Homemade vanilla almond milk is a delicious milk alternative for those who follow a dairy-free or vegan diet. You may find that making homemade almond milk is the best and tastiest way to go! The milk is perfect for things such as hot or cold cereals or as a milk alternative for any other recipe that calls for milk. Try a little cinnamon in 1 cup of almond milk for a nice healthy treat to satisfy your sweet tooth!

1 cup Nature's Eats Raw Almonds
3-4 cups spring water
1 teaspoon vanilla or 1 vanilla bean
2 tablespoons raw honey or 1 tablespoon raw agave (sweeten more or less to taste)
Cinnamon (optional)

Steps:

  • Soak Nature's Eats Raw Almonds for 6-8 hours prior to making Homemade Vanilla Almond Milk (optional). This will make the milk easier to digest, however you can simply blend raw almonds that have not been soaked.
  • Place Nature's Eats Raw Almonds, water, vanilla, and sweetener of your choice in a blender or high powered Vitamix machine.
  • Liquefy the ingredients by starting at low speed and gradually taking it to the highest speed. Continue to blend for 1-3 minutes or until all ingredients are completely liquefied.
  • Optional: You can run the almond milk through a nut bag to remove the almond pulp. This will make the almond milk thinner. If desired, keep the fiber in the almond milk for an added health benefit.

1 cup raw whole almonds
Pure vanilla extract, honey and/or maple syrup, optional

Steps:

  • Place the almonds in a medium bowl and cover with 2 cups cold water. Cover with plastic wrap and refrigerate until softened and plump, at least 8 hours but preferably overnight.
  • Drain the almonds through a fine-mesh sieve, then rinse well. Reserve the sieve for later. Transfer the almonds to a blender and add 2 cups fresh cold water. Blend on high until very smooth, about 2 minutes. It's okay if the mixture looks slightly grainy.
  • Line the reserved sieve with a clean kitchen towel or cheesecloth and place over a medium bowl. Working in batches, pour the blended almond mixture through the cloth in the sieve, separating the almond milk from any grainy bits. Gather the edges of the towel together and use your hands to squeeze out any remaining milk.
  • Whisk in 1 teaspoon vanilla and/or 1 to 2 tablespoons honey or maple syrup if using to flavor and sweeten the almond milk. Serve immediately or refrigerate in an airtight container for up to 5 days.

Steps:

  • Place almonds and vanilla bean in a bowl; add enough water to cover completely. Place dates in a separate bowl and add enough water to cover completely. Soak almonds and dates at room temperature, 8 hours to overnight.
  • Drain and discard soaking water from almonds and rinse almonds thoroughly. Drain water from dates and keep water to add to the almond milk, if desired.
  • Combine soaked almonds, vanilla bean, dates, and sea salt in a blender; pour in 3 cups water. Blend on high for 1 minute. Let sit to allow foam to subside, about 1 minute. Add remaining 1 cup water and some of the date water for extra sweetness; blend until almond milk is smooth, about 1 minute.
  • Place a nut milk bag in a quart-size measuring cup or large bowl. Pour almond milk into the bag and lift to drain. Gently squeeze the bag to extract as much milk as possible. Store almond milk in the refrigerator.

3 cups water
1 tablespoon agave nectar, or more to taste
1 pinch sea salt

Steps:

  • Place almonds in a bowl and pour in enough water to cover; soak at least 12 hours. Drain water.
  • Blend almonds and 3 cups water in a blender on low speed for 10 seconds. Turn blender off for 5 seconds. Blend almonds and water on high speed for 60 seconds. Pour mixture through cheesecloth or a nut bag into a bowl. Discard the pulp or save for another use.
  • Clean the blender and return milk to blender; add agave nectar and salt. Blend milk until smooth.

Steps:

  • Place the almonds in a large bowl and cover with water. Soak at least 4 hours, up to 2 days. Overnight is ideal.
  • Drain the almonds and place them in a blender with the remaining ingredients. Puree until the almonds are in tiny pieces. Discard the soaking liquid and use new filtered water for pureeing.
  • Place a strainer in a large bowl and cover the top of the strainer with cheesecloth (this step is important because the almonds will be in such small pieces that the cheesecloth and strainer need to stop them from going into the milk).
  • Pour the almond milk through the cheesecloth. You may need to do this in stages so the milk can slowly strain through the cheesecloth. It may help taking a spoon to scrape the bottom of the cheesecloth so the milk can pass.
  • Pour the milk and the almond puree into separate containers and refrigerate until ready to drink." the pureed almonds can be saved and eaten as a breakfast with typical oatmeal toppings, or as a dessert topped with fresh berries!
