1/3 cup balsamic vinegar
1 garlic clove
2 tablespoons honey
3/4 cup vegetable or canola oil
Kosher salt and freshly ground black pepper
8 small lamb chops
2 tablespoons olive oil
1/2 tablespoon chopped fresh rosemary leaves

Steps:

  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill.
  • In the bowl of a food processor, combine the balsamic vinegar, garlic, and honey. Pulse until blended. With the machine running, slowly pour in the vegetable oil until the mixture is smooth and forms a thick sauce. Season with salt and pepper, to taste.
  • Season the lamb chops with salt and pepper. Drizzle with the olive oil and sprinkle with rosemary. Grill the lamb chops for 2 to 3 minutes each side until medium-rare.
  • Arrange the lamb chops on a platter. Spoon the sauce over the top or serve the sauce on the side.

This honey-cider marriage, with pungent mustard, brings out the best tantalizing tastes from these succulent chops. Lamb's got a new look, and we're clearing out the best runway space for it to strut its stuff. Tip: Make potatoes easier to cut by making a large slice that leaves a flat surface. Place the flat surface on the cutting board and get to dicing!

12 oz. Fingerling Potatoes
8 oz. Cremini Mushrooms
2 fl. oz. Apple Cider
2 oz. Baby Spinach
Info 2 oz. Grated Parmesan
Info ⅗ oz. Butter
½ fl. oz. Honey
Info 2 tsp. Chicken Demi-Glace Concentrate
2 tsp. Grained Dijon Mustard

Steps:

  • Before You Cook Turn oven on to 425 degrees. Let preheat, at least 10 minutes If using any fresh produce, thoroughly rinse and pat dry Prepare a baking sheet with foil and cooking spray Prepare a small casserole dish with cooking spray Ingredient(s) used more than once: Parmesan Cooking Guidelines To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures: Steak and Pork 145° F (rest cooked meat, 3 minutes) | Seafood 145° F | Chicken 165° F | Ground Beef 160° F | Ground Turkey 165° F | Ground Pork 160° F 1 Prepare Ingredients and Start Potatoes Slice potatoes into 1/2" pieces.Cut mushrooms into 1/4" slices.Coarsely chop spinach.Place potatoes on one half of prepared baking sheet and toss with 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Spread into a single layer on their side.Roast in hot oven until starting to brown, 10 minutes.Remove from oven. Potatoes will finish cooking in a later step.While potatoes roast, sear lamb. 2 Cook Lamb and Finish Potatoes Pat lamb dry, and season both sides with 1/4 tsp. salt and a pinch of pepper. Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Add lamb to hot pan and sear until browned, 3-4 minutes per side.If using NY strip steak, follow same instructions and sear, 2-3 minutes per side.Transfer to empty half of baking sheet.Reserve pan; no need to wipe clean.Roast in hot oven until potatoes are tender and lamb reaches a minimum internal temperature of 145 degrees, 8-10 minutes. If using NY strip steak, roast in hot oven until steak reaches a minimum internal temperature of 145 degrees, 9-12 minutes.Transfer lamb to a plate and tent with foil. Turn broiler on.While lamb and potatoes cook, start gratin. 3 Start the Gratin Return pan used to cook lamb to medium-high heat. Add mushrooms to hot pan and cook undisturbed, 4 minutes, stirring once halfway through.Add spinach and season with a pinch of salt and pepper. Stir occasionally until spinach is just wilted, 2-3 minutes.Remove from burner. 4 Bake the Gratin Stir potatoes and half the Parmesan (reserve remaining for topping) into pan with spinach and mushrooms.Transfer to prepared casserole dish and top evenly with remaining Parmesan.Broil until top is golden brown, 1-2 minutes.Wipe pan clean and reserve. 5 Make Sauce and Finish Dish Return pan used to cook mushroom-spinach mixture to medium heat. Add demi-glace, honey, apple cider, and mustard to hot pan. Bring to a boil. Once boiling, stir constantly until thickened, 2-3 minutes.Remove from burner and stir in butter until combined.Plate dish as pictured on front of card, placing lamb on sauce. If using NY strip steak, halve to serve. Bon appétit!

3 tbsp olive oil
8 lamb chops
1kg potatoes, chopped into small chunks
4 rosemary sprigs
4 garlic cloves, left whole
250g cherry tomatoes
1 tbsp balsamic vinegar

Steps:

  • Turn the oven to fan 200C/ conventional 220C/gas 7. Heat half the oil in a flameproof roasting tin or ovenproof sauté pan. Brown the lamb for 2 minutes on each side, then lift out of the pan and set aside. Add the rest of the oil to the pan, add the potatoes, then fry for 4-5 minutes, until starting to brown. Add the rosemary and garlic, then return the lamb to the pan, too.
  • Roast in the oven for 20 minutes, then scatter over the tomatoes and drizzle with the balsamic vinegar. Place back in the oven for 5 minutes, until the tomatoes just begin to split. Remove from the oven and serve straight from the dish.

2 garlic cloves, halved
1/3 cup lightly packed fresh basil leaves
1/4 cup fresh parsley leaves

2 tbsp wholegrain mustard
1 tsp red wine vinegar
2 tbsp clear honey
2 lamb leg steaks, fat trimmed
50g fresh breadcrumbs
zest 1 lemon
1 tbsp olive oil
200g new potatoes , cubed
bunch Tenderstem or purple-sprouting broccoli , cut into pieces

Steps:

  • Make a dressing by mixing together the mustard, vinegar and honey. Spread ½ tsp over each steak and season well, reserving the remaining dressing. Tip the breadcrumbs out onto a plate and sprinkle over the lemon zest. Dip the steaks in this until coated. Heat the oil in a non-stick frying pan and, when hot, cook the lamb until crisp and cooked through, about 7 mins on each side.
  • Meanwhile, boil the potatoes in salted water for about 10 mins until soft, adding the broccoli for the final 5 mins of cooking. Drain and roughly mash together. Serve alongside the lamb with the leftover dressing drizzled over.

Steps:

  • Preheat the oven to 220C/ Gas 7. Weigh the lamb and calculate the final cooking time at 12 minutes per 450g for medium rare, 15 minutes per 450g for medium.
  • Score the fat around the leg of the lamb in a criss-cross pattern, drizzle with a little olive oil, then rub all over with salt and pepper. Place in a deep roasting pan and scatter the garlic and thyme over and around. Pour over the lemon juice and drizzle again with olive oil. Sprinkle with a little more seasoning, then roast in the hot oven for 20 minutes.
  • Slice the apples into quarters and cut off the cores. Remove the lamb from the oven and reduce the heat to 180C/ Gas 4. Scatter the apples around the pan and baste the lamb with cider. Turn the lamb over and drizzle with 2 tbsp of honey. Return to the oven for 30 minutes.
  • Turn the lamb, baste the meat with the pan juices, then drizzle over another teaspoon of honey. Continue to roast for the calculated time. To check it, insert a skewer into the thickest part of the lamb, then press the meat lightly; the redder the juices, the rarer the meat. Lift the lamb onto a carving board and cover with foil. Rest in a warm place.
  • At this point, the roasting apples and garlic should be very soft. Press with a fork, then tip the contents of the pan into a sieve over a saucepan. Push with the back of a ladle to extract all the juices and flavour. Discard the pulp. Place the saucepan over a medium heat and add the stock. Boil and bubble until the sauce has thickened. Taste and adjust the seasoning, then pour into a warm jug. Carve the lamb into thin slices and serve drizzled with the apples and cider gravy.
