(must try this!) I found this recipe hidden in my mother's recipes and will be making it for her. She loves, but rarely has, crabmeat. This sounded like the best, unique crabmeat meal I have seen! Hope you think so too!

1 cup boned crabmeat
1 1/2 cups drained tomatoes
1/2 cup butter
1/2 cup green pepper, chopped
1/2 cup onion, chopped
1/2 enriched flour
1 teaspoon dry mustard
1/2 teaspoon msg
1/2 teaspoon salt
2 teaspoons Worcestershire sauce
1 cup American cheese, shredded
1 cup sifted flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons shortening
1/4 shredded American cheese
1/2 cup milk
1 cup milk

Steps:

  • Heat oven to 450°F.
  • Melt butter on top of double broiler, add in onion and green pepper.
  • Cook over boiling water until tender--approximately 10 minutes.
  • Blend in the mustard, flour, msg, milk, and cheese.
  • Stir constantly until cheese has melted and mixture has thickened.
  • Add crabmeat, tomatoes, Worcestershire, and salt.
  • Blend, combining thoroughly.
  • Pour mixture into 2 quart casserole dish.
  • In bowl, sift in flour, baking powder, salt, and cheese.
  • Cut in the shortening until particles are fine.
  • Add the milk.
  • Mix only until flour has moistened.
  • Drop by rounded teaspoons over hot crabmeat mix.
  • Bake 20-25 minutes.

4 medium-sized cooked crabs
1 small clove garlic
2 anchovy fillets
4 ounces butter
4 tablespoons dry white vermouth
1 lemon, juiced
Good pinch freshly grated nutmeg
Hot pepper sauce
2 ounces fresh white bread crumbs
Salt and freshly ground black pepper
Small bunch parsley, finely chopped

Steps:

  • Extract all the meat from the crabs. Wash and reserve the shells.
  • Finely chop the garlic and anchovies, then fry them gently in a little of the butter for about 3 minutes. Add the vermouth, lemon juice and remainder of the butter, and season with the nutmeg and a good dash of hot pepper sauce to taste. Stir in half of the bread crumbs and the crabmeat. Season with salt and pepper to taste. Stir to blend and cook for about 5 minutes. Add most of the chopped parsley.
  • Transfer the buttered crab mixture to the crab shells, and sprinkle with the remaining bread crumbs and parsley. Cook under a preheated hot grill until bubbling and brown.

  • Cheese Biscuit Topping: Sift together flour, baking powder & salt. Add Velveeta & cut in Crisco until mixture resembles coarse meal. Add milk & mix until flour is dampened. Drop by rounded teaspoonfuls on top of cobbler. Bake @ 450 degrees for 15-20 minutes.

Steps:

  • Preheat the oven to 325˚F (160˚C).
