Horchata (cinnamon rice milk) has been a favorite addition to the many Mexican meals I've had in the Bay Area. It's lightly sweet and refreshing. This is a much easier recipe than the traditional method which requires up to 3 hours to make.

1 cup water
½ cup white sugar
¼ teaspoon ground cinnamon
2 quarts rice milk

Steps:

  • Heat water, sugar, and cinnamon in a saucepan over medium heat. Simmer until sugar is dissolved, whisking occasionally, about 5 minutes. Allow mixture to cool for 10 minutes.
  • Pour rice milk into a large pitcher.
  • Stir sugar water into rice milk. Serve chilled or over ice.

Horchata is a deliciously creamy Mexican rice milk with blended cinnamon, vanilla, and sweetener. It's the perfect refreshing beverage to enjoy on a hot summer day.

2 cups uncooked white rice
2 teaspoons ground cinnamon
2 cups hot water
2 teaspoons vanilla extract
2 tablespoons white sugar ((Note 1))
1 teaspoon ground cinnamon
3 cups cold water

Steps:

  • Soak Rice: Blend rice and cinnamon until powdered (Note 2). Add hot water to blender on top of rice powder, and blend again. Cover and refrigerate overnight.
  • Strain: Blend chilled mixture, then strain a few times until liquid runs clean (Note 3).
  • Add Remaining Ingredients: Combine strained mixture with vanilla, sugar, cinnamon, and cold water in large pitcher (Note 4). Shake well.
  • Chill & Serve: Refrigerate for a few hours to chill drink prior to serving. Serve over ice cubes (Note 5).

Recently had homemade rice milk in a Mexican restaurant in San Francisco. I talked to a few friends and they told me a few different ways to make it. Here is a simple version (I like to add vanilla, but it is optional). Seriously, it is the best ever - and, it costs just pennies to make!

1 cup long grain rice, rinsed
2 quarts water
1 cinnamon stick, broken into pieces
1 teaspoon vanilla
½ cup white sugar

Steps:

  • In a large saucepan, combine rice, water and cinnamon stick. Set aside for 3 hours.
  • After 3 hours, bring to a boil, reduce heat, and simmer for 30 minutes. Allow to cool.
  • Puree rice mixture in a blender until smooth. Strain through cheesecloth or a fine sieve. Flavor with vanilla and sugar to taste. Chill, and serve over ice.

6 cups unsweetened rice milk
1/2 cup sugar
1 1/2 teaspoon ground cinnamon
1 vanilla bean or vanilla extract
4 cinnamon sticks for garnish

Steps:

  • Place the rice milk, sugar, and ground cinnamon into a blender.
  • If you use a vanilla bean, cut it half lengthwise and scrape the seeds into the mix. Otherwise, if you use vanilla extract, add it to the milk.
  • Blend until the sugar is dissolved.
  • Pour into tall glasses filled with ice and garnish with cinnamon sticks for stirring.

2/3 cup Uncooked rice
3 cups Vanilla Island brewed tea
1/2 tsp Cinnamon
1/3 cup Sugar
3 cups Cold water

Steps:

  • Brew Vanilla Island tea slightly stronger than directed and let cool to room temperature. Pour uncooked rice into cooled tea, cover and soak in fridge overnight.
  • The next day, pour rice mixture into a saucepan and warm on medium heat for about 5 minutes to soften the rice.
  • Add cinnamon to rice mixture and puree in blender. Strain with a fine mesh strainer or cheesecloth.
  • Stir in sugar and cold water, then mix well. Chill before serving or pour over ice. Serves 4-6.
