WEST VIRGINIA STYLE HOT DOG

- Grill, steam or boil the hot dogs. In the meantime, heat the Chili until hot throughout. Place each hot dog in a bun, and top each with a generous amount of Chili, coleslaw and yellow mustard, and then serve.
- In a stockpot or Dutch oven, combine the beef (do not brown first), onions, tomato sauce, paste, chili powder, sugar, salt, pepper, garlic salt and 2 cups water. Mix until combined, then add the bay leaves. Cover and simmer over medium-low heat for about 2 hours.
- Stir in the vinegar and simmer another 30 minutes.
ITALIAN STYLE HOT DOGS

- In a saucepan over medium-high heat, heat enough oil to cover the potatoes to frying temperature (325 to 350 degrees F), and add the potato rounds. Turn them over when they begin to stick to the pan, and fry until the potatoes are browned and crispy on the outside. (The potatoes can also be cooked in a deep fryer for 3 to 5 minutes.) Set the potatoes aside, and turn the heat down to medium.
- Add the hot dogs, onions and peppers to the remaining oil in the saucepan. Let them cook together and exchange flavors until the hot dogs are done and the onions and peppers are beginning to brown.
- To build The Single: Cut the bread into quarters. Starting at the point of one wedge, slice open through the soft middle of the bread, not across the crust and not completely in half. You should be able to peel open the bread just enough to make a pocket for the dog. Mustard can be added to the inside of the bun. Place one dog on the bottom, then pile with the onions, peppers and about half a potato worth of rounds. If the toppings are overflowing the bun, you're doing it just right. Ketchup and sprinkled red pepper flakes can be added on top. Have a fork handy!
- To build The Double: Cut the bread in half. Slice open a pocket in the middle of the half-moon. Put 2 hot dogs on the bottom and double everything, especially the potato rounds - about 1 potato's worth can fit on top!

- Brown beef and onion in a large skillet over medium-high heat. Drain fat; cool mixture slightly. Place in food processor; pulse until mixture is finely crumbled, about 5 or 6 pulses. Return meat to skillet; stir in garlic. Cook for 3 minutes.
- Pour the ketchup and barbeque sauce into the skillet. Stir in the chili powder, mustard, pepper, salt, cumin, Worcestershire sauce, red pepper flakes, and water. Cook, uncovered, until most of the liquid has evaporated, about 10 minutes. Season sauce with additional salt, if necessary.

HEAVENLY HOT DOG SAUCE
This is my family's favorite hotdog sauce. It originates from West Virginia. We like it with a bite, but you can adjust it to your taste. We top the hotdogs with ketchup, mustard, the hotdog sauce, and finally some chopped onions...YUM! This recipe makes enough for freezing and using later.

- Crumble ground beef into a Dutch oven over medium heat. Stir in water, and mash ground beef thoroughly with a potato masher. Stir in tomato sauce, ketchup, salt, pepper, sugar, and chili powder; bring to a boil. Reduce heat to low; simmer, 60 to 90 minutes, until the sauce reaches a medium consistency that is not too soupy.

- In a large saucepan, bring water to a boil. Carefully crumble beef into water. Add onion. Boil until meat is no longer pink; drain. Add the tomato sauce, brown sugar, chili powder, salt and pepper. Simmer, uncovered, for 15 minutes or until heated through. Serve over hot dogs in buns.

- Finely chop onions and saute in a little olive oil until tender.
- Add ground beef and cook until browned. Separate meat so it is broken into very fine pieces of meat.
- Add rest of ingredients, mix, and cook over low heat on the stove 1 hour or more.
- This could be cooked in a crockpot on low for six hours.
- Serve as a topping on hot dogs.
HOTDOGS IN TOMATO SAUCE
DEPRESSION DINNER: My mother made this for us kids when we were growing up in the 60's...but, from what I understand...more than likely...it was something she ate during the end the forties that probably her own mother made for her five children to help make the food budget last longer and to use up leftovers which were never wasted...Hotdogs were cheap and healthy back then (no nitrates) and the ketchup (tomato sauce is healthy for anyone)...so..enjoy.

- In a small saucepan on the backburner....put your green beans (or any other vegetable you prefer)...add a little water to cover the bottom...cover and turn the stovetop to medium heat (check later to see the veggies are steaming and turn down to low)...and let steam....while you are cooking the rest of the meal.
- Turn on a front stovetop to medium heat....and place your butter in a frying pan and as you are melting the butter...toss in the garlic and the onions...and fry onions and garlic up to a sweat!!!!
- Next.....Toss in your HotDawgz....and fry up till you see that they are looking toasty and smell yummy!!!!...You know it's smelling good...cuz your family start to appear in the kitchen doorway like lemmings...Smells Good...What's For Supper?
- Next...add your cup of Ketchup and add a teaspoon or two of water...and slowly stir and incorporate the hotdawgs with the ketchup by basting it and then covering the frying pan with a pan cover....put the flame on low for another five minutes!
- Meanwhile on the stove top...heat up last night's mash potatoes in a saucepan...add a little bit of milk and butter(to taste) to whip them up and make them smooth and silky....cover and check on the vegetables.
- and when everything seems that they are heated through....dish up a warm plate with the mashed potatoes...ladle some of the red delicious sweet gravy into the potatoes and add the Tasty Hotdawgs on the side with the steamed vegetables....Serve and EAT!
