Jo-Ann's Power Bars image

These power bars are delicious and much more nutritious than most granola bars. They are very filling, too. Instead of using dried mixed fruit, feel free to substitute any of your favorite dried fruits. Same goes for the nuts.

1 cup quick-cooking rolled oats
½ cup whole wheat flour
½ cup wheat and barley nugget cereal (e.g. Grape-Nuts™)
½ teaspoon ground cinnamon
1 beaten egg
¼ cup applesauce
¼ cup honey
3 tablespoons brown sugar
2 tablespoons vegetable oil
¼ cup unsalted sunflower seeds
¼ cup chopped walnuts
1 (7 ounce) bag chopped dried mixed fruit

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line a 9 inch square baking pan with aluminum foil. Spray the foil with cooking spray.
  • In a large bowl, stir together the oats, flour, cereal, and cinnamon. Add the egg, applesauce, honey, brown sugar, and oil. Mix well. Stir in the sunflower seeds, walnuts, and dried fruit. Spread mixture evenly in the prepared pan.
  • Bake 30 minutes, or until firm and lightly browned around the edges. Let cool. Use the foil to lift from the pan. Cut into bars or squares, and store in the refrigerator.

A delicious, high fiber power bar made of whole foods, with soy protein, and nuts, sweetened only with dates, and a little 70% dark chocolate on top.

10 ounces silken low-fat tofu, drained well (almost the whole package)
15 large medjool dates, pitted
1/4 cup coconut oil
3 cups rolled oats
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 cup ground flax seeds
1/2 cup walnuts or 1/2 cup almonds
1/4 cup raisins (optional) or 1/4 cup chopped dried fruit (optional)
6 ounces 70% dark chocolate

Steps:

  • Preheat oven to 350 degrees.
  • Puree the tofu, dates and coconut oil in a blender.
  • Transfer this paste to a bowl.
  • Add oats and nuts and seeds and dried fruits as you desire.
  • Spray coat a 9x13 inch pan.
  • Spread the mixture evenly into the pan.
  • Cook for 30 minutes, or until firm and browned.
  • Melt the chocolate in a microwaveable bowl.
  • Spread melted chocolate over the top of the bars.
  • Allow to cool for at least 1 hour, or put in the refrigerator for 20 minutes.
  • Cut into small 1x3 or 2x4 inch pieces, they are very filling!
  • These keep well for a week in the fridge, or for 3 months in the freezer. I freeze 3/4 of my batch and eat them straight out of the freezer, they're not too hard!

3/4 cup raisins (optional)
2/3 cup sunflower seeds
1/2 cup toasted sesame seeds
1/2 cup wheat germ
1/2 cup oat bran
3 tablespoons flax seeds
1 tablespoon cinnamon
1 teaspoon salt
1 cup organic coconut
1 cup organic chopped almonds
1 1/2 cups organic creamy peanut butter
1 cup honey
5 tablespoons organic butter, melted
1 -2 cup chocolate chips, 2 for sure (Sunspire)

Steps:

  • In a large bowl, combine first eleven ingredients.
  • Stir in peanut butter, honey and melted butter.
  • Press mixture firmly into foil-lined 9x13 inch pan.
  • Bake in preheated 350 F oven for 15 minutes.
  • Remove from oven; sprinkle chocolate chips over bars.
  • Return to oven until chocolate is softened (about 2 minutes).
  • Spread chocolate evenly over bars. Cool slightly.
  • Refrigerate until firm (about 2 hours)
  • Cut into bars; wrap individually; store in refrigerator.

Steps:

  • In a large microwave-safe bowl, combine peanut butter and honey. Heat, uncovered, until warmed, 20-30 seconds. Stir until smooth; add remaining ingredients and stir until combined. Transfer to a lightly greased 13x9-inch pan; gently press mixture into pan. Cover and refrigerate until set, 1 hour or overnight. Cut into bars.

4 cups old-fashioned rolled oats
2 cups whole wheat flour
1 cup wheat germ
½ cup wheat and barley nugget cereal (such as Grape-Nuts®)
½ cup packed brown sugar
1 ½ teaspoons ground cinnamon
1 ripe banana, mashed
2 large eggs, beaten
½ cup vegetable oil
½ cup unsweetened applesauce
⅓ cup pure maple syrup
⅓ cup honey
2 teaspoons vanilla extract
1 teaspoon salt
½ cup flax seeds
½ cup sesame seeds
½ cup sunflower seeds
½ cup semisweet chocolate chips
½ cup chopped banana chips
½ cup chopped walnuts
½ cup chopped almonds
½ cup chunky peanut butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x14-inch baking pan.
  • Mix rolled oats, whole wheat flour, cereal, brown sugar, and cinnamon together in a large bowl.
  • Whisk banana, eggs, oil, applesauce, maple syrup, honey, vanilla extract, and salt together in a separate bowl until evenly blended. Stir into the oat mixture. Stir in flax seeds, sesame seeds, sunflower seeds, chocolate chips, banana chips, walnuts, almonds, and peanut butter.
  • Use your hands to mix the ingredients, and press into the prepared pan.
  • Bake in the preheated oven until edges are golden brown, 20 to 25 minutes. Cool completely in the pan, about 30 minutes. Cut into 2-inch bars.
