit (proof) for five minutes or until it becomes foamy.
  • Add the ½ cup sugar, butter, eggs, and vanilla to the mixture in the bowl of your standing mixer. Use a dough hook to stir until combined
  • Add 4 cups flour, salt and cinnamon and stir the dough hook, starting on low and increasing to high.
  • Knead dough in the standing mixer until a large ball is formed. The dough should be smooth and only slightly tacky to the touch. If the dough seems too sticky and is not forming a ball, add more flour 1 TBS at a time until a smooth ball is formed.
  • Transfer dough to a floured surface and knead with your hands until it is smooth and elastic (about 3-5 minutes). Form it into a ball.
  • Grease a large bowl and place the dough inside.
  • Cover the bowl with a warm, damp towel and put the bowl in a warm place to rise.
  • Let the dough rise in a warm place about 1 hour or until dough has doubled in size.
  • While the dough is rising, make the filing. In a small bowl, combine butter, brown sugar and cinnamon until mixture is homogenous (uniform throughout). Set aside.
  • Alternately, you can combine the cinnamon and sugar. Then melt the butter and brush it on the rolled dough, then sprinkle the cinnamon sugar on the butter-brushed dough. (I think this way is easier)!
  • Assemble Cinnamon Rolls
  • Sprinkle a large work surface with flour.
  • Gently press the gas out of the dough and form it into a rectangle.
  • Roll the dough into a 24x12" rectangle, about 1/4 inch thick.
  • Spread the filling all over the dough using greased hands or a greased spatula. This process can seem difficult but it gets easier as you spread it. (Alternately: if you only combined the cinnamon and sugar, then melt the butter and use a pastry brush to spread the melted butter all over the dough. Then sprinkle the dough with cinnamon sugar and pat it down gently to insure it sticks).
  • Roll up dough cut into 12 equal sized rolls (feel free to measure and cut each roll to be 2" long).
  • Line a 9x13 inch glass baking dish with parchment paper and lightly grease. Then place rolls in 4 rows of three, evenly spaced.
  • Cover and let rise until nearly doubled, about 30 minutes and preheat the oven to 350 degrees F
  • Bake Cinnamon Rolls
  • Once rolls are doubled in size, bake them in the preheated oven until golden brown, about 18-20 minutes. They will rise more in the oven. (NOTE: Check the center cinnamon rolls and make sure they are baked through. If your oven bakes cool or unevenly you may need to increase the baking time up to 10 minutes longer. If the top starts to brown before the center is baked, tent the baking pan with foil to prevent further browning).
  • While rolls are baking, beat together cream cheese, butter, powdered sugar, vanilla extract and salt. Do NOT chill the frosting. Keep it at room temperature until the cinnamon rolls are baked.
  • Once the cinnamon rolls have bene removed from the oven, spread the cream cheese frosting on them while they are still warm.
  • Cool & Serve!
  • Let cool and serve warm.

GIANT CINNAMON ROLLS

Giant Cinnamon Rolls image

Our best homemade cinnamon rolls....made extra large! Learn how to make gooey GIANT cinnamon rolls with a cream cheese frosting.

Provided by Julie Clark

Categories     Breakfast

Number Of Ingredients 15

1 cup warm milk ((about 115 degrees F**))
2 1/2 teaspoons instant dry yeast ((I like Red Star Platinum Baking Yeast))
2 large eggs ((at room temperature))
1/3 cup butter ((melted))
4 1/2 cups all-purpose flour
1 teaspoon salt
1/2 cup granulated sugar
1/2 cup butter ((almost melted))
1 cup packed brown sugar
2 tablespoons cinnamon
1/2 cup heavy cream ((for pouring over the risen rolls))
6 ounces cream cheese ((softened))
1/3 cup butter ((softened))
2 cups powdered sugar
1/2 tablespoon maple extract ((or vanilla))

Steps:

  • Pour the warm milk in the bowl of a stand mixer and sprinkle the yeast overtop.
  • Add the eggs, butter, salt and sugar.
  • Add the flour and mix using the beater blade just until the ingredients are barely combined. Allow the mixture to rest for 5 minutes so the flour has time to soak up the liquids.
  • Scrape the dough off the beater blade and remove it. Attach the dough hook.
  • Beat the dough on medium speed for 5-7 minutes or until the dough is elastic and smooth. **The dough will be tacky and will still be sticking to the sides of the bowl. That's ok! Don't be tempted to add more flour at this point.
  • Spray a large bowl with cooking spray.
  • Use a rubber spatula to remove the dough from the mixer bowl and place it in the greased large bowl.
  • Cover the bowl with a towel or wax paper.
  • Set the bowl in a warm place and allow the dough to rise until double. I like to turn on the oven to the lowest setting for 1-2 minutes. Then turn off the oven and place the dough to rise in there. It normally takes about 30 minutes for the dough to rise. Do not allow the dough to rise too much or your cinnamon rolls will be airy.
  • While the dough is rising, prepare the cinnamon filling. In a medium bowl, combine the soft butter, brown sugar and cinnamon, mixing until well combined. Set aside.
  • Sprinkle a pastry mat generously with flour. Turn out the dough onto the pastry mat and sprinkle the top of the dough with additional flour.
  • Flour a rolling pin and roll the dough to about a very large rectangle (about 26"x18" if you can get it that big).
  • Use a rubber spatula to smooth the cinnamon filling over the whole dough rectangle.
  • Use a pizza cutter to cut the rectangle in half down the middle to make two squares.
  • Starting with one of the halves, on the long end, roll the dough up tightly jelly roll style.
  • Cut the rolled part into 6 slices.
  • With the remaining rolled out dough, use a pizza cutter to cut 6 long strips of dough. The strips should be about the same width as the rolled dough that you have already made.
  • Place one of the rolls on its side one of the strips you cut. Roll the strip around the outside of the rolls again to make the roll twice as big. Repeat with the remaining 5 rolls. You should end up with 6 very large rolls.
  • Place the rolls in a greased 10x15" baking pan.*
  • Cover the pan and allow the rolls to rise for 20 minutes or until nearly double.
  • Warm the heavy cream until the chill is off. Don't make it hot...you just don't want it cold. It should be warm to the touch.
  • Once the rolls have risen, pour the heavy cream over the top of the rolls, allowing it to soak down in and around the rolls.
  • Preheat the oven to 350 degrees.
  • Bake at 350 degrees for about 28 minutes, until the rolls are lightly golden brown and the center rolls are cooked through. If the rolls are getting too browned on top, cover loosely with a piece of foil.
  • While the rolls are cooling, prepare the cream cheese frosting.
  • In a large bowl, combine the softened cream cheese and butter using a hand mixer. Blend well.
  • Add in your favorite extract and the powdered sugar. Beat until combined.
  • Spread the frosting over the cooled rolls.
  • Store in an airtight container.
