1 ½ cups white sugar
3 tablespoons unsweetened cocoa powder
2 eggs
1 (5 ounce) can evaporated milk
¼ cup melted butter
1 teaspoon vanilla extract
1 (9 inch) unbaked pie crust

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix sugar and cocoa together. Beat the eggs then add to the cocoa mixture. Beat in the milk, butter and vanilla.
  • Pour mixture into 9 inch unbaked pie shell and bake at 350 degrees F (175 degrees C) for 45 minutes or until set. Let cool before slicing.

1 (9 inch) pie crust, baked
3 egg yolks, beaten
1 ½ cups white sugar
3 tablespoons cornstarch
½ cup unsweetened cocoa powder
½ teaspoon salt
3 cups milk
1 tablespoon butter
1 ½ teaspoons vanilla extract
1 cup frozen whipped topping, thawed

Steps:

  • In a large mixing bowl, cream together egg yolks and sugar. Mix in cornstarch, cocoa powder, and salt. Add milk and stir gently.
  • Pour mixture into a large saucepan and cook over medium heat, stirring constantly, until boiling. Remove from heat. Stir in butter or margarine and vanilla extract. Cool slightly, then pour mixture into pastry shell. Chill before serving. Garnish with whipped topping.

1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, blend together the eggs, white sugar, brown sugar, flour, butter, corn syrup and vanilla.
  • Add the chocolate chips and pecans; mix well and pour into pie crusts.

4 tablespoons butter
27 large marshmallows
½ cup milk
1 cup frozen whipped topping, thawed
½ teaspoon vanilla extract
2 (1 ounce) squares unsweetened chocolate, grated

Steps:

  • Roll graham crackers to fine crumbs; there should be about 1 cup. Melt the butter or margarine, and combine with the crumbs. Pat into 9 inch pie plate. Chill.
  • Heat 24 to 30 large marshmallows slowly in the milk. Cool. Fold in whipped topping, vanilla and grated bitter chocolate. Pour filling into crust, and refrigerate l hour.

1 sleeve graham crackers (9 whole crackers)
2 tablespoons granulated sugar
6 tablespoons unsalted butter, melted
1 cup milk
1 cup granulated sugar
3 tablespoons all-purpose flour
1 tablespoon unsweetened cocoa powder
3 large eggs, separated
2 tablespoons unsalted butter
1/2 teaspoon vanilla extract
1/4 teaspoon kosher salt
Pinch of kosher salt
1/4 cup granulated sugar

Steps:

  • For the crust: In a food processor, pulse the graham crackers and sugar until crumbs form. Pour in the butter and continue to pulse until the crumbs are coated. Press the mixture firmly into the bottom of a 9-inch pie plate. Set aside.
  • For the filling: In a small saucepan, heat the milk until hot but not simmering. To a medium saucepan, add the sugar, flour and cocoa and whisk together well. Lightly beat the egg yolks (saving the whites for the meringue) and pour into the flour mixture. Slowly add the hot milk, stirring. This will create a paste in the beginning, ensuring that the chocolate and flour blend smoothly. Place over medium heat and cook, stirring constantly, until very thick, about 5 minutes. The mixture will start to bubble sporadically; continue to stir and cook for another 2 minutes. Remove the pan from the heat and stir in the butter, vanilla and salt. Stir until the butter is completely incorporated.
  • Pour the filling into the crust and chill in the refrigerator, about 45 minutes.
  • For the meringue: Preheat the oven to 325 degrees F. With an electric mixer, beat the egg whites with the salt until stiff. With the mixer running, gradually add the sugar and beat until the whites are smooth and glossy. Spread the meringue on the pie, reaching the edges of the crust to seal in the filling. Bake until brown, 15 to 20 minutes. Cool completely before serving.

I've had this recipe for many years on an old recipe card that is yellowing badly. I'm putting it here for safekeeping. This is a very tasty pie and different from most others I've had. Prep time does not include chill time.

2 cups corn flakes, crushed
1/2 cup butter, melted (1 stick)
1/4 cup sugar
4 egg yolks
1/2 cup sugar
2 cups milk, scalded
1 tablespoon unflavored gelatin (1 envelope)
1/4 cup cold water
1 teaspoon vanilla
2 large bananas, ripe, sliced
1 cup sour cream
1/3 cup semi-sweet chocolate chips, chopped

Steps:

  • Crust:.
  • Mix corn flake crumbs, melted butter and sugar together.
  • Press firmly on bottom and sides of pie plate.
  • Chill until ready to fill.
  • Filling:.
  • Beat egg yolks and sugar thoroughly.
  • Add a little scalded milk, stirring constantly.
  • Add mixture to rest of scalded milk in pan.
  • Cook over low heat, stirring constantly until thickened.
  • Soften gelatin in cold water and blend into custard.
  • Add vanilla.
  • Chill until it starts to gel then fold in sliced bananas.
  • Pour into crumb shell and spread on sour cream.
  • Sprinkle chopped chocolate chips over top.
  • Cover pie with meringue.

1 (9 inch) prepared graham cracker crust
2 (4 ounce) packages single serve ready-made, fat free, chocolate pudding
⅓ cup reduced fat smooth peanut butter
1 (8 ounce) container lite frozen whipped topping

Steps:

  • In a mixing bowl, combine pudding and peanut butter; stir until smooth. Fold in whipped topping; stir until completely blended.
  • Pour filling into pie crust. Freeze pie until firm. Partially thaw in refrigerator, for about 2 hours or so, before serving. You can store leftovers in the refrigerator or freezer. Leftover pie sometimes gets a little soft in the refrigerator, and doesn't hold its shape. It still tastes good, though. If you want perfect looking slices after you make the first incision, store in freezer and thaw as needed.

1 recipe pastry for a 9 inch single crust pie
2 cups semisweet chocolate chips
3 eggs
⅛ teaspoon salt
⅔ cup packed brown sugar
1 ½ cups chopped pecans
12 pecan halves

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Over hot, not boiling, water melt 1 cup chocolate chips. Remove from heat, and let cool.
  • In a small bowl, beat the eggs and salt; beat with an electric mixer at high speed until very thick and lemon colored, about 5 minutes. Gradually beat in the brown sugar and melted chocolate. Stir in chopped pecans and remaining 1 cup chocolate morsels. Pour filling into the unbaked pie crust. Decorate top with pecan halves.
  • Bake for 25 to 30 minutes.

2 cups miniature marshmallows
½ cup milk
1 pinch salt
1 cup heavy whipping cream

Steps:

  • Place chopped chocolate bars, marshmallows, milk, and salt in the top of a double boiler. Heat and stir until mixture is melted and smooth. Remove from heat and allow to cool, stirring occasionally.
  • In a medium bowl, beat cream until soft peaks form. Fold cream into cooled chocolate mixture. Pour mixture into graham cracker crust. Chill before serving. This pie is also delicious frozen.

1 1/2 cups heavy cream, chilled and divided
1/4 cup dark corn syrup
2 (3 ounce) packages cream cheese, softened
1 (9 inch) chocolate crumb crusts (#134516 Chocolate Cookie Crust)

Steps:

  • Add two inches of water to a med-sized saucepan; bring the pot to a bare simmer.
  • Combine chocolate, 1/2 cup heavy cream, and the corn syrup in a stainless-steel bowl big enough to rest on top of the saucepan.
  • Place the bowl over the simmering water, making sure the bottom of the bowl does not touch the water.
  • Heat, whisking occasionally, until the chocolate is completely melted.
  • Remove bowl from the heat and set the mixture aside; let cool until just warm, 5-10 minutes.
  • With an electric mixer, beat in the softened cream cheese until the mixture is smooth.
  • In a mixing bowl, whip the remaining 1 cup heavy cream (use electric mixer) until it just holds stiff peaks.
  • Gently fold the whipped cream into the chocolate mixture.
  • Scrape the filling into the prepared crumb crust, smoothing the top with a rubber spatula.
  • Cover pie with plastic wrap and refrigerate until the filling is completely set, 4 hours to 1 day.
