1/2 pound sliced bacon, cut into 1-inch pieces
1 small green or sweet red pepper, chopped
2 celery ribs, chopped
6 green onions, sliced
1 cup uncooked long-grain rice
2 cups water
1/4 teaspoon salt
1/2 to 1 teaspoon cayenne pepper
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1 bay leaf
1 can (15 ounces) black-eyed peas, rinsed and drained

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Drain on paper towels; discard all but 2 tablespoons drippings. Saute pepper, celery and onions in drippings until almost tender. Add rice, water and seasonings. Cover and simmer 10 minutes. Add peas and bacon; simmer 10 minutes longer. Discard bay leaf.

Heat 2 tablespoons butter in a large skillet; add the scallion whites, 2 ounces diced smoked ham, 1 diced celery stalk, 1/2 diced green bell pepper, and salt; cook, stirring, 6 minutes. Add 2 minced garlic cloves and a pinch of cayenne; cook 1 minute. Add 10 ounces thawed frozen black-eyed peas and 1 cup chicken broth; simmer 8 minutes. Stir in the scallion greens. Serve over rice if using.

2 garlic cloves, minced
2 tablespoons butter or 2 tablespoons margarine, melted
2 (16 ounce) cans black-eyed peas, drained and rinsed
2 cups chicken bouillon or 2 cups chicken broth
1 cup uncooked rice
1 teaspoon salt
crushed red pepper flakes

Steps:

  • Saute onion and garlic in butter until onion is tender.
  • Stir in black-eyed peas, chicken bouillon, rice, salt, and 1/2 teaspoon crushed red pepper.
  • Bring mixture to a boil; cover and simmer 20 minutes or until liquid is absorbed and rice is tender.
  • Serve with additional crushed red pepper.

  • Add rice; mix well. Add broth and hot pepper sauce; bring to a boil over high heat. Stir in black-eyed peas. Cover; reduce heat and simmer 10 minutes or until most of liquid is absorbed. Stir in tomato; heat through.
  • Remove from heat; stir in 1 cup cheese. Transfer to 4 serving plates; top with remaining cheese and parsley.

A traditional New Year's Day dish... legend has it that eating Black Eyed Peas on New Years Day brings good luck. After reviewing several cookbook recipes full of salt and fat I came up with a somewhat healthier version by cutting back on amount of sausage and using liquid smoke to "fool the tastebuds" Ground Chicken or Turkey Sausage will work as well. Seasonings can all be adjusted to personal preference. Place in covered skillet and simmer on low until heated through and spices lend their flavor to the dish. I have put this in a crock pot to heat and serve later. Serves 2 really hearty appetites or 4 smaller portions.

1 (15 ounce) can black-eyed peas, drained and rinsed
1 (15 ounce) can chopped tomatoes, with liquid
3 teaspoons olive oil
1 medium green pepper, diced
1 small onion, diced
1/2 lb breakfast sausage
1/2 teaspoon liquid smoke
1/4 teaspoon ground sage
1/8 teaspoon garlic powder
1 bay leaf
1 dash salt
1 dash cayenne pepper
1 cup cooked brown rice
hot sauce (optional)

Steps:

  • Brown sausage or ground meat in skillet until no longer pink. Drain & set aside.
  • In small skillet saute green pepper and onion, in olive oil until slightly tender. Add tomatoes and spices along with bay leaf.
  • Stir in browned sausage and black eye peas.
  • Cover and simmer on low 45 minutes ,stirring occasionally.
  • Serve with a scoop of cooked brown rice with a dash of hot sauce.

1/4 teaspoon garlic powder

2/3 cup canned black-eyed peas, rinsed and drained
2/3 cup cooked rice

Steps:

  • In a small skillet, saute the peppers, onion, garlic powder and salt in butter for 4-5 minutes or until vegetables are tender. Stir in the peas and rice; heat through, stirring occasionally.

  • Cook bacon in a Dutch oven over medium-high, stirring occasionally, until starting to crisp, about 10 minutes. Add celery, onion, bell pepper, garlic, thyme, black pepper, cayenne, and 1 teaspoon of the salt. Cook, stirring occasionally, until onion is tender, about 8 minutes. Add broth and black-eyed peas and bring to a boil over medium-high. Reduce heat to medium-low, and simmer until peas are tender, about 40 minutes. Drain pea mixture, reserving cooking liquid. Return pea mixture and 1 cup of the cooking liquid to Dutch oven. Cover to keep warm; set aside.
  • Heat oil in a medium saucepan over medium-high. Add rice and cook, stirring often, until fragrant and lightly toasted, 3 to 4 minutes. Stir in 3 cups of the reserved cooking liquid and remaining 1⁄2 teaspoon salt. Bring to a boil, and reduce heat to medium-low; cover and cook until rice is tender, 15 to 18 minutes. Fluff rice with a fork, and gently stir into pea mixture in Dutch oven. Stir in remaining cooking liquid, 1⁄4 cup at a time, until desired consistency is reached. Sprinkle servings with sliced fresh scallions.
