Honey & sesame beef noodles image

A super-speedy, healthy stir-fry, easily halved to serve one for an after-work supper

100g wholewheat noodles
2 tsp sunflower oil
125g pack purple sprouting broccoli (or Tenderstem), cut into short lengths
100g sugar snap pea , halved
4 spring onions , cut into short lengths
2 tbsp reduced-salt soy sauce
175g lean rump steak , thinly sliced
2 tsp sesame seeds
2 tbsp clear honey

Steps:

  • Cook the noodles in boiling salted water until just tender, then drain and rinse in cold water. Heat half the oil in a non-stick wok. Add the broccoli, peas and 2 tbsp water, then cover and steamfry for 3 mins. Remove the lid, add the spring onions and stir-fry for 2 mins, adding a splash more water if needed to cook the veg. Add the noodles and half the soy sauce and toss with the veg. Divide between 2 bowls and keep warm.
  • Wipe out the wok and heat the remaining oil until smoking. Tip in the beef and stir-fry for 2 mins over a high heat, but don't move it around too much initially or it will release liquid and stew rather than fry. Tip in the sesame seeds, cook for 1 min more, then add the honey. Toss to coat the beef well, then add the remaining soy and bubble briefly. Spoon over the vegetables and noodles and serve immediately.

4 ounces wheat noodles (or egg noddles if you prefer)
2 teaspoons sunflower oil
4 1/2 ounces broccoli stems, cut into short lengths
4 ounces snow peas, halved
4 scallions, cut into short lengths
2 tablespoons low sodium soy sauce
6 ounces lean rump steak, thinly sliced
2 teaspoons sesame seeds
2 tablespoons clear honey

Steps:

  • Cook the noodles in salted boiling water until just tender, then drain and rinse in cold water.
  • Heat half the oil in a non-stick wok. Add the broccoli, peas and 2 tbs water then cover and steam-fry for 3 minutes.
  • Remove the lid, add the scallions and stir-fry for 2 mins, adding a splash more water if needed to cook the vegetables.
  • Add the noodles and half the soy sauce and toss with the veg. Divide between 2 bowls and keep warm.
  • Wipe out the wok and heat the remaining oil until smoking.
  • Tip in the beef and stir-fry for 2 mins over a high heat, but don't move it about too much initially or it will release liquid and stew rather than fry.

6 cloves garlic, minced
6 tablespoons sugar
6 tablespoons safflower oil
6 tablespoons rice vinegar
6 tablespoons soy sauce
2 tablespoons sesame oil
2 teaspoons chili sauce
6 green onions, sliced
1 teaspoon sesame seeds, toasted

Steps:

  • Bring a pot of lightly salted water to boil. Add pasta, and cook until al dente, about 8 to 10 minutes. Drain, and transfer to a serving bowl.
  • Meanwhile, place a saucepan over medium-high heat. Stir in garlic, sugar, oil, vinegar, soy sauce, sesame oil, and chili sauce. Bring to a boil, stirring constantly, until sugar dissolves. Pour sauce over linguine, and toss to coat. Garnish with green onions and sesame seeds.

Honey-Garlic Sauce:
1/3 cup soy sauce
1/2 cup mirin
1 tablespoon toasted sesame oil
4 garlic cloves, minced
1 or 2 fresh bird's-eye chiles, finely diced
1 tablespoon honey
Noodles and friends:
12 ounces thin egg noodles
2 tablespoons sunflower or vegetable oil
1 tablespoon minced fresh ginger
6 scallions, thinly sliced
2 limes: 1 halved, 1 cut into wedges for serving
1 tablespoon sesame seeds
Fresh cilantro or your favorite spicy herbs, for serving

Steps:

  • Make the sauce:
  • In a small bowl, combine the sauce ingredients. Stir and set aside.
  • Make the noodles and friends:
  • Bring a large pot of salted water to a boil and cook the noodles according to the package directions. When 1 minute of cooking time remains and the noodles are softened but firm, drain.
  • In a wok, heat the sunflower oil over medium-high heat. When the oil is hot, add the noodles and ginger and stir-fry for 2 minutes, keeping the noodles moving the entire time.
  • Pour in the sauce and cook for 1 minute, tossing to ensure that the noodles are completely coated. Turn off the heat.
  • Toss in the scallions, squeeze the juice of the halved lime on top, and sprinkle on the sesame seeds. Give everything a good toss to mix and combine.
  • Serve with the lime wedges and fresh cilantro or spicy greens.
