Sweet, sticky, and spicy oven baked Honey Sriracha Wings - Prepped in a matter of minutes! Gluten Free + Paleo Option

4 large garlic cloves, minced
1 tablespoon fresh ginger, minced
3 tablespoons | 36 grams sriracha
6 tablespoons | 127 grams honey
1 tablespoon | 15 ml lime juice
2 tablespoons | 30 ml gluten free soy sauce or tamari*
2 tablespoons | 30 ml sesame oil
2 pounds | 1 kg chicken wings
2 teaspoons corn starch mixed with 3 tablespoons water**

Steps:

  • Add the garlic cloves, ginger, sriracha, honey, lime juice and soy sauce/tamari and oil together in a bowl or zip lock bag. Mix well to combine. Pour out 1/4 cup of the marinade into a small sauce pot and set aside for now.
  • Add the wings and toss to coat. Set aside and let marinate for at least 10 minutes.
  • Preheat the oven to 400°F/200°C. Line a large cookie sheet with foil and place an oven safe wire rack over the top of the cookie sheet.
  • Lay the chicken wings across the wire rack and then place in the heated oven. Bake for 20 minutes and then remove to flip over. Use a pastry brush to brush over the excess sauce that's collected at the bottom of the cookie sheet. Return to the oven and bake for another 20 minutes or until cooked through (internal temp 165°F/74°C). Remove from the once once more and set aside.
  • Add any remaining marinade collected on the bottom of the cookie sheet and add it to the reserved sauce in the pot from earlier. Heat on a medium heat. Bring to a boil and stir in the starchy water mixture. Reduce the heat down to low and let simmer until thickened.
  • Use a pastry brush to brush the thickened sauce over the top of the wings. Garnish with chopped cilantro if desired and enjoy immediately.

1/2 cup honey
1/2 cup sriracha
1/4 cup soy sauce
1 tablespoon sesame oil
Juice of 1/2 lime (about 1 tablespoon)
Canola or peanut oil, for frying
1 3/4 cups cold water
1 cup cornstarch
1 cup all-purpose flour
Kosher salt and freshly ground black pepper
2 pounds chicken wings (14 to 16 pieces), split and tips removed
2 scallions, thinly sliced on an angle, for garnish

Steps:

  • Whisk together the honey, sriracha, soy sauce, sesame oil and lime juice in a small saucepan and bring to a boil over medium heat. Reduce the heat to low and simmer until the sauce comes together, about 5 minutes. Transfer to a large bowl and set aside.
  • Fill a large Dutch oven halfway with canola oil and heat over medium-high heat to 350 degrees F. Place a wire rack in a rimmed baking sheet and set aside. Whisk together the cold water, cornstarch, flour, 2 teaspoons salt and 1/4 teaspoon pepper in a large bowl until smooth. Add the chicken and toss to coat.
  • Lift the chicken pieces out of the batter one at a time, letting the excess batter drip back into the bowl, and gently place in the hot oil; work in batches and try to keep the wings separated in the oil. Fry until golden, adjusting the heat as necessary to keep the oil temperature at 350 degrees F., 8 to 9 minutes per batch. Remove the chicken with a spider or slotted spoon and set on the prepared wire rack to drain briefly. Then, while the wings are still hot, toss them in the honey-sriracha sauce to evenly coat. Transfer to a serving plate and sprinkle with the scallions.

The honey-sriracha glaze is quite delicious and incredibly simple, but merely an afterthought here. The real star of the show is the strange, but effective, technique of coating the wings with a baking powder-laced spice rub before baking. Through the magic of chemical reactions, the surface of the chicken becomes bone-dry, and eventually crisps up to something very similar to what would come out of a deep fryer.

2 tablespoons baking powder
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon smoked paprika
2 ½ pounds chicken wing sections
⅓ cup honey
⅓ cup sriracha sauce
1 tablespoon seasoned rice vinegar
¼ teaspoon sesame oil
1 pinch sesame seeds, or as desired

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and place an oven-proof wire rack over the foil.
  • Whisk baking powder, salt, black pepper, and paprika together in a small bowl. Place chicken wings in a large bowl. Sprinkle 1/2 of the baking powder mixture over wings and toss to coat. Sprinkle remaining baking powder mixture over wings and toss to coat again. Place wings onto the rack of the prepared baking sheet.
  • Bake in the preheated oven for 20 minutes. Turn wings and continue baking for 20 minutes. Turn wings again and bake until wings are browned and crispy, about 15 minutes more. Transfer wings to a large bowl.
  • Whisk honey, sriracha sauce, rice vinegar, and sesame oil together in a bowl until glaze is smooth. Drizzle glaze over wings and toss to coat completely. Transfer wings to a serving platter and sprinkle sesame seeds over the top.

12 fresh chicken wing drumettes
½ teaspoon salt
½ teaspoon garlic powder
1 tablespoon butter
¼ cup honey
2 teaspoons rice vinegar
1 tablespoon sriracha sauce

Steps:

  • Preheat an air fryer to 360 degrees F (182 degrees C).
  • Place chicken wings in a bowl and sprinkle with salt and garlic powder, tossing to coat.
  • Place wings in the air fryer basket. Set timer for 25 minutes and cook wings, shaking basket every 7 to 8 minutes. When timer ends, turn air fryer off and let wings stand in the basket for 5 minutes more.
  • Meanwhile, melt butter in a small saucepan over medium heat. Whisk honey, rice vinegar, and sriracha sauce into butter and bring to a boil. Reduce heat and simmer sauce over medium-low heat for 8 to 10 minutes, whisking occasionally. Turn off heat and set aside; sauce will thicken as it cools.
  • Toss cooked wings and sauce together in a bowl. Reserve extra sauce to serve alongside wings.

2 tablespoons Sriracha sauce
1 tablespoon vegetable oil
1/2 teaspoon salt
1/2 teaspoon freshly cracked pepper
3 lb chicken wing drummettes
1/2 cup Gold Medal™ all-purpose flour
1/4 cup honey
2 tablespoons apricot jam
2 tablespoons Sriracha sauce
1 tablespoon soy sauce
2 teaspoons fresh lime juice
3 cloves garlic, finely chopped

Steps:

  • Heat oven to 425°F. Line 2 cookie sheets with sides with heavy-duty foil; spray with cooking spray.
  • In 1-gallon resealable food-storage plastic bag, mix Sriracha sauce, oil, salt, pepper and drummettes. Seal bag; shake to coat. Add flour; seal bag, and shake until drummettes are coated with flour. Place drummettes on cookie sheets.
  • Bake uncovered 30 minutes; turn drummettes over, and rotate cookie sheets. Bake 20 to 30 minutes longer or until golden brown and juice of drummettes is clear when thickest part is cut to bone (at least 165°F).
  • Meanwhile, in 1-quart saucepan, mix Glaze ingredients; heat to simmering over medium heat, stirring frequently, until slightly thickened, about 5 minutes. Remove from heat; set aside.
  • In large bowl, toss drummettes with sauce. Serve warm.

1 tsp smoked paprika
1 tsp garlic granules
2 tbsp baking powder
1 tbsp cornflour
16 chicken wings (about 1.5kg)
2 tsp sesame seeds (optional)
1 tbsp cider vinegar
3 tbsp honey
4 tbsp sriracha

Steps:

  • Mix the paprika with the garlic granules, baking powder, cornflour, 1 tsp sea salt flakes and a good grinding of black pepper. Tip the chicken wings into a large bowl, scatter over half the seasoning mix and toss to coat. Scatter with the rest of the seasoning mix and toss again until completely coated. Cover the wings and keep chilled for at least 2 hrs, or up to 24 hrs.
  • Heat the oven to 230C/210C fan/gas 8 and line a large shallow roasting tin with baking parchment. Arrange the wings in a single layer, fleshy-side down, and roast for 20 mins, then turn over and roast for another 25-30 mins until the skin is blistered and crisp.
  • Meanwhile, whisk the glaze ingredients together in a small bowl until smooth. Remove the wings from the oven and brush liberally with the glaze, then scatter over the sesame seeds, if using. Roast for another 8-10 mins until the glaze is bubbling and starting to char a little. Serve straight from the roasting tin or pile onto a plate for everyone to dig in.
