1 lb boneless chicken breast
20 bacon, slices
3 tablespoons honey
2 teaspoons coarse grain mustard
1 tablespoon fresh lemon juice
salt, to taste

Steps:

  • Cut the chicken breasts-or fillets, as we call them here-in thin strips. Not too thin, the bacon has to brown and if the chicken is too thin it'll get dry before the bacon gets crispy.
  • Grab a bowl and combine 3 tbsp honey with 2 tsp coarse mustard.
  • Squeeze in some lemon juice. Not too much, about a tbsp or so. I think orange juice will be great, too.
  • wrap the bacon around the chicken strips.
  • Place them in a roasting tray or on a cookie sheet. If you're afraid of cleaning up, line the tray or sheet with some tin-foil first.
  • Brush the chicken bites with half the marinade.
  • Bake them in a preheated oven at 425F (225C) for 10 to 13 minutes. Until the bacon is crispy.
  • As soon as one side is done, take the tray out of the oven.
  • Flip them over and brush them with the remaining marinade.
  • Put them back in the oven for another 10 to 13 minutes, until the other side is crispy as well. Keep an eye on them.

I'm always looking for fast, easy recipes. I recently came up this dish and it was a big hit with the family! The chicken was juicy and the sauce glazed the chicken and blended with the bacon to make it delicious.

6 boneless, skinless chicken breasts
1 box sliced thick-cut bacon, uncooked
1 bottle kraft brand honey mustard barbecue sauce

Steps:

  • 1. Preheat your oven to 375 degrees. Cover the bottom of a casserole dish with about an inch of water and position next to your chicken breasts so it can be reached easily.
  • 2. Take your chicken breasts and wrap each breast completely with two slices of bacon (you may try maple flavored bacon for added sweetness or peppered for a touch of spice).
  • 3. Lay each breast in the casserole dish. Open the honey mustard barbecue sauce and drizzle over the chicken breasts until all are well covered.
  • 4. Bake for 45 minutes to an hour, checking midway through as oven temperatures vary. Chicken should be juicy and bacon will be crisp on top with the sauce covering chicken with a honey-brown glaze.
