- Peel the shrimp, leaving the tail segments intact, then devein and clean them. In a bowl, mix together all of the ingredients to make the shrimp coating. Add the shrimp and turn to coat. Refrigerate for 30 minutes. To make the sauce mix together all of the ingredients in a small bowl and reserve. Heat a wok over high heat for 30 seconds. Add the peanut oil, and, using a spatula, coat the wok with the oil. When a wisp of white smoke appears, add the ginger and stir briefly. Add the garlic and stir briefly. Add the shallots, stir to mix, and lower the heat to medium. Cook for 2 to 3 minutes, or until the shallots soften. Raise the heat to high, add the shrimp and their coating, and stir to mix. Spread the shrimp in a single layer and cook for 1 minute, or until the shrimp begin to turn pink. Turn the shrimp over and mix. Drizzle in the wine, adding it along the edge of the wok, and mix well. Stir the sauce, pour it over the shrimp, and mix well. Stir-fry for about 1 1/2 minutes, or until the shrimp are well-coated and the sauce begins to bubble. Turn off the heat, transfer to a heated dish, and serve. Hot Pepper Oil: For this infused oil to be a success, the pepper flakes must be very hot, which is why I prefer dried Thai chilies for making the flakes. Heat a wok over high heat for 20 seconds. Add the sesame oil, peanut oil, and pepper flakes and stir. Reduce the heat to medium and cook for 2 to 3 minutes, or until the oil is very hot, but not boiling. Turn off the heat and let cool to room temperature. Pour the oil, including the pepper flakes, into a sterilized glass jar and close tightly. Allow the oil to rest for 10 minutes and then it can be used. The oil will keep at room temperature for up to 1 week or refrigerated for up to 3 months. The longer the oil is stored, the hotter it will become.

This is a dish that I love to make. It is a simple Hunan-style chicken that you will love. If you like a lot of heat, you want to add to the anise pepper. It gives it that warm, deep heat.

- Whisk soy sauce, sherry, and ginger together in a bowl and pour into a resealable plastic bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, 15 to 20 minutes.
- While chicken marinates, soak dried chiles in warm water until soft, about 15 minutes.
- Cut chile peppers, shallot, and scallion diagonally into 1-inch pieces.
- Grind anise seed into a powder using a mortar and pestle. Transfer to a bowl and add chicken broth, vinegar, sugar, and salt; mix until well combined.
- Heat olive oil in a skillet over medium to medium-high heat. Add chile peppers and shallot; stir-fry for 30 seconds. Add scallion and stir-fry, 30 seconds more. Add marinade mixture and chicken and stir-fry, 1 to 2 minutes. Pour in chicken broth mixture and mix well.
- Cook over low heat until chicken pieces are tender, no longer pink in the centers, and juices run clear, about 10 minutes. Stir in cornstarch to thicken sauce; serve with chicken.

HOT HONEY SHRIMP
Chile powder adds sting, honey lends sweetness, and butter gives a creamy richness to these succulent roasted shrimp. Even better, the dish comes together in minutes, making it an ideal after-work meal or extremely speedy appetizer. The shrimp are also excellent tucked into a baguette for a shrimp sandwich. If you happen to have a jar of hot honey (chile-spiced honey), you can use that instead of combining the honey and cayenne. Just be sure to use a light hand with the lime juice at the very end; hot honey also contains vinegar, so taste as you go. If you'd like to double the recipe, you can. Just use two baking pans so as not to crowd the shrimp.

- Heat oven to 500 degrees.
- In a medium bowl, combine honey, cayenne, lime zest, ginger, garlic, salt and pepper. Toss in shrimp to coat.
- Spread shrimp on a large rimmed baking sheet and dot with butter. Roast until shrimp is pink and opaque, but before the edges have started to curl, about 5 minutes. Sprinkle generously with fresh lime juice and toss with jalapeños and chives or scallions. Serve with mayonnaise if you like.

- Begin by mixing all of the shrimp coating ingredients in a medium size bowl. Add the shrimp, toss or mix by hand to coat. Refrigerate for about 30 minutes.
- Meanwhile, prepare the sauce by mixing all of the ingredients for the sauce in a small bowl. Set aside.
- Heat a cup of peanut oil in a wok over medium-high heat to about 300F. Add the shrimp, spreading them evenly across the bottom in one layer. Fry for 1 minute, until the shrimp starts to turn pink, flip the shrimp and continue cooking for another minute. Using a slotted spoon, remove the shrimp from the wok and place on a paper towel lined plate to remove excess oil. You may want to do this step in two batches as it will be much easier.
- This is not the traditional Hunan shrimp preparation method that I know of, but I really like the results. Instead of shallow frying the shrimp, we will stir-fry them with just a little bit of oil. In a wok, heat three tablespoons of oil over medium-high heat. Just as you see a whiff of smoke, add the garlic and the ginger and stir briefly. Add the shallots, stir briefly and lower the heat to medium. Stir-fry for 2 to 3 minutes, or until the shallots are nicely caramelized and soft.
