HOW TO DEHYDRATE MUSHROOMS
How to dehydrate fresh mushrooms for long term storage is an easy way to preserve mushroom so you can enjoy fresh mushroom recipes anytime you want. Dehydrated mushrooms will last a year or longer when stored in an airtight container.

Steps:
- Rinse whole mushrooms well under cold running water. Gently scrub any visible dirt away with out damaging the mushroom. Pat dry with paper towels if needed.
- Break the stem off of each mushroom and slice into 1/4 to 1/2 inch thick slices with a sharp knife.
- Place the sliced mushrooms on a dehydrator tray that has been lined with a plastic mesh liner for your dehydrator.
- Continue slicing and filling the dehydrator trays until you run out of trays or mushrooms.
- Stack the trays on the dehydrator base and place the lid on.
- Turn the dehydrator on.
- The amount of time it will take will depend on the temp of the dehydrator and the thickness of the slices.
- Check the mushrooms after and hour and flip them over for even drying. Check the mushroom slices every hour.
- If using a dehydrator like the model I am using it will take about 4 to 4 1/2 hours to dehydrate 1/4 inch thick slices. Dehydrating at a lower temp will mean it will take longer.
- As the mushroom slices dry remove them from the dehydrator and allow to cool on the tray or a paper towel.
- Store dried mushroom slices in an airtight glass container.

- Start with fresh mushrooms (this method will not work with mushrooms past their prime), and wipe them clean with a lightly dampened towel. Do NOT wash them under running water.
- Transfer them to a container that allows air to circulate around them, such as a mesh colander, or a baking rack set on top of a baking sheet. Do not overcrowd the mushrooms.
- Place them in a well ventilated area (any area of the house with a ready supply of fresh air), preferably in the sun if possible. Allow them to air dry for 7-10 days, until they do not give when squeezed. Drying time will vary based on humidity levels and the size of the mushrooms.
- To expedite the process, you can partially dehydrate them in the oven before air drying. Place in an oven heated to 175 degrees F/80 degrees C for 2 hours, flipping them halfway through. Then transfer to a colander to air-dry for another 3-5 days.

- Check your mushrooms’ freshness. You might think you can save your slimy mushrooms by drying them out, but that’s not the case. Just like freezing meat beyond its shelf life won’t fix the fact that the food has gone bad, dehydrating mushrooms when they’re past their shelf life won’t save them either.
- Clean your fresh mushrooms. Before sticking your mushrooms in the dehydrator, you’ll want to make sure they’re properly cleaned. Wipe your fungi off with a damp paper towel; do not put them in a bowl under running water!
- Properly slice your mushrooms. Sticking whole mushrooms or Portabella caps in your dehydrator will not allow for your fungi to properly dry. The mass will be too dense and will likely never dehydrate completely unless you keep it in the machine for a long while; in which case you risk compromising your dehydrated mushrooms quality and food safety.
- Arrange on your dehydrator tray. Now that you sliced your mushrooms nice and thin, you can arrange them on your dehydrator’s tray. But there’s a certain way you can lay your fungi to get the best results.
- Store your dehydrated mushrooms. Once your mushrooms are dried, ensure they have adequate time to cool before handling. When they are room temperature, it’s time to transfer them to storage containers.
