When a friend gave me some ground turkey to use up, I looked for an inventive way to prepare it. I found this recipe while scouring through my collection. - In a large bowl, combine the egg, oats, salt and pepper. Crumble turkey over mixture and mix well. Pat into a 12x9-in. rectangle on a piece of heavy-duty foil; set aside., In a large saucepan, saute onion and celery in butter until tender. Remove from the heat. Stir in water, sage and thyme. Add stuffing; stir until well coated. Spoon over turkey to within 1 in. of edges. Roll up, jelly-roll style, starting with a short side and peeling away foil while rolling., Place loaf, seam side down, in a greased 9x5-in. loaf pan. Place bacon strips over top. Bake, uncovered, at 325° for 60-70 minutes or until meat is no longer pink and a thermometer reads 165°.

HOW TO COOK A TURKEY
The biggest myth in all of American cookery is that a juicy, perfectly cooked turkey is difficult for the novice cook to achieve. Even if this is your first time, don't play scared, this will work! There is nothing to fear but the fear of dry turkey itself.

- Preheat oven to 325 degrees F (165 degrees C).
- Place onion, celery, and carrot in a large, shallow roasting pan.
- Place turkey, breast side up, on top of the vegetables in the roasting pan. Pat the outside and inside of the turkey dry with paper towels.
- Combine salt, black pepper and cayenne pepper in a small bowl. Season the inside of the turkey with about 1/3 of the salt mixture. Fold wing tips under the bird.
- Melt butter in small saucepan over medium heat until the edges begin to turn golden, about 2 minutes. Cook and stir rosemary and sage for 1 minute.
- Place rosemary and sage inside the cavity of the turkey; reserve melted butter. Tie the legs together with twine.
- Brush outside of the turkey completely with the melted butter. Season with remaining 2/3 of the salt mixture.
- Bake turkey, uncovered, in the preheated oven until no longer pink at the bone and the juices run clear, about 3 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the turkey from the oven and allow to rest in a warm area 10 to 15 minutes before slicing.

- Bone the turkey: Place it on a work surface, breast side down. Slice skin along backbone from neck to tail. Cut and pull flesh and skin away from carcass. Cut flesh from saber-shaped bone near wing, and remove bone. Sever ball-and-socket wing joints so that they are separated from carcass but still attached to skin. Continue cutting breast meat away from bone up to the ridge of the breastbone. Turn turkey around, and repeat on other side. Pull gently to separate breastbone and carcass flesh (save carcass for homemade turkey stock). Cut off wing tip and middle section, leaving largest wing bone; save for stock. Holding outside of wing bone, cut through tendons; scrape meat from bone. Pull out bone, using knife to free it. Holding inside end of leg bone, cut through tendons attaching the flesh to the bone. Use knife to scrape meat from bone, pushing it away from end of bone. Cut bone free of skin. Cut out any sinews still remaining on leg. Repeat on other side, then push leg and wing skin side out. Butterfly breast so that meat completely covers skin. Cover with plastic wrap. Lightly pound meat until even.
- Preheat oven to 375 degrees. Make the stuffing: Place a large skillet over medium heat; when it is hot, add 1 tablespoon olive oil. Add onion, garlic, 1 tablespoon chopped rosemary, sage, and mustard. Cook, stirring occasionally, until onion is soft and translucent but not brown, about 10 minutes. Transfer to a large bowl, and set aside to cool. Add the ground turkey and pork, breadcrumbs, eggs, cream, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper to the bowl. Stir to combine.
- Lay turkey breast on a work surface, skin side down, and season with 1 teaspoon salt, 1/2 teaspoon pepper, and remaining 2 tablespoons chopped rosemary. Place stuffing in the middle of the turkey. Roll turkey up to form a long tube; use toothpicks or wooden skewers to hold in place. Tie every 2 inches with kitchen twine. Drizzle with remaining 2 tablespoons olive oil. Season with remaining teaspoon salt and 1/2 teaspoon pepper. Tuck rosemary branches along the top of the roll under the twine. Place on roasting rack over a large pan.
- Roast until an instant-read thermometer registers 150 degrees, 2 to 2 1/2 hours. Remove from oven. Brush with maple syrup. Return to oven, and roast until an instant-read thermometer registers 160 degrees to 165 degrees, about 20 minutes more.
- Remove from oven, and let rest for 10 minutes. Transfer to a cutting board, remove twine, and cut crosswise into 1/2- to 1-inch-thick slices. Place slices on a platter, and garnish with watercress. Serve with cranberry compote.
ROASTED ROLLED TURKEY BREAST WITH HERBS
Add plenty of earthy, citrus flavor to whole turkey breast with fresh flat-leaf parsley, sage, and orange zest. A delicious gravy is made with chicken stock and orange juice for dressing.

- Preheat oven to 400 degrees.
- Combine butter, orange zest, parsley and sage in a medium bowl. Stir to combine; season with salt and pepper.
- Evenly distribute half of butter mixture under skin of turkey breast. Flip turkey breast and rub remaining butter evenly on inside of breast; season with salt and pepper. Starting with one short side, roll turkey breast into a log shape, tucking ends under to ensure even cooking. Using kitchen twine, tie breast at 1-inch intervals. Season generously with salt and pepper; set aside.
- Arrange onion slices in bottom of 12-inch ovenproof sauté pan and scatter carrots around perimeter of pan. Add 1 cup chicken stock to pan and place turkey breast, seam-side down, on top of onions. Transfer saute pan to oven and cook, basting turkey and vegetables every 15 minutes with pan juices, until turkey reaches an internal temperature of 150 degrees and juices run clear, about 1 hour 30 minutes. After an hour, tent turkey with foil to avoid overbrowning. Transfer turkey breast from pan to cutting board and cover loosely with foil. Let stand 15 minutes before slicing.
- Meanwhile, remove and discard vegetables from saute pan. Transfer pan juices to a fat separator; discard fat. Place pan over medium-high heat and add orange juice, scraping up any brown bits from bottom of pan. Return defatted pan drippings to pan and stir to combine. In small jar with tight-fitting lid, combine remaining 1 1/4 cups chicken stock with flour and shake to combine. Slowly add chicken stock mixture to pan, whisking to incorporate. Continue to cook until thickened, about 8 minutes. Season with salt and pepper. Slice turkey breast and serve with gravy.
STUFFED TURKEY ROLL WITH CHORIZO AND APPLE STUFFING
Impressive to look at, this turkey roll recipe is packed with sweet apples and spicy chorizo. It's also far easier to carve than a traditional roast turkey.

- For the stuffing, melt butter in a large frying pan over low heat and fry shallots until softened, about 5min. Meanwhile, remove and discard skin from chorizo sausages and break them into small pieces. Add to pan and fry for 5min, until lightly golden and cooked through.
- Stir through apple and fry for 1min, then remove from heat and allow to cool.
- Preheat oven to 190°C (170°C fan) mark 5. Using your hands, remove skin from turkey breast and set aside. To butterfly the breast, put it in front of you on a board. Holding a large knife parallel to the board, make a horizontal cut along the length of the breast about 1cm (1⁄2in) up from board - stop cutting just before you reach the opposite edge of the breast so the slices stay attached. Open out the meat, then repeat, cutting and opening out again in the same way. Flatten the meat as much as possible to a rectangle of even thickness measuring about 30.5 x 33cm (12 x 13in). This requires quite a few cuts in the same direction all over the meat; if needed, cut off bits and reposition. If not an even thickness when finished, bash with a rolling pin.
- Stir breadcrumbs, egg, parsley and some seasoning into the chorizo mixture and press on top of the turkey. Roll meat up in the same direction as the cuts, then wrap reserved skin around roll. Secure in place with lengths of knotted kitchen string. Weigh rolled breast and calculate cooking time, allowing 30-35min per kg (2lb 31⁄2oz). Put in a sturdy roasting tin just larger than the roll.
- Rub softened butter all over and roast for calculated cooking time, until cooked through - temperature needs to be at least 72°C on a meat thermometer when inserted into the centre of the roll.
- Transfer roll to a board (set aside roasting tin for gravy); loosely cover with foil and leave to rest for about 25min.
- Make the gravy. Spoon off most of the fat from tin, then put tin over medium hob heat and whisk in flour; cook for 1min. Whisk in wine (scraping up all the sticky bits from base of tin) and leave to bubble for a few min. Whisk in stock and leave to simmer, whisking occasionally, for a couple of min until thickened. Taste and add honey, if needed, then strain into a serving jug or clean pan to reheat when needed.
- Serve turkey roll in slices with the gravy

- The aim of this exercise is to remove the skin from the meat, which is then used as a wrap for the turkey breasts. The breasts then need to be removed from the bones. Ease the skin from the buffe, trying not to tear it. Your fingers will do most of the work. Scrape away any excess fat deposits on the inside of the skin. Remove the two breast fillets (each will weigh around 1.2kg). Taking off the breast fillets is really very easy: ease the breast fillets away from the bone using your fingers and a small sharp knife.
- Use the carcass to make a light stock: cover the bones, vegetables, bay leaf, thyme and peppercorns with cold water. Simmer for two to three hours. Strain and refrigerate until needed.
- Melt the butter with the garlic, stirring, and remove from the heat as soon as the garlic smells fragrant and before it starts to brown. Add the zest of lemon.
