1 tablespoon olive oil
5 links hot italian sausage
1 large yellow onion, chopped
5 cloves garlic, minced
salt, to taste
pepper, to taste
1 tablespoon dried oregano
1 tablespoon dried basil
1 tablespoon dried parsley
12 oz tomato paste
15 oz diced tomato
2 cups grated parmesan cheese, divided
2 cups spinach
1 lb rigatoni, cooked
1 cup ricotta cheese
fresh basil, to garnish

Steps:

  • To a large dutch oven on medium heat, add the olive oil and heat it until it shimmers.
  • Add the hot Italian sausage, cook until the the first side browns deeply, flip and cook on the other side until the sausage is fully cooked, 15 minutes. Remove the sausages from the pan and slice when they cool down.
  • To the leftover pan drippings, add the chopped yellow onion, minced garlic, salt, pepper, dried basil, dried oregano, and dried parsley. Cook until the onions are caramelized and soft. About 10 minutes.
  • Add the tomato paste and cook until the tomato paste darkens slightly.
  • Add in the diced tomatoes and the sausage slices into the pan, stir, and let the sauce come to a simmer.
  • Add in half the grated parmesan, spinach, the cooked pasta, and stir to combine.
  • Spoon in fresh dollaps of the ricotta cheese, garnish with fresh basil, more grated parmesan, and serve!

1/2 Spanish onion thinly sliced
1/2 teaspoon dried basil
1 head garlic roasted
1/4 cup Parmesan cheese, divided
1/2 cup frozen spinach
1/2 pound rigatoni, cooked
4 pork loin chops, 4 ounces each
1/2 cup milk
1 cup flour
3 eggs seasoned with salt and pepper
1/2 cup fresh bread crumbs
2 cups mesclun salad
1 1/2 tablespoons red wine vinegar, or lemon juice
1/2 cup plus 3 tablespoons olive oil

Steps:

  • Brown 2 tablespoons of butter in a saute pan. Add the onion and saute then add basil. Next, add the roasted garlic, 2 tablespoons Parmesan and spinach. Add cooked pasta, season with salt and pepper and garnish with Parmesan.
  • Butterfly the pork chops and pound them thin between 2 sheets of plastic wrap. Separate milk, flour, seasoned eggs and breadcrumbs into 3 separate bowls. Dip each pork chop in the milk first, then flour next eggs and last the bread crumbs. Saute until golden brown on both sides. Garnish with mesclun salad, a sprig of onion, red wine vinegar juice and olive oil.

4 Pork Sausages, casings removed, coarsely chopped
1 tbs olive oil
1 brown onion, finely chopped
2 garlic cloves, crushed
1/2 cup (125ml) dry white wine
2 x 200g punnets Perino grape tomatoes, halved
1 tbs tomato paste
1/2 cup finely shredded basil
Finely grated parmesan, to serve
Rocket leaves, to serve

Steps:

  • 1. Cook the pasta following packet directions or until al dente. Drain well. 2. Meanwhile, heat a large frying pan over medium-high heat. Add the sausage meat and cook, stirring with a wooden spoon to break up large lumps, for 5 mins or until brown. Transfer to a bowl. 3. Add the oil to the pan. Cook the onion, stirring, for 5 mins or until onion softens. Add the garlic and cook for 1 min or until fragrant. Add the wine and bring to the boil. Cook for 2 mins or until the wine reduces by half. Add the tomato and tomato paste and cook, stirring, for 2 mins or until tomato begins to break down. Remove from heat. Add the sausage meat and stir to combine. Season with salt and pepper. 4. Pour the tomato mixture over the pasta. Add the basil and toss to combine. Divide among serving bowls and sprinkle with parmesan. Serve with rocket leaves

400g good quality pork sausage
1 tbsp olive oil
1 onion, chopped
1 large carrot, grated
150ml red wine
300ml vegetable stock
3 tbsp tomato purée
50g butter
50g plain flour
600ml milk
freshly grated nutmeg
500g rigatoni or penne
200g fresh spinach
140g mature cheddar, grated

Steps:

  • Slit the sausages and remove them from their skins, then chop them into small pieces. Heat the oil in a pan, add the onion and fry for 5 minutes, until softened and lightly browned. Stir in the sausages and fry until lightly coloured. Add the carrot, then stir in the wine, stock, tomato purée, and season.
  • Bring to the boil, then simmer uncovered for about 15 minutes until thickened. Taste and season. Set aside.
  • Put the butter, flour and milk in a pan. Gently heat, whisking, until thickened and smooth. Add a sprinkle of freshly grated nutmeg, season, then simmer for 2 minutes.
  • Preheat the oven to 190C/Gas 5/fan 170C. Bring a large pan of salted water to the boil. Add the pasta, stir well, then cook, uncovered, for 10-12 minutes, until tender. Remove from the heat, stir in the spinach and, when just wilted, drain well.
  • Tip half the pasta into a shallow ovenproof dish, about 2.2 litre/4 pint, and level. Spoon over the sausage sauce, then cover with the remaining pasta. Pour the white sauce evenly over the top and sprinkle with the cheddar. Bake for 20-25 minutes until golden brown. Leave for 5 minutes before serving.

1 lb rigatoni pasta
1 (8 ounce) bag Baby Spinach
1 pint cherry tomatoes
2 tablespoons butter

Steps:

  • Mix spices and garlic with ground pork.
  • Heat the oil in a very large pan and sautee the ground pork for 7-10 minutes or until cooked through (leave the meat in large pieces, then break it up with a wooden spoon once it's browned).
  • Meanwhile, cook the pasta to al dente.
  • Drain pasta, reserving 1/2 cup of the cooking liquid.
  • Add the pasta and water to the pork mixture with the heat on high (you want the liquid to reduce).
  • Add spinach and tomatoes (you want the spinach to barely wilt).
  • Immediately add the butter.
  • Season with salt and pepper to taste and add some freshly grated Parmesan if you like.
