10 cups torn leaf lettuce
6 cups torn fresh spinach
2 green onions, sliced
1/4 cup cider vinegar
2 tablespoons water
2 tablespoons canola oil
2 teaspoons sugar
4 turkey bacon strips, cooked and crumbled

Steps:

  • In a large salad bowl, toss the lettuce, spinach and onions; set aside. In a small saucepan, bring the vinegar, water, oil and sugar to a boil. Pour over lettuce and toss; sprinkle with bacon.

3 tablespoons extra-virgin olive oil
4 slices thick-cut bacon or 4 slices pancetta, chopped
3 shallots, thinly sliced
2 cloves garlic, chopped
3 tablespoons sherry vinegar
2 pounds triple washed spinach, stems removed
Salt and freshly ground black pepper
Freshly grated nutmeg, to taste
4 hard-boiled eggs, quartered lengthwise
Parmigiano-Reggiano, for topping

Steps:

  • Heat the olive oil in large skillet over medium-high heat. Once hot, add bacon to skillet and brown, reserve the crispy bacon bits and add the shallots and garlic to the pan. Cook 3 to 4 minutes then deglaze the pan with vinegar, turn spinach into pan and wilt down a bit but do not fully cook the spinach, just give it a few turns with tongs. Season the greens with salt, pepper and nutmeg. Place spinach on a serving dish and top with quartered eggs, shavings of cheese and reserved bacon bits.

2 lemons, thinly sliced
2 cups water
2 tablespoons sugar
1 teaspoon salt
2 cloves garlic, roasted, peeled and chopped
1/4 pound pancetta, cut into small dice
4 cups steamed spinach
1 teaspoon fresh ground pepper

Steps:

  • Combine the sliced lemons, water, sugar and salt in a saucepan. Simmer until the lemons are tender, about 20 minutes. Put the lemons, their liquid and garlic in a blender or food processor. Puree until smooth. Transfer to a large glass or ceramic bowl. Set aside.
  • Render the pancetta in a cast-iron skillet over medium heat until golden brown. Using a slotted spoon, take the pancetta out of the pan and drain on paper towels. Pour out all but 1 tablespoon of the fat. Add the spinach to the skillet. Saute over high heat until the spinach is warmed, about 5 minutes. Add the spinach to the lemon sauce and toss. Season with pepper.

8 ounces young spinach
2 large eggs
8 pieces thick-sliced bacon, chopped
3 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper
4 large white mushrooms, sliced
3 ounces red onion (1 small), very thinly sliced

Steps:

  • Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
  • Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
  • While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
  • Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
  • Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

4 slices bacon, or more to taste
1 (16 ounce) bag fresh spinach, stems removed
2 hard-cooked eggs, chopped
1 small red onion, finely chopped
½ cup white sugar
⅓ cup ketchup
¼ cup vegetable oil
¼ cup vinegar
2 teaspoons Worcestershire sauce

Steps:

  • Place the bacon into a skillet over medium heat, and cook until browned and crisp, turning often, about 10 minutes. Transfer the bacon to paper towels to absorb excess grease. Crumble the bacon when cool.
  • Place the spinach into a large salad bowl, and sprinkle with the bacon, hard-cooked eggs, and onion. Gently toss the salad.
  • In a bowl, whisk together the sugar, ketchup, vegetable oil, vinegar, and Worcestershire sauce until the sugar has dissolved. Pour the dressing over the salad, and toss thoroughly to combine all ingredients.

1/2 pound sliced bacon, cooked and crumbled
4 red onion slices, separated into rings

  • In a small saucepan, combine the sugar, flour, mustard and salt. Gradually stir in water and vinegar until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. I find any combination of noodles and hot-and-sour dressing fairly addictive, and none more than these earthy buckwheat noodles. You can make a meal of this salad if you add a little protein in the form of tofu, shredded chicken or shrimp.

1 to 2 tablespoons peanut butter (to taste)
1 tablespoon soy sauce
2 tablespoons white wine vinegar or seasoned rice wine vinegar
1 to 2 teaspoons hot red pepper oil (to taste)
Pinch of cayenne
1 large garlic clove, minced
2 teaspoons finely minced fresh ginger
Salt
freshly ground pepper to taste
1 tablespoon sesame oil
2 tablespoons canola oil
1/2 cup vegetable or chicken broth
1/2 pound Japanese buckwheat noodles
1 cup diced or julienned cucumber
1/4 cup chopped cilantro
1/4 cup coarsely chopped walnuts
Lettuce, baby spinach, radicchio or arugula for serving (optional)

Steps:

  • Heat the peanut butter for 10 to 20 seconds in a microwave to make it easier to mix. Combine with the soy sauce, vinegar, hot red pepper oil, cayenne, garlic, ginger and salt and pepper. Whisk together. Whisk in the sesame oil, canola oil and broth. Set aside.
  • To cook the noodles, bring a large pot of water to a boil, and add salt, if desired, and the noodles. When the water comes back to a boil and bubbles up, add a cup of cold water to the pot. Allow the water to come back to a boil, and add another cup of cold water. Allow the water to come to a boil one more time, and add a third cup of water. When the water comes to a boil again, the noodles should be cooked through. Drain and toss immediately with the dressing (whisk the dressing again first). Add the remaining ingredients, and toss together. Taste, adjust seasonings, and serve over a bed of salad greens if desired.

1 1/2 lbs spinach, washed
2 large oranges
1/2 small red onion, thinly sliced
3 tablespoons sugar
1/4 cup cider vinegar
1/2 teaspoon dry mustard
1/2 teaspoon celery seed
1/2 teaspoon paprika
1/2 cup salad oil
salt

Steps:

  • Wrap spinach leaves in paper towels and chill to crisp, at least 1 hour or up to 1 day.
  • Peel oranges and remove the white membrane, then cut fruit segments from inner membranes. Separate onion slices into individual rings.
  • In a small bowl, mix sugar, vinegar, mustard, celery seed, and paprika until sugar dissolves. Add salad oil, whisking until dressing is the consistency of honey.
  • Combine spinach, oranges, and onion in a serving bowl. Pour dressing over salad, then mix lightly to coat, add salt to taste. Serve at once.

6 slices diced raw bacon (1/2 cup Tightly packed, more is better!)
1/2 cup finely chopped green onion
1/4 cup sugar
1/4 cup cider vinegar
1/4 cup chicken stock
salt and pepper
10 -12 cups baby spinach leaves, washed well and drained
1/4 cup finely chopped pecans, toasted or 1/4 cup salted roasted sunflower seeds

Steps:

  • Cook bacon over medium to high heat until almost crisp.
  • Add onions and fry, stirring, for one minute.
  • Add sugar, stirring over medium heat until sugar starts to develop a golden color.
  • Add the vinegar and stock, season with salt and pepper, and bring back to a boil for 5 minutes.
  • Remove from heat.
  • Immediately pour over spinach leaves in a large bowl.
  • Toss to coat spinach evenly and serve.
  • Sprinkle nuts or seeds over each serving, to taste.
