RED CANDY APPLE SLICES

Yield 32 candy apple slices

Number Of Ingredients 10

Cooking spray
2 cups sugar
1 cup light corn syrup
One 2-ounce box cinnamon candy
Few drops of red food coloring
Chopped peanuts
Shredded coconut
Assorted candies
2 firm apples, such as Jonathan or Fuji
2 firm Granny Smith Apples

Steps:

  • Bring a medium pot of water to a boil. Spray a cookie sheet with cooking spray. Set aside.
  • In a medium saucepan, bring the sugar, 1/2 cup water and corn syrup to a boil. Cook to 250 degrees F, or until the syrup spins a thread when poured from the edge of a cooking spoon. Pour in the candy pieces and continue cooking to 285 degrees F. Remove from the heat and add the food coloring to achieve the desired shade of red.
  • Put the chopped nuts, coconut and candies in shallow bowls. Set aside. Wash the apples thoroughly. Remove the stems from the apples and insert a popsicle stick into the center of the bottom of each apple.
  • Dip the apples quickly in the candy mixture, twisting as you dip to cover the entire apple. Roll the apples in the assorted toppings, coating the bottom half of each apple. Place on the greased cookie sheet and allow the coating to cool and harden. Remove the popsicle sticks and use an apple slicer or a sharp serrated knife to cut the apples into slices. Place a toothpick in each slice.

These Chocolate Covered Candy Apple Slices are just what you need, smaller than a whole apple. More fun to make and a great family fun activity...You can eat!

Melting Chocolate
Kraft caramels
Garnishes such as M&M's (sprinkles, candies, chopped nuts & coconut flakes)
Apples
Lollipop sticks

Steps:

  • Set up everything you will be using to decorate your Candy Apple Slices.
  • Set out one or two baking sheets lined with a piece of parchment or wax paper. (This is so your chocolate covered apple slices don't stick)
  • In small individual bowls, place the chocolates and caramels you will be using to cover the apple slices in. Dark chocolate, milk chocolate, white chocolate all work fine. I prefer the melting disks from the craft store for this since they melt evenly and smoothly.
  • Slice apples to about a 1/8 inch thickness. You can have all sizes of slices to not waste the apples OR just eat the smaller ends instead of dipping them, your call.
  • At the bottom of each apple slice, make a small slice 3/4 of the way through, gently but firmly press a candy stick into the apple and push it up into the apple a bit. Place the apples on your parchment paper-lined baking sheets.
  • Melt the chocolate you will be covering your slices in and with a spoon, spoon the melted chocolate onto one apple slice at a time, making sure you have coated the top and sides and secured the stick with chocolate.
  • Gently flip it over and do the other side. If decorating with sprinkles, jimmies or candies, do so quickly before the chocolate begins to harden.
  • Melt additional chocolate for drizzling (white on dark or dark on white) and drizzle onto chocolate-covered slices.
  • Melt caramel and do the same. Caramel will solidify fast, so move quick. A small spoon will work for drizzling the caramel.
  • To melt the chocolates as well as the caramel, place each separately in small bowls and one at a time, microwave in 15-30 second bursts, stirring in between until you can stir the chocolate and it becomes smooth. Caramel will take a little less time. Be careful not to burn.
  • Once all slices are finished being candied and decorated, place your tray(s) in the fridge for 15 minutes to ensure all is heartened.
  • Best if enjoyed within 24 hours.

6 medium tart apples
2 cups water
1 cup sugar
1 cup red-hot candies
Fresh mint, optional

Steps:

  • Peel apples and cut in half lengthwise; remove cores. In a large saucepan over medium heat, bring the water, sugar and candies to a boil, stirring constantly until sugar and candies are dissolved. Reduce heat; carefully add apples. Cook, uncovered, until apples are tender, about 8 minutes., With a slotted spoon, transfer apples to a serving dish; pour syrup over apples. Serve warm or chilled. Garnish with mint if desired.

½ cup candy-coated milk chocolate candies

Steps:

  • Insert wooden craft sticks or lollipop sticks into the cores of the apples at the stem. Place the roasted peanuts and candies on separate plates. Set aside.
  • Place the chocolate into a metal or glass bowl and set over a pan of barely simmering water. Stir frequently until melted. Remove from the heat. I came up with this recipe to try and duplicate the apple rings that I used to have when I was growing up.

8 apples, peeled and cored
2 cups water
1 cup sugar
4 ounces red cinnamon candies

Steps:

  • Slice the apples into thin rings.
  • In a dutch oven or soup kettle put the water, sugar and red cinnamon candies.
  • Bring the mixture to a boil and then reduce heat to medium, stirring occasionally.
  • When the cinnamon candies have dissolved, add the apple rings.
  • Simmer for 15 minutes on lowish heat until the apples are tender.
  • While the apples are simmering, about every 5 minutes gently stir the mixture.
  • When the apples are cooked, turn off the heat and allow the apples to cool in the syrup.
  • They will continue to darken in color as they sit in the syrup.
  • Serve either chilled or at room temperature.

Unsalted butter, for parchment paper
2 cups sugar
3/4 cup water
1/2 cup light corn syrup
1/2 teaspoon red food coloring, (optional)
6 medium apples, or 12 lady apples

Steps:

  • Line a baking sheet with parchment paper; butter parchment, and set aside. In a medium heavy-bottomed saucepan, combine sugar, 3/4 cup water, corn syrup, and food coloring, if using. Bring to a boil over high heat; reduce heat to medium-high. Insert candy thermometer and continue to boil until temperature reaches between 300 degrees and 310 degrees (hard crack stage), about 20 minutes.
  • Meanwhile, insert a wooden stick into the top of each apple, pushing about halfway through; set aside. When mixture reaches temperature, immediately remove from heat. Working quickly, dip apples in sugar mixture until completely coated. Transfer to prepared baking sheet; allow to cool.
