- In a shallow bowl, combine the first five ingredients. In another bowl, whisk eggs. Dip fillets in eggs, then coat with crumb mixture. Dip again in eggs and crumb mixture., In a large skillet over medium-high heat, cook fillets in batches in 2 tablespoons oil for 2-3 minutes on each side or until fish flakes easily with a fork, adding oil as needed.

- Place butter in a shallow bowl. In another shallow bowl, combine the bread crumbs, cheese and seasonings. Dip fish in butter, then coat with crumb mixture. , Place in a greased 15x10x1-in. baking pan. Bake, uncovered, at 350° for 20 minutes or until fish flakes easily with a fork.

HOOSIER FRIED MUSHROOMS
Every spring the morel mushrooms pop out in woods of the midwest seemingly overnight. Half the fun is finding them, but once you have a batch, the real fun is eating them. I'm a morel purist and the best way to eat them is to flour them and fry them. Adding them to anything else just dilutes the flavor that is the morel mushroom delicacy.

- If your mushrooms are wild found - then they should be cleaned and soaked in salt water overnight to make sure there isn't anything else in them. Should you have to buy them from a vendor then just rinse and drain them.
- Mix the seasonings into the flour and set up a suitable work area for frying - mushrooms on one side, flour in the middle and an empty plate to set them on next to the skillet.
- Add vegetable oil to a skillet 1/4 inch deep and turn on medium high to preheat while you flour.
- Hand dip each mushroom half into the flour and set on the empty plate.
- Once they are all floured and the oil is hot, carefully add to the skillet one at a time and fry for 4 or 5 minutes on each side unit golden brown.
- Remove from the skillet and set on a clean plate to drain and cool and enjoy. The only way I know to describe a fresh fried morel is that it tastes like a little bit of heaven.
- If you do go out in the woods to find your morels - make sure you know exactly what you are looking for or consult an expert first.

HOOSIER FARM FRIED CHICKEN

- Wash chicken, trim loose parts and fat off.
- In a medium size bowl, beat the egg with the water. Put flour into 1 gallon zip lock bag. Season the flour with the house seasoning. Dip the chicken in the egg, and then coat well in the flour mixture.
- Heat the oil to 350 degrees F in a deep pot or cast iron Dutch Oven. Do not fill the pot more than 1/2 full with oil. To save cook time, partially precook chicken in 350 F oven for 20 minutes before "wash & flour".
- Fry the chicken in the oil until brown and crisp. Dark meat takes longer then white meat. It should take dark meat about 13 to 14 minutes, white meat around 8 to 10 minutes.

DEEP FRIED BLUEGILL OR CRAPPIE

- Put milk, egg, salt and pepper in blender, turn on low speed to combine. Slowly add flour and blend until batter is smooth. Pour batter into a bowl. Combine cracker and corn flake crumbs in a separate bowl. Rinse fillets in cold water, drain, pat dry with paper towels. Dip fillets in batter, coat with crumbs. Deep fry at 370-375 degrees until fillets are floating and golden brown (3 or 4 minutes). Do not over load deep fryer. Turn fillets a couple of times as they rise to the top. Remove to a rack to drain. Place on paper towels in a single layer.
