This whole wheat pizza crust has a secret ingredient - oat flour! Make this Oat Flour Pizza Crust for a delicious, fiber-packed pizza base!

2 cups Quaker Quick 1-Minute Oats
1 tablespoon sugar
1 cup warm water
1 packet (2 1/4 teaspoons) active dry yeast
3 tablespoons olive oil
1 teaspoon salt
1 1/2 cups whole wheat pastry flour

Steps:

  • In a blender or food processor, add oats. Blend into a fine flour; set aside.
  • In a large bowl, add sugar and warm water. Sprinkle yeast on top and gently stir once. Let sit 5 minutes, until yeast is foamy. If there is no foam, the yeast is dead; start again with new yeast.
  • Add olive oil and salt to the bowl; whisk to combine.
  • Add oat flour and whole wheat flour to the bowl. Stir until a dough ball forms. On a lightly floured surface, knead the dough. Knead for 5-8 minutes, until the dough is smooth.
  • In a large bowl coated with oil, place the dough. Cover with a damp warm towel. Let sit for 1 hour, until dough has risen.
  • Punch dough. Divide into two even dough balls; knead each until smooth (alternatively, you can freeze one dough ball). On a lightly floured surface, roll out each dough ball into a 1/4-inch thick circle. Fold in the edges to form a raised crust.
  • Preheat oven to 425°F. Lightly flour a baking pan. Transfer crust to pan. Bake for 18 minutes.
  • Add desired toppings and bake accordingly.

This healthy, super easy, hand-held oat flour pizza crust is made with just two main ingredients and is versatile enough to go with both traditional tomato-mozzarella toppings and less-traditional pizza situations such as a bbq chicken pizza or Hawaiian pizza. Dairy and gluten free friendly too!

1 cup old fashioned oats (gluten free as needed)
1/2 cup egg whites from a carton
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon Italian seasoning
1 1/2 teaspoon baking powder

Steps:

  • Preheat oven to 400ºF and heat a large skillet (on the stove) over medium heat that has been sprayed with nonstick cooking spray.
  • Add all crust ingredients to the bowl of a food processor or the pitcher of a blender. Blend until smooth.
  • Pour mixture onto heated skillet; shape with the back of a spoon into a circle and spread for desired thickness. Cook for about 5 minutes and until edges start to brown and mixture is pretty set.
  • Crust should be lifting some when it is ready to flip. Use a spatula to flip crust over in the pan and cook the other side for about 2-3 minutes.
  • Spray a baking pan with nonstick cooking spray and transfer crust from skillet onto the pan.
  • Add sauce and all desired toppings. Bake 10 minutes until cheese is melted and edges of the crust are slightly browned.
  • Serve up and enjoy!

2 tablespoons King Arthur Coconut Flour

Steps:

  • Preheat your oven to 350 degrees F. Get out a large rimmed baking sheet.
  • Whisk together the dry ingredients in a large mixing bowl; set them aside.
  • In a separate bowl, beat together the eggs and oil until frothy.
  • Pour the wet ingredients into the dry ingredients and mix together to form a dough.
  • Shape the dough into a ball and transfer it to a parchment paper-lined work surface. Top with another piece of parchment paper and roll the dough about 1/4-inch thick. Remove the top piece of parchment paper and slide the crust, with its parchment, onto the prepared baking sheet.
  • Bake the crust for 15 to 20 minutes, until the edges have started to crisp and the crust has started to brown all over.
  • Top the partially baked crust with your desired toppings, and return it to the oven. Bake for another 12 to 15 minutes, until any cheese has melted and the edges are golden brown.
  • If you like browned cheese, broil the pizza for 1 to 2 minutes after baking.
  • Remove the pizza from the oven, and let it cool for a few minutes; 2 to 3 should work fine. Slice it with a pizza cutter, and top with a sprinkle of grated cheese before serving, if desired.

It is difficult to get the crust on the pan, and off your hands so keep 1/2 cup of water in a separate bowl to keep hands clean and smooth onto pan.

1/4 teaspoon sugar substitute
1 1/4 cups warm water (separated)

  • Dissolve yeast and splenda in 3/4 cup warm water and let sit for about 8 minutes.

3 cups oat flour ((gluten-free if needed))
1 cup arrowroot powder
1 tsp. garlic granules ((or garlic powder))
1 tbsp. Italian seasoning
½ tsp. ground black pepper
1 tsp. salt
2 tbsp. oil
1½ cups water ((You might not use all of it, but have it handy))

Steps:

  • In a large mixing bowl, whisk together all the dry ingredients.
  • Stir in the wet ingredients. Do NOT add more than 1 cup of water at this stage.
  • When you can't stir any longer, use your hands to knead the dough, adding a little more water if needed.
  • Once you are done kneading the dough, note that the longer it rests, the more the flour will absorb the liquid. So you either need to spread it over your pizza pan immediately while it's still easy to work with, or you'll end up needing to knead in more water to make the dough more pliable. Your best bet is to spread it over a pizza pan immediately after mixing.
  • Bake at 400 F. for 20 minutes, or until cooked through. Top your pizza and return to the oven for 15-20 minutes, or until the cheese is melted.

I got this recipe from a co-worker. It's not so overly sweet like some fruit pizza's are that use the pre-made sugar cookie dough for the crust. Very good tasting. I usually make the crust the day before and keep it covered with saran wrap;

1/2 cup brown sugar
2 cups flour
1/2 cup oatmeal
8 ounces cream cheese
8 ounces whipped topping
1 cup marshmallow creme
2 tablespoons powdered sugar
assorted fruit

Steps:

  • For crust, combine butter, brown sugar, flour and oatmeal.
  • Press into ungreased cookie sheet.
  • Bake at 375 for 15 minute.
  • Cool.
  • For filling, combine cream cheese, whipped topping, marshmallow creme and powdered sugar.
  • Spread evenly over cooled crust.
  • Add assorted sliced or cut up fruits of your choice. (I like to use strawberries, blueberries, kiwi and mandarin oranges.).
  • Refrigerate until ready to serve.

1 cup rye flour
1 teaspoon salt
1 ½ cups water, divided
1 teaspoon brown sugar
1 (.25 ounce) package active dry yeast
2 tablespoons extra-virgin olive oil
½ cup all-purpose flour for kneading dough, or as needed

Steps:

  • Mix 2 1/2 cups all-purpose flour, rye flour, and salt together in a bowl.
  • Pour 1/2 cup water into a microwave-safe bowl; heat in microwave for 30 seconds. Stir brown sugar into water until dissolved; add yeast and stir. Let mixture stand until bubbling, about 10 minutes.
  • Pour yeast mixture into flour mixture.
  • Pour remaining 1 cup water into a microwave-safe bowl; heat in microwave for 30 seconds. Stir olive oil into the warm water; pour over flour mixture. Knead flour mixture, adding more all-purpose flour if dough is sticky, until dough is smooth and holds together.
  • Form dough into a ball and place in a bowl. Cover bowl with a damp towel and let rise until doubled in size, about 1 hour.
  • Punch dough down and transfer to a floured work surface. Roll or shape dough into desired shape.
