HONEY PANCAKES
Bee sweet to your family with delicious honey pancakes! They'll love the honey-cinnamon syrup, too.

Steps:
- In 1-quart saucepan, heat all syrup ingredients over low heat, stirring occasionally, until warm; keep warm.
- Heat griddle or skillet over medium heat or electric griddle to 375°F. Grease with cooking spray, vegetable oil or shortening. (Surface is ready when a few drops of water sprinkled on it dance and disappear.)
- In medium bowl, stir all pancake ingredients until blended. For each pancake, pour slightly less than 1/4 cup batter onto hot griddle.
- Cook until edges are dry. Turn; cook other sides until golden. Serve with warm syrup.

PUFF PANCAKE WITH BOURBON PEACHES
Steps:
- Preheat oven to 400°. Place butter in a 9-in. deep-dish pie plate; heat in oven until butter is melted, 2-3 minutes. Meanwhile, in a small bowl, whisk eggs, milk, vanilla and salt until blended; gradually whisk in flour. Remove pie plate from oven; tilt carefully to coat bottom and sides with butter. Immediately pour in egg mixture. Bake until puffed and browned, 18-22 minutes. , Meanwhile, in a large saucepan, combine water, 3 tablespoons bourbon, honey and preserves. Bring to a boil; reduce heat. Add peaches; cook and stir until tender, for 3-4 minutes. Remove peaches to a bowl; set aside. Bring sauce mixture to a boil; cook and stir until reduced to 1/2 cup. Remove from heat; stir in peaches and remaining 1 tablespoon bourbon. , Remove pancake from oven. Serve immediately with warm peach sauce.

RESTAURANT STYLE FLUFFY HONEY PANCAKES
I got this recipe from a friend after having trouble making a pancake with whole wheat flour that my 2 boys will eat. I made these and I swear they were the best pancakes I ever made. They looked so fluffy and browned just right. The boys loved them. We usu. eat maple syrup or powdered sugar over them. I just tried making a homemade syrup and that turned out good too. This is freshly ground whole wheat flour, so if you have store bought whole wheat, I would recommend doing it 1/2 white and half wheat.

Steps:
- In a bowl, combine the flour, powder, soda and salt.
- In a large bowl, combine the buttermilk, egg yolks, olive oil and honey, stirring well.
- Add the dry ingredients to the wet ingredients.
- In a glass or ceramic bowl, beat the egg whites until stiff peaks form; fold them gently into the pancake mixture.
- Heat an electric skillet to 375° F and spray with cooking oil.
- Drop about 1/2 cupfuls onto hot skillet and cook until underside is golden (you may not get a lot of bubbles, since this is very airy).
- Flip and cook until second side is done. You should have 5-6" pancakes.

- Preheat oven to 400 degrees F (200 degrees C). Grease a 9 inch pie plate or cake pan with 1 tablespoon butter.
- Place remaining 2 tablespoons butter into pan and place in the oven until butter is melted.
- Place eggs, cream cheese, milk, honey, flour, salt and baking powder into a blender; puree until smooth. Remove the plate from the oven and immediately pour the batter into it.
- Bake in preheated oven until puffed and dark golden brown, about 20 to 25 minutes. Serve warm with desired toppings.

My mom told me her mother-in-law showed her how to make this dish, which became popular during the Depression, on their "get acquainted" visit in 1927. At that time, cooks measured ingredients in pinches, dashes and dibs. But through the years, accurate amounts were noted. - Place butter in a 10-in. ovenproof skillet; place in a 425° oven until melted, 2-3 minutes. In a blender, process the eggs, milk, flour, sugar and nutmeg until smooth.
