ASPARAGUS SPEARS-APPETIZER/HORS D'OEUVRES
Can be a bit messy to make, but well worth the effort. Never have made these and not wished I had more to serve. They really do go quickly

Steps:
- Cut bacon in half strips.
- Fry in a pan until just beneath Crisp Not to limp.
- Lay on paper towels to degrease the Bacon.
- Cut Asparagus into 5/6 inch lengths. Pick thin Stems not thick. Steam the Asparagus in a Steamer until Tender.
- Cut cheese into thin strips about 5x1/2 inches long.
- Melt Butter.
- White bread. Cut off the crust, and roll out thinly with a rolling pin.
- Lay Asparagus, bacon and cheese on a diagonal into the bread.
- Roll the bread upward and seal with butter.
- spread Butter on top so to brown.
- Put into Broiler until Bread is Browned.
- Serve.
ASPARAGUS APPETIZERS
A wonderful appetizer to have on hand that can be made ahead of time, frozen, and used as needed.

Steps:
- Trim crusts from bread, and flatten slightly with a rolling pin.
- In a bowl, stir blue and cream cheeses together with the egg until well blended and creamy. Spread a thin layer of cheese mixture over each slice of bread. Roll one asparagus spear inside each, and fasten with a toothpick.
- Melt butter in a small saucepan. Roll each asparagus wrap in butter to coat. Place on a baking sheet small enough to fit into the freezer, and freeze for one hour, or until butter hardens and wraps are somewhat firm. Remove pan from freezer, discard toothpicks, and cut each wrap in half crosswise. Store in a resealable plastic bag in the freezer until ready to use.
- To serve, preheat oven to 400 degrees F (205 degrees C).
- Arrange frozen asparagus wraps on an ungreased baking sheet. Bake in the preheated oven for 25 minutes, or until lightly browned. Check occasionally, and turn if necessary, for even browning and to prevent burning. Enjoy!

Try doubling or tripling the recipe as hors d'oeuvres for a cocktail party. The asparagus can be roasted ahead of time and refrigerated. Serve at room temperature.

- Preheat oven to 425 degrees F. Line baking sheet with aluminum foil.
- On baking sheet, drizzle oil over trimmed asparagus. Season with salt and pepper, to taste. Toss together to evenly distribute oil and seasoning. Roast in oven for 8 to 10 minutes depending on the size of the asparagus. While asparagus is roasting, prepare mayonnaise.
- Process 2 tablespoons of cashews in a blender until finely ground. In a small bowl, stir to combine ground cashews, mayonnaise, curry powder, lemon juice, and salt. Set aside.
- To serve, divide asparagus among 4 plates and top with a dollop of mayonnaise mixture. Garnish with a few chopped cashews.

- For Quesadillas:
- Preheat oven to 500°F.
- In a large shallow baking pan, toss asparagus with 1 1/2 teaspoons oil and salt and pepper to taste until coated well. In another large shallow baking pan, toss onion with 1 1/2 teaspoons oil until coated well. Roast vegetables in upper and lower thirds of oven, shaking pans occasionally and switching position of pans in oven halfway through baking, until tender and lightly browned, about 10 minutes. Cool vegetables and cut asparagus into 1/2-inch-thick slices.
- Preheat broiler.
- Grease a large baking sheet. On sheet, arrange 4 tortillas in one layer and divide vegetables, pepper Jack, and coriander among them. Cover quesadillas with remaining 4 tortillas.
- Brush top tortillas with remaining 2 tablespoons oil and broil quesadillas about 3 inches from heat until golden brown, about 2 minutes. With a metal spatula, turn quesadillas over and broil until golden brown, about 2 minutes.
- Make cumin lime cream while quesadillas broil.
- For Cumin Lime Cream:
- In a small bowl, whisk together well cream ingredients.
- Cut quesadillas into wedges and serve with cumin lime cream.
ASPARAGUS FLAN
Seasonal asparagus brings a delicately bright flavor to these elegant custard hors d'oeuvres from chef Pierre Schaedelin.

- Preheat oven to 375 degrees.
- Cut 1 1/2 inches from the tip of the asparagus; set 16 pieces aside. Cut asparagus stalks in half crosswise. Cut the bottom halves into 1/2-inch pieces and set aside; you should have about 2 cups. Halve remaining half crosswise and chops; you should have about 1 cup. Set aside separately.
- Prepare an ice-water bath and set aside. Heat olive oil in a medium saucepan over medium-high heat. Add coarsely chopped asparagus bottoms and season with salt; cook for 1 minute. Add 1 cup water and continue cooking until water is almost completely evaporated, 3 to 5 minutes. Add milk, cream, and spinach; cook until spinach is wilted, about 2 minutes.
- Transfer asparagus mixture to a bowl and set in ice-water bath; let cool completely. Transfer to the jar of a blender or the bowl of a food processor; blend until smooth. Add eggs and yolk; season with salt and blend until combined.
- Set 16 1/4-cup heatproof glass bowls in a roasting pan; divide asparagus mixture evenly between bowls. Set roasting pan on oven rack and carefully add enough hot water to roasting pan to come halfway up the sides of the bowls. Cover with parchment-paper-lined aluminum foil and bake until asparagus mixture is set, about 18 minutes. Remove flans from roasting pan and transfer to refrigerator until chilled.
- Meanwhile, bring a medium pot of water to a boil over high heat. Prepare an ice-water bath and set aside. Add reserved asparagus tips to boiling water and cook until tender-crisp, about 3 minutes. Using a slotted spoon, transfer to ice-water bath to cool. Remove from water bath and pat dry; halve tips lengthwise and transfer to a small bowl; set aside. Add finely chopped asparagus to boiling water; cook until bright green in color, about 3 minutes. Drain and transfer to ice-water bath to cool. Drain and transfer to a medium bowl; set aside.
- Bring another medium pot of water to a boil; add white vinegar. Prepare an ice-water bath and set aside. Carefully crack quail eggs into a large bowl, taking care not to break the yolks. Using a spoon, stir boiling water to create a swirling motion and carefully add eggs to water. Cook until whites are set, about 1 1/2 minutes. Drain and transfer eggs to ice-water bath to cool. Trim whites using kitchen shears so that you have 16 individual poached quail eggs; season with salt.
- When flans have chilled, drizzle asparagus tips and finely chopped asparagus with olive oil and 1/2 teaspoon sherry vinegar each; season with salt and pepper and stir to combine. Divide finely chopped asparagus evenly among flans. Top each with a quail egg and two asparagus spears. Using kitchen shears, snip each quail egg to expose yolks; serve.
