HOMEMADE HEALTHY POP TARTS
Easy homemade pop tarts made with 2 ingredient weight watchers dough! Healthier than store bought, they take 20 minutes to make and healthy enough for breakfast! Vegan, Gluten Free, Dairy Free and Sugar Free options.

- Preheat the oven to 180C/350F. Line a large baking tray with parchment paper, and set aside.
- In a large mixing bowl, prepare your magic dough with the sweetener and mix well, until combined. Using your hands, shape the dough into a thick, smooth ball.
- Flour a kitchen surface and add a tablespoon of flour on top of the ball of dough. Transfer the ball of dough onto the floured surface, and knead several times.
- Using a rolling pin, roll out the dough, forming a rectangular shape, about 12 inches by 6 inches. Using a sharp knife (or pizza cutter), slice once length-ways, and 7 times the other way, to form 16 uniform rectangles.
- Place 8 of the rectangles on the lined baking tray, evenly spaced apart. Place 1 tablespoon of jam onto each rectangle. Place the other 8 rectangles on top of each one. Using a fork, press along each side of each pop tart, sealing it up completely. Using a pastry brush, brush the tops of each pop tart with milk.
- Bake the pop tarts for 15-20 minutes, or until golden on top. Allow pop tarts to cool, before glazing.
- While the pop tarts are cooling, prepare your glaze by combining your powdered sugar (powdered sugar) with the vanilla extract and yogurt. Whisk until a thick frosting remains. Using a spoon, spoon out frosting over the tops of each pop tart, spreading it slightly. Top with sprinkles, if desired.

- Preheat oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
- Sift flour, 1 tablespoon sugar, and salt together into a bowl. Cut in chilled butter with a pastry blender or 2 knives until mixture resembles small peas. Add vanilla. Mix in cold water, 1 tablespoon at a time, until dough comes together and forms a ball.
- Divide dough into 2 pieces and wrap with plastic wrap; chill until firm, at least 1 hour.
- Beat softened butter, 1/4 cup sugar, and cinnamon together in a bowl to make filling.
- Roll out dough on a lightly floured work surface to 1/2-inch thickness. Cut dough into rectangles with a knife. Drop 1 tablespoon of filling onto half of the rectangles. Cover with remaining rectangles. Press edges with a fork to seal. Poke a few holes in the top of each pastry with a toothpick.
- Arrange pastries on the lined baking sheets.
- Bake in the preheated oven until golden brown, 25 to 30 minutes. Cool pastries on a wire rack, about 15 minutes.

- Scoop tablespoons of shortening onto a plate and chill in the freezer for 10 minutes.
- Meanwhile, combine flour, sugar, and salt in a bowl and chill for 5 to 10 minutes.
- Crumble shortening into the flour mixture with your fingers until no large clumps remain. Add 1/2 cup ice water to the mixture, a little at a time, until dough reaches a shaggy consistency. Knead on the countertop a couple of times to combine. The dough should appear a little too dry.
- Place dough back into the bowl or a large container and cover with a lid. Refrigerate for 30 minutes.
- Preheat the oven to 350 degrees F (175 degrees C).
- Roll dough into a large rectangle, about 1/8-inch thick. Cut into twelve 4x6-inch rectangles.
- Place about 1 1/2 tablespoon of strawberry jam in the center of 6 of the rectangles. Brush the edges with water and top with the other dough halves. Seal the edges of each tart with a fork. Trim the edges for neater tarts, if desired.
- Bake in the preheated oven until the edges are lightly browned, 15 to 25 minutes. Let cool, 20 to 30 minutes.
- Combine powdered sugar, almond milk, and food coloring in a bowl for icing. Drizzle icing over the cooled tarts.

HOMEMADE POP TARTS
These are home made pop-tarts that you can make healthy, if you choose, depending on the type of jelly you buy. Once you make them and they are cooled, put them into freezer bags and put in fridge or freezer. I warm them up in the microwave for 1-2 minutes when ready to serve! The frosting recipe is optional...but these are delicious with and without!

- Using a pizza cutter trim the edges so that you have a square/rectangle to work with. Using the pizza cutter divide each rectangle into 4 squares.
- Place and spread 1-2 Tablespoons of jam/jelly on each square in the middle. Fold over the dough and seal edges with a fork. (With extra cut off dough, roll out and make 2 additional squares).
- Place on cookie sheet for baking.
- Bake at 450 degrees for 10-12 minutes.
- After baking remove for cooling and prepare glaze by mixing in milk until desired consistency. Spread on top of pop tarts and allow to cool.
- Freezing Directions:.
- Once cool, flash freeze. When partially frozen place in gallon freezer bag for storage. To serve: Thaw or heat in microwave for 1-2 minutes or heat in oven. If adding glaze DO NOT put in toaster.

- Combine all dough ingredients in a large mixing bowl and get your hand dirty! Mix and knead until you have a nice, firm yet soft dough. If the dough crumbles, add more milk, 1 tablespoon at a time. Just be sure to knead the dough really well after each tablespoon you add. Otherwise, you'll end up with a sticky mess.
- Working with small pieces of the dough (I used about 1/3 at a time), roll it out until it's about 1/8 inch thick (The thinner the better). I rolled mine on parchment paper out of habit. Do what works for you.

- Spread your cherry preserves on 1/2 the number of the rectangles you have cut. These would be the bottom pieces, so the plain rectangles will be the top pieces. Using the edge of your fork, gently press the tines into the edge of your pop tart, sealing the edges. If any of the filling squeezes out, just wipe it up so it will not burn when you bake them.
- Dip your finger into the water and lightly go around the edge of each of the rectangles covered with the preserves. Gently cover it with a top piece, making sure to line up the edges the best you can. Using the tip of a sharp knife, cut 3-5 small slits into the pop tart.
- Preheat your air fryer at 350° for one minute. Spray your air fryer with cooking spray. Depending on the size of your air fryer, place as many pop tarts that will fit with plenty of room, so they are not touching. Set the air fryer to 350° for 11 minutes. I suggest checking them at 8 or 9 minutes to see how they look as some air fryers may cook differently. My sister has a different brand than I do and seems to cook a bit faster than mine. You want your pop tart to have a nice, light golden-brown color when they are done. Continue until all pop tarts are cooked.

- In a large bowl, stir together the flours, salt, ginger, cinnamon, and brown sugar. Cut in the frozen coconut with a pastry blender, or your fingers, until the size of small peas.
- Drizzle in 6 Tbsp of the ice water and mix until the dough just comes together, adding the remaining 2 Tbsp if necessary.
- Form the dough into two discs and wrap with saran wrap. Refrigerate for 20 minutes. Spread parchment paper on 2 baking sheets and set aside.
- On a lightly floured surface and using a floured rolling pin, roll one of the discs into a 4-inch wide rectangle. Cut the dough in 3-inch increments (so each piece is 3x4 inches) and place the squares onto a prepared baking sheet. Place into the refrigerator to chill while you repeat with the remaining disc.
