Fried Soft-Shell Crab image

These crabs are fried to a light crisp, and you can eat the whole crab. It is my favorite food.

4 soft-shell crabs
1 egg
½ cup milk
1 cup all-purpose flour
salt and pepper to taste
4 cups oil for frying, or as needed

Steps:

  • Clean each crab. Lift one pointed side of top shell and remove the gills by pulling them out. Put top shell back down and repeat on other side. On the bottom side remove tail flap by twisting and pulling off. Using a pair of scissors, remove the face by cutting behind the eyes. Rinse the crabs thoroughly with cold water. Dry on paper towels.
  • Heat oil in a deep fryer to 365 degrees F (180 degrees F). In a shallow dish, whisk together the egg and milk using a fork. In a separate bowl, stir salt and pepper into the flour. Lightly salt the crab, then dip in the flour, dip in the egg, then in the flour again.
  • Carefully place crabs into the deep-fryer. Cook for 1 to 2 minutes, or until golden brown on one side. Carefully turn over, and cook until golden on the other side. Drain on paper towels. Serve as soon as they are cool enough to eat. You can eat the whole crab.

Ask your fishmonger to clean soft-shell crabs for you. Crabs should be cooked no more than six hours after they are cleaned.

1 1/2 cups all-purpose flour
2 teaspoons coarse salt
1 teaspoon freshly ground pepper
12 soft-shell crabs, cleaned
12 tablespoons vegetable oil
6 tablespoons unsalted butter
1/4 cup loosely packed fresh flat-leaf parsley leaves, chopped
3 lemons, cut in half

Steps:

  • Whisk flour, salt, and pepper; place on a dinner plate. Dredge 2 soft-shell crabs in flour mixture, shaking off excess (make sure crabs are completely coated).
  • Heat 2 tablespoons oil in a medium sauté pan over medium-high heat. The oil should be very hot but not smoking. Place flour-coated crabs, back side down, in sauté pan; reduce heat to medium if pan starts to smoke. Sauté crabs until golden and crisp, about 3 minutes (do not stand too close to pan; crabs tend to spatter during cooking). Turn crabs over, and cook 2 minutes more.
  • Add 1 tablespoon butter and a large pinch of parsley to skillet. Squeeze the juice of half a lemon over crabs. Keep warm in a low oven. Repeat process until all the crabs are cooked.

12 soft shell crabs
Kitchen shears
1/2 cup grape seed oil (or other frying oil)
1 cup all purpose flour
1 tablespoon salt

Steps:

  • With the kitchen shears, cut the face side of the crab from the body.
  • Turn the crab over so the white side is facing up and pull up the pointed "lever" that reveals a flap and cut off the flap.
  • Turn the crab over again so the blue shell is facing up, and lift both pointy sides of the shell to reveal the lungs. Remove them.
  • Rinse the crab, pressing out the green "tamale" from the inside if you desire. Pat them dry and set them on a tray.
  • In a large skillet, heat the oil. Combine the salt and flour in a shallow wide bowl and coat the crab lightly on both sides.
  • Drop the crabs in the oil and let it sizzle and cook for 4 minutes on each side, until the shell turns red and crisp and the flour has turned golden brown.
  • Remove to a plate covered in paper towel and sprinkle with salt. Serve with lemon wedges!

SIMPLY SAUTéED SOFT-SHELL CRABS



Simply Sautéed Soft-Shell Crabs image

A light coating of seasoned flour gives the crabs' tender shells a little extra snap; boost the flavor with Old Bay, cayenne, or any other seasoning, if you like. You can also substitute cornmeal for the flour for extra crunch. If the top shells are thicker than a piece of tissue paper, they will be chewy, so you might want to pull them off and discard them after cooking.

Kosher salt and freshly ground black pepper
4 jumbo soft-shell crabs, cleaned
2 Tbs. canola or vegetable oil
1 Tbs. unsalted butter
Lemon wedges (optional)

Steps:

  • In a wide, shallow bowl, combine the flour with 1/2 tsp. salt and 1/4 tsp. pepper. Dredge the crabs to coat on both sides.
  • Heat the oil in a 12-inch skillet (preferably cast iron) over medium-high heat until shimmering hot. Add the butter and swirl the skillet to melt it. Add the crabs top side down and cook, shaking the pan once or twice to keep the crabs from sticking, until browned, about 3 minutes. The crabs may pop and splatter, so stand back or use a splatter guard. With tongs, flip the crabs and cook until red and an instant-read thermometer inserted in the center reads about 145°F, 2 to 3 minutes more. Transfer the crabs to a large paper-towel-lined plate to drain briefly, then serve with the lemon wedges.
