This is a homemade apple pie that uses cinnamon, a butter substitute, and honey (instead of refined sugars), for a healthier alternative to your traditional apple pie.

1 (14.1 ounce) package 9-inch refrigerated pie crusts
5 tablespoons apple butter
½ cup honey
2 ½ tablespoons water
2 tablespoons all-purpose flour
1 tablespoon ground cinnamon
5 medium Granny Smith apples - peeled, cored and sliced

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Bring pie crusts to room temperature, about 15 minutes.
  • Heat apple butter in a saucepan over medium heat. Stir in honey, water, flour, and cinnamon; bring to a boil. Reduce heat to low and let simmer while you prepare the pie.
  • Place one crust in the bottom of your pan and fill with apples, mounded slightly. Cut the second crust into strips; set aside.
  • Gently pour the honey mixture over the apples. Cover with the strips to form a lattice-style crust. Brush any remaining honey mixture on the crust.
  • Bake in the preheated oven for 15 minutes. Reduce temperature to 350 degrees F (175 degrees C) and continue baking until apples are soft and crust is golden brown, about 40 minutes more.

Pratie is Irish for potato. This dish has the comfort of traditional apple pie with a light honey sweetness, not overpowering. I have not had a lot of luck with making pie crusts, so when I came across this Irish recipe I was eager to try it. Its chewy and similar to a cobbler topping in texture.

1 cup mashed potatoes, cooled
1 cup all-purpose flour
1/4 cup sugar
1/2 teaspoon baking powder
3 large green apples
1/4 teaspoon ground cinnamon
2 tablespoons honey (for glazing)
1 tablespoon sugar

Steps:

  • Preheat oven to 375°F.
  • Place mashed potato in a bowl.
  • Sift the flour, sugar and baking powder over potato mash.
  • Mix to form a stiff dough.
  • Refrigerate this pastry for 30 minutes.
  • Meanwhile: Peel and core apples, cut them into 1/2 inch slices, cover with water to prevent browning while rolling out pastry.
  • Lightly grease an 8 inch pie plate.
  • Divide pastry in half.
  • Roll out one half to fit base of pie plate.
  • Drain and pat dry apple slices,arrange them over pastry base and sprinkle with cinnamon and drizzle with honey.
  • Roll out remaining half of pastry to cover top of pie.
  • Trim edges.
  • Cut three deep slits into pastry for steam vents.
  • Glaze with water and sprinkle sugar.
  • Bake 30-40 minutes or until golden.
  • Serve immediately.
  • Whipped cream or even vanilla ice cream is a perfect accompaniment.

2 cups crisp dry white wine (such as dry Riesling or sauvignon blanc)
1 cup water
1/2 cup granulated sugar
1/2 cup honey (any kind)
2 wide strips lemon zest
1 vanilla bean, split lengthwise and seeds scraped (or 2 teaspoons pure vanilla extract)
2 Granny Smith apples, peeled and cut into 1/2-inch wedges
1 cup extra-virgin olive oil, plus more for the pan
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup granulated sugar
2 tablespoons finely grated lemon zest plus 2 tablespoons lemon juice (from about 2 lemons)
1/4 cup honey (any kind)
1 1/2 teaspoons pure vanilla extract
3 large eggs
Confectioners' sugar, for serving

Steps:

  • Prepare the apples: Combine the wine, water, granulated sugar, honey, lemon zest and vanilla bean and seeds in a wide medium saucepan. Bring to a boil, then reduce to a steady simmer and cook, stirring to dissolve the sugar, about 5 minutes. Add the apples, stir to combine and simmer until tender, 10 to 12 minutes. Carefully remove the apples with a slotted spoon to a large plate or small rimmed baking sheet. Continue to rapidly simmer the syrup until slightly thickened and reduced to about 1 cup, 10 to 12 minutes. Remove from the heat and let cool to room temperature. Remove the vanilla bean. Transfer the apples and syrup to a shallow bowl and refrigerate until cold.
  • Meanwhile, make the cake: Preheat the oven to 325˚ F. Brush a 9-inch round cake pan with olive oil; line the bottom with parchment paper and brush the parchment with olive oil. Whisk the flour, baking powder and salt in a medium bowl. Put the granulated sugar and lemon zest in a large bowl and beat with a mixer on medium-high speed until fully combined, about 1 minute. Add the olive oil and beat until combined, about 1 minute. Beat in the lemon juice, honey and vanilla extract. Add the eggs, one at a time, beating well after each addition. Reduce the mixer speed to low; beat in the flour mixture in two additions until smooth.
  • Pour the batter into the pan and tap against the counter once or twice to remove any air bubbles. Bake until the top of the cake is golden brown and the center springs back when gently pressed, 35 to 40 minutes. Transfer to a rack and let cool 15 minutes in the pan, then turn out the cake onto the rack, remove the parchment and let cool completely.
  • Transfer the cake to a platter and dust with confectioners' sugar. Cut into wedges and serve with the apples and syrup.

1/2 teaspoon salt
1 stick cold unsalted butter, cut into small pieces

2 teaspoons apple cider vinegar
6 assorted apples, such as Golden Delicious, Fuji and Honeycrisp (1 3/4 to 2 pounds)
1 to 1 3/4 cups water
1/2 cup plus 2 teaspoons buckwheat honey
1 tablespoon sugar
1 1/2 cups heavy cream
2 large eggs, lightly beaten
2 teaspoons pure vanilla extract
1/4 teaspoon salt

Steps:

  • Make the crust: Whisk the flour, sugar and salt in a medium bowl. Add the butter and work it into the flour with your fingers until it is in small bean-size pieces. Drizzle in 3 tablespoons ice water and the vinegar and stir to moisten. Gradually add up to 2 more tablespoons ice water until the dough holds together when squeezed. Transfer to a sheet of plastic wrap, gather into a disk and wrap tightly. Refrigerate for at least 2 hours or overnight.
  • Meanwhile, prepare the filling: Peel and chop the apples. Put half of the apples in a blender with 1 cup water and puree until smooth. Gradually add the remaining apples and blend until smooth, adding more water 1/4 cup at a time as needed.
  • Pour the apple mixture into a large nonstick skillet and bring to a simmer over medium heat. Reduce the heat to medium low and simmer, stirring, until very thick and reduced to about 1 1/2 cups, 1 hour 15 minutes to 1 1/2 hours. Let cool.
  • Preheat the oven to 400˚ F. Roll out the pie dough on a lightly floured surface into a 12-inch round. Ease into a 9-inch pie plate. Fold the overhanging dough under itself and crimp the edge. Prick the bottom and sides of the crust with a fork and refrigerate until firm, about 20 minutes. Line the crust with parchment paper or foil and fill with pie weights or dried beans. Bake until the edges of the crust are dry and lightly browned, 15 to 20 minutes. Carefully remove the weights and paper and continue to bake until the bottom of the crust is dry and just starting to brown, 10 to 15 minutes. Transfer to a rack to cool. Reduce the oven temperature to 350˚ F.
  • Return the apple mixture to the blender along with 1/2 cup honey and the sugar; puree until combined. Add 3/4 cup heavy cream, the eggs, vanilla and salt and pulse until just combined.
  • Pour the mixture into the crust and bake until the filling is puffed and dry to the touch, 1 hour to 1 hour 15 minutes (tent the crust with foil if it is getting too dark). Turn off the oven and let the pie sit inside with the door cracked open, 5 to 10 minutes. Transfer to a rack to cool completely.
  • Make the topping: Beat the remaining 3/4 cup heavy cream and 2 teaspoons honey in a large bowl with a mixer until medium peaks form, 2 to 3 minutes. Spread on the pie.

3 Golden Delicious apples, peeled and cored (about 1 1/4 pounds)
4 Granny Smith apples, peeled and cored (about 1 1/2 pounds)

6 thyme branches
1/4 cup unsalted butter (1/2 stick), cut into small pieces
2 tablespoons instant tapioca
1/3 cup light brown sugar
1/2 teaspoon ground ginger
1/4 teaspoon salt
Flour, for dusting
Dough for 2 9-inch pie crusts (see recipe)

Steps:

  • Preheat oven to 425 degrees. Slice Golden Delicious apples and 3 Granny Smith apples into sixths.
  • In a large skillet over medium-high heat, bring 1/4 cup honey to a boil. Let simmer about 2 minutes, until honey is caramelized. Add 3 thyme branches. Arrange half the apples in a single layer in skillet. Sprinkle 2 tablespoons butter over apples. Cook apples, turning, until well caramelized on all sides (but not cooked through), about 10 minutes. Scrape apples and honey mixture into a bowl. Add tapioca and toss to combine. Repeat cooking process with remaining honey, thyme, butter and sliced apples. Add second batch of apples to bowl; combine. Discard all thyme branches.
  • Thinly slice remaining Granny Smith apple and add it to bowl. Stir in sugar, ginger and salt.
  • On a lightly floured surface, roll out both crusts to 12-inch circles. Place one crust in 9-inch pie plate. Scrape apple filling into crust and top with remaining crust. Pinch edges to seal. With a knife, slice 4 vents in top of crust. Place pie on a foil-lined, rimmed baking sheet.
  • Bake for 15 minutes; reduce heat to 350 degrees and continue baking until crust is dark golden and apples are tender when pricked with a fork, about 45 minutes more. Let cool for 30 minutes before slicing.

½ cup strong brewed coffee

Like a pie but with only one crust, like a galette but thicker, this deep-dish number is the best of all worlds. The buttery crust (made by hand for flakiest results) dramatically envelopes apples that are sweetened mostly with honey. A splash of vinegar is added for acidity, and, of course, there's a little cinnamon (if you like). Truthfully, any apple is good here, but the tart baking varieties tend to hold their shape and give a bit more structure to the finished dish. Bake in a 9-inch springform pan for tall, festive sides, or a deep-dish 9-inch pie plate for a more rustic feel.

1 1/2 teaspoon kosher salt

Steps:

  • Make the crust: Combine flour, sugar and kosher salt in a large bowl, and use your hands to mix well.
  • Add the butter to the bowl, and use your palms and fingertips to smash the pieces into the flour until you've got large, flat butter pieces that are evenly distributed among the flour. Pop the bowl into the freezer for 5 or so minutes.
  • Combine vinegar and 1/3 cup water, and drizzle over the flour-butter mixture. Like you're running your hands through sand, deliberately yet delicately mix the water into the flour/butter mixture. Resist the urge to add more water until you see that it's absolutely necessary, and even then, use only an additional tablespoon or two.
  • Turn the dough out onto a work surface, and use your palms to knead it lightly until the shaggy ball transforms into a slightly-less shaggy ball of dough. (It should still be relatively shaggy.) Pat the dough into a disc about 1 inch thick, rotating it to create a nice circle. Wrap in plastic or place in a resealable plastic bag and chill until firm, at least 2 hours.
  • Heat the oven to 375 degrees. Remove dough from refrigerator, and let it soften slightly at room temperature, about 10 minutes or so.
  • As dough rests, make the filling: Combine apples, honey, 1/2 cup sugar, the flour, the vinegar and the cinnamon in a large bowl. Toss the ingredients so every slice of apple is evenly coated.
  • On a lightly floured work surface, roll the dough into a circle about 18 inches in diameter. Transfer dough to a lightly greased 9-inch springform pan, or a 9-inch deep-dish pie plate, letting it slump to meet the bottom of the pan and letting the overhang remain.
  • Transfer the apple mixture and any juices that have accumulated to the crust. Drape the excess dough over the filling, covering the apples by about 1 1/2 to 2 inches. (Feel free to trim any dough that feels truly excessive.)
  • Whisk the egg with a teaspoon of water and use it to brush the exposed crust. Sprinkle with sesame seeds, if using, the remaining 2 tablespoons of sugar and a little flaky salt.
  • Place galette on a rimmed baking sheet (for easy cleanup should anything bubble over) and bake until the crust is deeply golden brown (about the color of a well-baked croissant), the apples are tender, and the juices are bubbling and thickened, 65 to 75 minutes.
  • Remove galette from the oven and let cool completely (at least 2 hours) before slicing and eating, preferably with lots of ice cream.

2 small Honeycrisp apples, cored and thinly sliced
¼ cup honey
Kosher salt and freshly ground black pepper
6 sheets frozen phyllo dough, thawed and trimmed into 12-inch squares
1 (16-ounce) wheel Brie cheese

Steps:

  • Preheat the oven to 400°F. Line a half sheet pan with parchment paper.
  • In a medium skillet, heat 2 tablespoons of the butter over medium heat. Add the apples and cook, stirring often, until softened and lightly caramelized, 10 to 12 minutes. Transfer the apples to a bowl and toss with the honey. Season with salt and pepper.In a small saucepan, melt the remaining 6 tablespoons butter. On the prepared sheet pan, lay out 1 sheet of the phyllo dough and lightly brush it with melted butter to coat. Lay another sheet of phyllo on top, brush with butter, and repeat this process until you've layered all 6 sheets of phyllo. Place the Brie in the center and top it with the apple mixture. Fold the corners of the phyllo sheets toward the center of the Brie, overlapping them to seal, then brush with any remaining melted butter.
  • In a small saucepan, melt the remaining 6 tablespoons butter. On the prepared sheet pan, lay out 1 sheet of the phyllo dough and lightly brush it with melted butter to coat. Lay another sheet of phyllo on top, brush with butter, and repeat this process until you've layered all 6 sheets of phyllo.
  • Place the Brie in the center and top it with the apple mixture. Fold the corners of the phyllo sheets toward the center of the Brie, overlapping them to seal, then brush with any remaining melted butter.
  • Bake, rotating the pan halfway through, for 20 to 25 minutes, until golden brown and crisp. Transfer to a platter and serve immediately.
