CHICKEN PARMESAN
Chicken Parmesan. Panko-crusted chicken breast topped with homemade marinara sauce, melted whole milk mozzarella, and parmesan cheeses and baked until golden and bubbly.

Steps:
- Preheat oven to 375 degrees. Sprinkle salt all over the chicken breasts (make sure they are thinly sliced).
- In a shallow dish, whisk eggs together. Place panko bread crumbs and 1/4 cup of parmesan cheese into a shallow pan. Stir in garlic powder and pepper. Dip chicken into the egg mixture and coat well. Then immediately dip chicken into the panko mixture, pressing the bread crumbs into the chicken. Repeat with the remaining chicken and set aside.
- Heat skillet over medium-high heat. Add oil and butter. Add chicken to skillet and cook for 3-4 minutes per side, depending on the thickness of the breast. Once the panko bread crumb coating is a golden color, then you will know it is ready to be flipped to the other side.
- Add 1/2 of the sauce to a baking dish or a skillet. Place the chicken breasts on top of the sauce. Sprinkle mozzarella and remaining 1/2 cup of parmesan cheese over the chicken. Place dollops of tomato sauce all over the chicken. Place in oven and cook at 375 degrees until the cheese is melted and bubbly and the chicken is cooked through -- about 7-8 minutes.
- To get the cheese golden and bubbly, place the oven to the broil setting. Put the pan on the top rack and cook for 2 minutes until the cheese is golden. Top with fresh basil and serve.
SLOW COOKER HONEY PARMESAN CHICKEN

Steps:
- Spray Slow Cooker with non stick cooking spray
- Place chicken in slow cooker
- Mix together honey, soy, basil, garlic, parmesan, and olive oil
- Pour mixture over chicken and cook on low for 4-6 hours
- If Freezing
- Place Chicken into freezer bag
- Mix together remaining ingredients and pour over chicken
- Freeze
- Remove from freezer and let thaw in fridge overnight before cooking
- Cook on low for 4-6 hours

- Season chicken with poultry seasoning and place in shallow baking pan.
- In saucepan, make sauce by combining the remaining ingredients and bringing to a simmer over low heat.
- Pour sauce over chicken, coating it well, and bake at 300*- uncovered- for 1 hour or until done, basting often and turning once.

PARMESAN-CRUSTED CHICKEN WITH CREAMY HONEY-MUSTARD DIP

- Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.
- In a shallow dish, combine flour and 1/2 teaspoon each salt and black pepper. Add chicken to flour mixture and turn to coat. Place milk in a separate shallow dish. In a third shallow dish or resealable plastic bag, combine parmesan, oats, garlic powder, onion powder, and oregano. Dip chicken into flour and turn to coat. Dip flour-coated chicken into milk and then transfer chicken to oat mixture. Turn to coat chicken (or shake bag) until well covered with oat mixture. Place chicken on prepared baking sheet and spray the surface with cooking spray. Bake 15 minutes, until crust is golden brown and chicken is cooked through.
- To make dip, in a small bowl, whisk together sour cream, Dijon mustard and honey.
- Serve chicken with dip on the side.
HONEY PECAN CHICKEN STRIPS

- Place the chicken in a large bowl. Add the buttermilk and hot sauce, then toss to combine. Allow to marinate 15 to 30 minutes.
- In a separate bowl, combine the flour, pecans and seasoning salt. Mix well and set aside.
- Heat about 1 inch of vegetable oil in a large skillet over a medium heat until it reaches 375 degrees F.
- Place a small pan over a low heat and add the honey and butter. Allow the honey to warm and the butter to melt.
- Meanwhile, remove the chicken from the buttermilk a few pieces at a time, then add to the flour/pecan mixture, turning to coat thoroughly. Place on a plate. Continue with the remaining chicken until it is all coated.
- Cook the chicken in the skillet in batches, flipping halfway through, until they are golden and crisp, about 4 minutes. Remove to a paper towel-lined plate.
- Add the chicken to a platter and drizzle over half of the honey butter. Garnish with the parsley. Serve with the remaining honey butter on the side for dipping.
SHEET PAN HONEY-GARLIC CHICKEN DINNER
This one-pan chicken dinner has the most delicious honey-garlic glazed chicken alongside tenderly roasted potatoes and green beans. Garnish with parsley.

- Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a sheet pan with nonstick spray.
- Prepare glaze by whisking 2 tablespoons olive oil, melted butter, honey, brown sugar, Dijon, garlic, oregano, and basil together in a small bowl. Season with salt and pepper.
- Place potatoes in a single layer on one half of the prepared sheet pan. Arrange chicken in a single layer on the other half. Drizzle remaining 1 tablespoon oil over the potatoes, then season both chicken and potatoes with salt and pepper. Spoon 1/2 of the glaze over the chicken breasts. Reserve remaining glaze.
- Roast in the center of the preheated oven for 20 minutes. Remove from the oven. Move the oven rack to the top shelf and turn on the broiler.
- Stir green beans and remaining glaze in with the potatoes and mix to combine.
- Return to the oven and broil until everything is caramelized and slightly charred, the potatoes are fork-tender, and the chicken is no longer pink in the center and the juices run clear, 5 to 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Preheat oven to 400˚F (200˚C)
- Season chicken thighs with salt and pepper.
- Melt 1 tablespoon butter in a large ovenproof skillet over medium heat. Add chicken, skin-side down, and sear both sides until golden brown. (The skin side will take much longer, in order to properly render the fat and crisp up the skin.)
- Remove chicken thighs and set aside. Pour out any excess fat, but leave some in for the sauce.
- Add garlic, stir until fragrant, then add brown sugar, honey, thyme, and oregano, and stir. Reduce heat to low.
- Return chicken to the skillet. Coat the chicken in the sauce.
- Add green beans to skillet.
- Bake for 25 minutes or until chicken is cooked through.
- Enjoy!
