HONEY WHOLE WHEAT ROLLS

Most of the farmers in our area grow wheat, so this recipe definitely represents my region. I bake these rolls often, especially when I'm making soup or stew. -Celecia Stoup, Hobart, Oklahoma

Number Of Ingredients 10

2 packages (1/4 ounce each) active dry yeast
1 cup warm water (110° to 115°)
1/4 cup butter, melted
1/4 cup honey
1 large egg, room temperature
3/4 cup whole wheat flour
1/2 cup old-fashioned oats
1 teaspoon salt
2-1/2 to 3 cups all-purpose flour
Additional melted butter, optional

Steps:

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine butter, honey, egg, whole wheat flour, oats, salt, yeast mixture and 1 cup all-purpose flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch down dough; shape into 15 balls. Place in a greased 13x9-in. pan. Cover with a kitchen towel; let rise in warm place until doubled, about 45 minutes. Preheat oven to 375°., Bake until golden brown, about 20 minutes. If desired, brush with additional butter. Serve warm.

2-1/2 to 2-3/4 cups all-purpose flour
3/4 cup whole wheat flour
1/2 cup old-fashioned oats
2 packages (1/4 ounce each) active dry yeast
1 teaspoon salt
1 cup water
1/4 cup honey
5 tablespoons butter, divided
1 large egg, room temperature

Steps:

  • In a large bowl, mix 1 cup all-purpose flour, whole wheat flour, oats, yeast and salt. In a small saucepan, heat water, honey and 4 tablespoons butter to 120°-130°. Add to dry ingredients; beat on medium speed 2 minutes. Add egg; beat on high 2 minutes. Stir in enough remaining all-purpose flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until doubled, about 1 hour. , Punch down dough. Turn onto a lightly floured surface; divide and shape into 24 balls. Place in a greased 13x9-in. baking pan. Cover with a kitchen towel; let rise in a warm place until doubled, about 30 minutes. , Preheat oven to 375°. Bake 20-22 minutes or until golden brown. Melt remaining butter; brush over rolls. These are great and simple Rolls from Southern Living Magazine. I do not claim to be a baker at all, but if I can make these anyone can and I always get rave reviews. The dough can also be used for yummy cinnamon rolls as well.Update: At one point I changed the recipe to canola oil instead of butter and added half whole wheat. Then a friend of mine made it and she substituted applesauce for the butter and she said it turned out great. I made it tonight with the applesauce and she was spot on!

1 cup quick-cooking oats
3 tablespoons margarine, canola oil or 3 tablespoons applesauce
4 1/2 teaspoons yeast

Steps:

  • Bring 2 cups water to a boil in a medium saucepan; stir in oats and butter.
  • Boil, stirring constantly, 1 minute.
  • Remove from heat; let cool to 110 degrees.
  • Stir together yeast, ½ cup warm water, and 1 T.
  • sugar in a 2-cup measuring cup; let stand 5 minutes.
  • Beat oat mixture, yeast mixture, flour, salt, and brown sugar at medium speed with an electric mixer until smooth.
  • Turn dough out onto a floured surface; knead till smooth and elastic (about 5 minutes) or knead in bread mixer with dough hook 2 to 3 minutes.
  • Place in a well-greased bowl, turning to grease top.
  • Cover and let rise in warm place (85 degrees) free from drafts, 1 hour or until double in bulk.
  • Punch down dough and divide in half; shape each portion into 8 balls. (Each pan will hold 8 rolls and you use 2 lightly greased round cake pans).
  • Place evenly into 2 lightly greased round cake pans.
  • Cover and let rise in warm place free from drafts, 30 minutes or until doubled in bulk.
  • Bake at 375 for 15 minutes or until golden brown.
  • Makes 16 rolls.

2 cups 7.5 ounces quick cooking oats (see note)
1/3 cup honey
4 tablespoons butter (cut into pieces)
2 1/2 teaspoons salt
2 1/2 cups boiling water
1 1/2 tablespoons instant yeast (see note for active dry yeast)
4 to 5 cups all-purpose flour
Melted butter (for brushing baked rolls (optional))

Steps:

  • In the bowl of a stand mixer fitted with the dough hook, combine the oats, honey, butter and salt. Add the boiling water and mix until combined. Let the oats soften and the mixture cool for 15-20 minutes until about 110 degrees (or lightly warm to the touch).
  • Add the yeast and 2 cups of the flour. Mix until combined. With the mixer on low speed, continue adding flour, 1/2 cup at a time, until a soft dough forms that clears the sides of the bowl but is still soft and tacky to the touch (be careful not to overflour!). The exact amount of flour will depend on many factors, so don't worry if you have to add more or less than called for to achieve the right texture for the dough. Knead the dough for 4-5 minutes until smooth and elastic.
  • Place the dough in a lightly greased bowl and cover with a clean towel or greased plastic wrap. Let the dough rise until doubled, about 1 to 1 1/2 hours, depending on the warmth of your kitchen.
  • Punch down the dough and divide into 12 equal pieces (see note). Shape each piece into a round ball, pinching the bottom to seal.
  • Grease a 9X13-inch baking pan and place the rolls in the pan. Cover and let the rolls rise until puffy and almost doubled in size, about an hour.
  • Preheat the oven to 350 degrees F. Bake the rolls for 20-25 minutes until golden on top and baked through. Brush with melted butter, if desired.

This is a nice change from your regular wheat bread. Made using a bread machine. Preparation time does not include time to rise.

1 1/4 cups water
2 tablespoons melted butter
2 tablespoons cider vinegar
2 tablespoons powdered milk
3 tablespoons honey
3 tablespoons sugar
2 teaspoons salt
2 2/3 cups bread flour
2/3 cup dark whole wheat flour
2/3 cup oatmeal
3 teaspoons yeast

Steps:

  • Note: You may decrease the amount of white flour and increase the wheat flour, but the bread will not rise as high.
  • Add ingredients in the order suggested by the manufacturer.
  • Set Cycle: Dough, Size: 2lb.
  • Spray two baking sheets with non-stick cooking spray, and preheat the oven to 375F.
  • When the cycle is finished, take the dough out and divide into 20 equal pieces (I use a scale).
  • Roll into ropes about 8 inches long, and tie as you would a knot, press the ends together and place end-side down on the baking sheet.
  • Allow to rise until doubled, about 30 minutes.
  • Brush with eggs or milk; eggs give a shiny, golden hard crust, milk gives a tender golden crust, water makes a light shine and crisp golden crust.
  • Or brush with honey for a sweet crust after baking.
  • Bake until well-browned, about 15 minutes.

2 cups warm water
1/2 cup honey
1 1/2 TBSP yeast
1 1/2 tsp salt
1/4 cup canola oil
1 egg, lightly beaten
2 cups whole wheat flour

Steps:

  • Place water, honey, yeast, salt, oil and egg into your mixer. Mix until egg is lightly beaten.
  • Add whole wheat flour and oatmeal and mix on medium 2 minutes. Start adding all-purpose flour slowly while mixer is running until the dough is soft but not sticky, and cleans the sides of the mixer. Mix additional 2-3 minutes.
  • Form dough into a large ball and place in a large bowl lightly coated with oil. Turn the dough to coat and let rise, covered, until doubled; approximately 1 hour.
  • Form into small balls and set on a prepared pan to rise again, covered, until doubled; approximately 30 minutes.
  • Bake at 350 for 15-20 minutes, or until lightly golden brown.

Lovely moist bread, flavoured with rolled oats and honey, with a bit of whole wheat flour as well. Makes great sandwich bread!

1 1/4 cups boiling water
3/4 cup large-flake rolled oats (plus more for coating)
1/2 tsp fine salt
2 Tbsp butter (or vegetable oil)
1/3 cup honey
1/4 cup lukewarm water
2 1/4 tsp active dry yeast
1/2 cup whole wheat flour ((or more all purpose flour))
2 1/2 - 3 cups all purpose flour (approximately)

Steps:

  • Boil some water and measure out 1 1/4 cups. Add to a large bowl or the bowl of a stand mixer. Add the rolled oats, salt and butter and stir to combine. Let stand 20 minutes, to soak and cool. *Be sure your mixture has cooled enough before you add your yeast to the bowl. If it's too hot, you will kill your yeast. Use a thermometer to test the temperature. It should be around 110F before you add the yeast. If you don't have a thermometer, let cool 5 minutes more and make sure it's just lukewarm.
  • Add the yeast to the lukewarm water. Stir and let stand 5 minutes.
  • Once the oat mixture is cooled enough, add the honey, proofed yeast mixture, whole wheat flour and the 1st cup of all purpose flour to the bowl. Mix to combine with the kneading hook. With the mixer running, begin adding the 2nd cup of flour in small increments, letting it mix in before adding more. Continue adding this cup and additional flour, if needed, until you have a quite moist dough, but one that wraps around the hook and cleans the bowl in spots. It may still have a sticky bit at the bottom of the bowl. That is ok. Remove the dough to a floured surface and knead a few minutes, adding a bit of flour as needed, to prevent it from sticking to your hands or the work surface. Form into a ball. Place into a greased bowl. Cover with plastic wrap and let rise until doubled, about 1 hour.
  • Grease an 8x4-inch loaf pan and set aside.
  • Remove dough to a lightly floured surface and gently deflate it by pressing down on it with your palms. Form the dough into a rough oval, about as long as your loaf pan (set your loaf pan next to your work area to judge the length). Flip the dough over and pinch in from the sides to the centre of the dough, pinching a seam down the middle. Pinch in the ends, as well. Flip it back over, right side up. Scatter some rolled oats on your work surface. Lightly brush your dough with water (not too much - just a light coating), then roll it over the oats, rolling to cover top, sides and bottom. Place dough into your prepared loaf pan. Spray a piece of plastic wrap with cooking spray and cover the top of the pan tightly. Allow to rise until doubled again, about 45-60 minutes.
  • Preheat oven to 350F.
  • When dough is ready, remove plastic wrap and bake in preheated oven for about 45 minutes, or until the loaf tests at least 200F with an instant read thermometer. If you don't have a thermometer, insert a tester in the side and into the centre. It should come out clean and dry. If in doubt, leave it in the oven a few extra minutes, as you probably won't hurt it. *It is unlikely that your loaf will over-brown, but check it after about 35 minutes and if it looks like it may over-brown, lay a sheet of aluminum foil loosely over-top for the last part of baking.
  • Remove loaf from oven and immediately remove from pan to a cooling rack to cool completely before slicing.

Honey Oat Bread recipe made with part whole wheat flour, honey, milk and oats. It's one of my favorite homemade bread recipes!

3 cups all-purpose flour (can use half whole wheat flour)
3/4 cups oats (either instant or old fashioned)
1 TBSP instant yeast
1 1/2 teaspoons salt
1 cup milk
1/4 cup lukewarm water
2 tablespoons butter
1/4 cup honey
1 1/2 to 2 tablespoons honey (warmed)
1 1/2 to 2 tablespoons oats

Steps:

  • In a large bowl, or the bowl of a standing mixer, combine the flour, oats, yeast, and salt.
  • In a small bowl, or a two cup measuring cup, warm the milk so that it's hot enough to melt the butter, but not boiling. Add the butter, stirring until melted, then stir in the water and honey.
  • Pour the milk mixture into the flour mixture, mixing with a dough hook until it just comes together to form a dough. Knead in the mixer, with the dough hook attachment, for 7-10 minutes, until the dough is smooth and elastic (if you're making this recipe by hand, the dough will be very sticky at first; flour your hands and work surface generously and be patient). If the dough is still very wet and sticky after 5 minutes of kneading, add more flour, 1 tablespoon at a time, until the dough is barely tacky. If the dough is too dry, add water, 1 teaspoon (5 ml) at a time, to soften it up.
  • Place the dough in a lightly oiled bowl, cover, and allow to rise until doubled, about 1/2 to 1 hour.
  • Once doubled, place the dough on a clean, dry work surface. If the dough is too sticky, lightly flour the surface before continuing. With your fingers, flatten the dough into a 9 by 12-inch rectangle. Tightly roll the dough, tucking the ends as needed, into a loaf. Place the shaped dough into a 9×5-inch loaf pan and brush the top with the warmed honey and sprinkle with the oats. Allow loaf to rise in a slightly warm location until doubled, about 1/2 hour. (It's winter so I find my bread rises best in the oven- I turn the oven on 350 for a minute or two, then turn it off. Place loaf on the oven rack with the light on. You can see my set-up in the picture below.)
  • When dough has doubled, preheat oven to 350 degrees (180 C). (I just leave the dough in the oven while preheating.) Bake for 40 to 50 minutes, until the bread is deep golden brown and the internal temperature is about 190 degrees. Transfer to a wire cooling rack and allow to cool completely before serving.
