1/2 cup juliened fresh ginger, peeled
1/2 cup sugar
1 cup water

Steps:

  • Bring a pot of water to a rolling boil and blanch ginger for 10 seconds.
  • Drain and repeat 2 more times.
  • In a medium saucepan bring sugar and water to a boil.
  • Add blanched ginger and simmer for 20 minutes.
  • Remove from heat.
  • Pour into a container and keep in the fridge until ready to use.

600 grams fresh ginger
600 grams granulated sugar
600 milliliters water

Steps:

  • Freeze ginger overnight to tenderise.
  • Remove the ginger from the freezer and wait for about 5-10 minutes for the ginger to warm slightly then peel and slice into pieces. There should be about 450g ginger after peeling and chopping
  • Cook the ginger in a large saucepan with the lid on for 2½ hours in 1.4 litres water until the ginger is tender.
  • Drain the ginger but reserve water.
  • Then weigh the water, you will need about 600ml so add more water if it's slightly less or pour some away if it's more.
  • Pour the water back into the saucepan and add the granulated sugar.
  • Bring the water and sugar to a boil.
  • Add the ginger back in and bring back to a boil then simmer for 5 minutes.
  • Turn off the heat and behold your stem ginger in syrup.

I found this at cdkitchen.com and it looked so easy I had to try it.. I will never buy candied ginger again.. this was outstanding. And I can't wait to try the syrup in some tea.

1 cup fresh ginger
3 cups water
3 cups sugar

Steps:

  • Peel ginger and slice into rounds about 1/8 inch thick.
  • Mix sugar and water in a large sauce pan and bring to boil.
  • When sugar is disolved, add ginger and boil for 45 minutes.
  • Ginger should be sweet and tender.
  • Drain ginger and reserve liquid.
  • Place ginger on rack to dry for 30 minutes.
  • Toss with sugar to coat.
  • Let dry on wax paper.
  • Store in airtight container.
  • Boil reserved liquid until reduced to a syrup with consistency between maple syrup and honey. (mine was that way after the 45 minutes with the ginger in it.
  • Sugar will crystallize so just add a little water and boil.
  • Store in airtight container in refrigerator.
  • Syrup can be used for waffles, icecream, tea, Or whereever you use syrup.
