SIMPLE HOT PASTRAMI AND SWISS SANDWICHES
My wife's favorite sandwich. I'm a pastrami and rye guy, but she loves Italian bread. So this is for Charlotte and anyone who loves simple but flavorful sandwiches. I'm learning that the expensive deli pastrami I use is low in calories (similar to turkey pastrami) and very tasty, but it's not real pastrami. Unless I make it myself, I can't get real pastrami here. Real pastrami is almost 3 times the calories, but much more flavor as it's smoked corned beef. What I use here is Boar's Head pastrami from cap-off top round beef.

Steps:
- Spread mustard on each slice of bread.
- add 1 ounce of cheese and 3 ounces of pastrami per sandwich.
- top with another slice of bread.
- Spread butter on the outside of the assembled sandwich.
- Heat in hot, heavy skillet until bread is toasted and cheese melted.

TOASTED CUBAN SANDWICH
This Cuban sandwich is piled high with ham, roast pork loin, Swiss cheese, and dill pickles, then toasted to warm and crunchy perfection.

Steps:
- Combine mayonnaise, sour cream, cilantro, green onions, ground chipotle peppers, lime juice, garlic basil spread, cumin, salt, and black pepper in a small bowl. Stir until combined. Cover and refrigerate for at least 1 hour.
- Preheat oven to 500 degrees F (260 degrees C).
- Heat olive oil in large skillet over medium-high heat. Stir onions, red pepper flakes, and oregano in the hot oil until onions begin to soften, about 5 minutes. Season with salt and ground black pepper to taste. Add half the jalapeno pepper rings and cook until they begin to soften, 2 to 3 minutes. Reserve remaining jalapeno rings.
- Spread each ciabatta roll with 1 tablespoon sweet hot mustard and 2 tablespoons chipotle mayonnaise. Evenly divide the Swiss cheese slices, slices of pork loin, ham, dill pickles, and remaining jalapeno rings among the four sandwiches. Top with cooked onion mixture.
- Place sandwiches onto a baking sheet and bake in the preheated oven until cheese is melted and bread is toasted and warm, 4 to 5 minutes.

PHILLY (ITALIAN STYLE) HOT ROAST PORK SANDWICHES
Philly is not only famous for cheesesteaks. Another famous favorite is Hot Roast Pork Sandwiches! After searching the web for the recipe and not finding it, I came up with this and the results were fabulous and authentic tasting. This is also delicious served as a main dish instead of for sandwiches...you may want to slice it thicker and add a side dish or two :)

- Preheat oven to 350 degrees.
- Place pork roast in a baking dish (I use a 9 x 13 inch glass pyrex dish).
- Sprinkle generously with salt, pepper, garlic powder, basil, Italian seasoning and garlic flakes.
- Roast in oven for about 15 minutes or until juices start running and fat starts to melt and brown in the bottom of the pan, then add water to about 1/2 inch up the pan.
- Check every half hour or so and if water gets low, add a bit more to so it's about 1/2 inch up the pan every time.
- Each time you add the water, pour some over the roast, so the top does not get too dry.
- Roast until internal temperature reads 165-170 degrees (About an hour and a half TOTAL cooking time).
- Trim all visible fat from roast and discard.
- Slice roast very thin, in the pan if possible, so you don't lose any juices.
- If all goes well, the juices/gravy at the bottom of the pan should look golden brown, with darker flecks of spices, garlic and some little pieces of meat.
- Serve slices of pork on rolls, making sure that the slices have soaked up some of the juices (you can drizzle more juices on top, if you like, or you can thicken the gravy with water and cornstarch or flour, if desired).

PHILADELPHIA STYLE ROAST PORK SANDWICHES
This delicious sandwich is inspired by the roast pork sandwich you'll find in South Philly.

- Preheat oven to 325 degrees F (165 degrees C).
- Remove the netting or strings on pork roast, keeping them intact to use again. Combine rosemary, 3 cloves of garlic, parsley, 3 teaspoons of olive oil, 1 tablespoon kosher salt, and 1 tablespoon freshly ground black pepper in a bowl. Slice open the pork roast and spread it with the oil and herb mixture. Roll up the pork and secure it with the netting or string. Rub outside of the roast with remaining 1 teaspoon olive oil and salt and pepper to taste.
- Place the pork, fat side up, in a roasting pan or baking dish and pour in water. Bake in the preheated oven, basting occasionally, about 1 1/2 to 2 hours; add more water if necessary. An instant-read thermometer inserted into the meat should read at least 145 degrees F (63 degrees C). Allow the roast to rest 10 to 15 minutes. Reserve the pan juices.
- While the pork is resting, heat 1 tablespoon olive oil in a frying pan over medium heat. Stir in 2 cloves chopped garlic and red pepper flakes; cook and stir until garlic is fragrant but not brown, about 3 minutes. Pour in chicken stock and bring it to a boil. Add spinach, 1 teaspoon salt, 1/2 teaspoon black pepper, and lemon juice. Reduce the heat to medium-low and cook until the spinach is wilted, stirring occasionally.
- Cut the string on the roast and cut the pork into thin slices. Return the sliced pork to the reserved pan juices.
- Slice the sandwich rolls and sprinkle each roll with shredded Manchego cheese. Add pork slices to each sandwich, top with spinach, and serve.

SECOND TIME AROUND -- HOT PORK SANDWICH WITH GRAVY
I took out some leftovers from the freezer. The leftovers were from a crock-pot recipe I made a little over a week ago. I froze the remaining roast in the stock it created. This is a comfort food recipe to the max. Serve with mashed potatoes or french fries for the full effect! Enjoy! Note: This could also be done with beef or chicken.

Steps:
- Reheat leftover pork in microwave, stove-top or oven.
- Heat gravy slowly in small saucepan over low/med heat or in microwave at 50% power 3-4 minutes.
- Reheat leftover pork in microwave for 30 sec on high (micro. ovens vary).
- Place one slice of bread on dinner plate, then sliced pork.
- Ladle a little gravy over pork, then top with second slice of bread.
- Spoon mashed potatoes on the side.
- Ladle rest of gravy over both, or just on top of the sandwich.
- Enjoy!
- Note: I used the leftover pork roast stock, milk, flour, butter, salt and pepper to make the gravy. There is no recipe for the gravy.

HAM, ROASTED PORK, AND SWISS CHEESE SANDWICH ON SWEET BREAD: MEDIANOCHE

- Assemble the sandwich by slicing all the rolls and dividing the meat and cheese equally. Place the roasted pork, ham, and cheese slices on top of 1/2 of the roll. Place pickle slices on top. Spread mustard on the inside of the other half of the roll. Place the top half of the roll over the sandwich, to close. Spread butter on the outside of the top and bottom of the sandwich.

GUINNESS PORK AND SWISS SANDWICHES

- Pork -- If the pork is already done, just slice and set to the side while you prepare the onions. It will reheat in the beer along with the onions.
- If it isn't pre-cooked, slice the pork and season well with salt, pepper and the rosemary. Heat up 1/2 butter in a large skillet on medium high to high heat and pan saute the pork on both sides. It will continue to cook in the beer broth, so it doesn't have to be cooked all the way through. Remove the pork to a plate while you start the onions.
- Onions -- Saute the onions on medium high heat in the remaining butter. Cook about 7-10 minutes until the onions begin to soften and get slightly brown. Then add the beer to the onions and add the pork back to the onions and beer. Cover and cook another 10 minutes until the pork and onions are tender.
- Mayo -- As the onions and pork cook, prepare the mayo and coleslaw. Mix the mayo, barbaque sauce and rosemary and set to the side.
- Coleslaw -- Toss the pre-shredded coleslaw mix with the cider vinegar and salt and pepper and set to the side.
- Sandwich -- The pork should be tender and the onions soft. Now I prefer to toast my rolls, but that is personal taste. Just lightly toast under the broiler for a few seconds. They will go back under the broiler to melt the cheese, so I don't like them too brown.
- Top each bottom roll with a little of the barbeque mayo, then a cheese slice and a slice of the pork (the warm pork will melt the cheese). Top the pork with the onions and the second slice of cheese and put under the broiler for a few minutes until melted. Remove from the oven and top the melted cheese with the coleslaw and finish with the top roll also spread with the barbeque mayo. ENJOY!
