SUPREME PIZZA

Even if you've never made pizza from scratch, I hope you'll try this supreme pizza recipe. It's the highlight of my favorite casual meal. You have to plan ahead to allow rising time for the dough, but it is easy to work with and the crust is good.-Gaylene Anderson, Sandy, Utah

SUPREME PIZZA DIP

Supreme Pizza Dip image

This hearty dip has the works: pepperoni, onions and bell peppers stirred into a thick tomato sauce, all topped with gooey melted cheese. Serve in a skillet and let your guests pile their baguette slices high with toppings, deep-dish style.

Provided by Food Network Kitchen

Categories     appetizer

Time 1h

Yield 8 to 10 servings

Number Of Ingredients 13

4 ounces pepperoni
1 cup finely chopped onion
1/2 cup finely chopped green bell pepper
2 cloves garlic, minced plus 1 whole clove
1/2 teaspoon dried oregano
Kosher salt and freshly ground black pepper
1 tablespoon tomato paste
One 28-ounce can crushed tomatoes
1/3 cup pitted black olives, chopped
1/4 cup grated Parmesan
1 baguette, ends trimmed, sliced diagonally into twenty-four 1/2-inch pieces
2 tablespoons olive oil
4 ounces mozzarella, diced

Steps:

  • Preheat the oven to 425 degrees F. Dice 3 ounces of the pepperoni. Thinly slice the remaining 1 ounce and set it aside to garnish the dip.
  • Heat a medium cast-iron or ovenproof skillet over medium heat until hot. Add the diced pepperoni and cook, stirring, until crisp, 4 to 5 minutes. Add the onions, bell pepper, minced garlic, oregano, 3/4 teaspoon salt and some pepper. Continue to cook, stirring, until the onions are very tender and lightly browned, about 5 minutes.
  • Stir in the tomato paste and cook, stirring, until it coats the vegetables and smells lightly toasted, about 1 minute. Stir in the tomatoes with their juice from the can. Reduce the heat and simmer, stirring occasionally, until the mixture is slightly thickened, about 15 minutes. Stir in the olives and Parmesan and remove from the heat. Season with additional salt and pepper.
  • Meanwhile, toss the baguette slices with the oil and spread in a single layer on an ungreased baking sheet. Bake until lightly toasted and crisp, 7 to 9 minutes. Rub the slices with the whole garlic clove and set aside to cool.
  • Preheat the broiler. Scatter the mozzarella and reserved sliced pepperoni over the dip in the skillet. Place the skillet under the broiler and broil until the cheese is melted and lightly browned, 2 to 3 minutes. Serve the dip warm with the garlic toasts on the side.

SUPREME PIZZA

Supreme Pizza image

It's a true supreme pizza: bacon, pepperoni slices, red and green bell pepper, red onion, black olives, mozzarella, Parmesan, and basil. Our Test Kitchen calls it an "old-school supreme pizza [like] one would get at Pizza Hut, Shaky's, or a classic pizzeria." The olives and peppers are classic additions that give the pizza a strong nostalgia factor. It's so easy to make at home, and you probably have a few of the ingredients already on hand. A Test Kitchen tip: When it comes to jarred pizza sauce, Rao's is the way to go, no question. Another tip from the Test Kitchen: "Using a very high oven temperature is a pro tip to getting that pizzeria-style crispiness, rise, and texture from your store-bought dough. A pizza stone ensures a crisp bottom crust. If you don't have one, use a baking sheet turned upside down." Voila! There's dinner, and if you have any leftovers, a deliciously cold breakfast slice just might be in your future.

Provided by Southern Living Editors

Time 30m

Yield Serves 4 (serving size: 2 slices)

Number Of Ingredients 11

1 pound fresh prepared pizza dough
1 cup marinara (such as Rao's)
2 ounces Canadian bacon slices (about 3 slices), quartered
1 ounce pepperoni slices (about 15 slices)
1 small (3 to 4 oz.) red bell pepper, cut into 1/4-inch-thick rounds (about 1/2 cup)
1 small (3 to 4 oz.) green bell pepper, cut into 1/4-inch-thick rounds (about 1/2 cup)
1 small (3 to 4 oz.) red onion, cut into 1/4-inch-thick rounds (about 1/2 cup)
1 (2 1/4-oz.) can sliced black olives, drained
6 ounces low-moisture part-skim mozzarella cheese, shredded (about 1 1/2 cups)
1/4 cup grated Parmesan cheese
1/4 cup torn fresh basil leaves

Steps:

  • Place a pizza stone or baking sheet on middle rack in oven. Preheat oven to 500°F (do not remove pizza stone while oven preheats). Roll dough out into a 14-inch circle on a lightly floured work surface. Transfer dough circle to a piece of parchment paper. Spread marinara over dough, leaving a 1-inch border. Top with Canadian bacon, pepperoni, red and green bell peppers, red onion, black olives, and mozzarella. Transfer parchment with pizza to hot pizza stone. Bake at 500°F until cheese is bubbly and lightly browned, 9 to 10 minutes. Remove pizza, and let stand 5 minutes; sprinkle with Parmesan and basil.

  • In a large bowl combine the warm water, yeast and sugar. Allow to poof for a few minutes and add remaining ingredients. Stir until dough comes together and lightly knead until flour is fully incorporated. (Dough should be slightly sticky and thick.) Cover and allow to rise in a warm place for about 25 minutes.
  • With greased hands shape dough into a ball and dredge bottom of dough into corn meal (this is optional but I like the hard crust that forms on the bottom of the crust this way, only lots of oil is crucial for this to work.) Transfer dough to the greased pan and spread out forming a border. Poke bottom of the dough and grease the edges using the excess oil from the pan. Spread sauce and layer toppings in the order given. Bake on the bottom rack of the oven for 25-30 minutes or until crust is nicely brown. Cut into squares or slices.
