CHOCOLATE BALLOON BOWLS

12 ounces dark or semisweet chocolate chips
3 tablespoons coconut oil
3 ounces chocolate wafers

Steps:

  • Add the chocolate and coconut oil to a glass bowl and place over a pot with simmering water until melted. Whisk the mixture together, take the bowl off the heat and let cool to room temperature.
  • Meanwhile, blow up the water balloons. Place a sheet of parchment paper on a baking sheet and spread out the wafers on the parchment.
  • Dip one end of each balloon into the cooled chocolate mixture and place each balloon chocolate-side down on top of a wafer, waiting a second before releasing to set. Allow to set completely, refrigerating if desired to speed up the process.
  • Pop the balloons and fill with your favorite candy or snack.

8 ounce white chocolate, chopped
2 tbsp unsalted butter
1 ¼ cup milk
3 large egg yolks
3 tbsp sugar
2 tbsp cornstarch
2 tsp gelatin powder, softened in 3 Tbsp cold water
1 cup whipping cream
8-10 mini balloons
4 ounce bittersweet chocolate, chopped
1 recipe White Chocolate Mouse, chilled
raspberries or chocolate shavings, for garnish

Steps:

  • For the white chocolate mousse, place the white chocolate and butter in a medium bowl, with a strainer placed over it. Heat the milk to just below a simmer. In a separate bowl, whisk the yolks, sugar and cornstarch together. Whisk the hot milk into the egg mixture gradually, whisking while adding. Return this to the pot and continue to whisk over medium heat until glossy and thickened, about 4 minutes then stir in the softened gelatin. Pour this through the strainer and stir until the chocolate and butter has melted. Cool the chocolate mixture to room temperature.
  • Whip the cream until it holds a soft peak and fold this into the chocolate mixture. Chill the mousse until set slightly but still soft, about 90 minutes.
  • For the chocolate cups, inflate and tie the mini balloons. Give them a little wipe with a damp cloth and allow them to dry. Have ready a parchment-lined baking tray.
  • Melt the chocolate in a metal bowl, placed over a pot of barely simmering water, stirring gently until melted. Remove the chocolate from the heat.
  • Dip the balloons halfway into the chocolate on a angle, and lift and rotate as dipping repeatedly, creating a tulip shape. Shake off excess chocolate and place each balloon onto the parchment-lined tray. Chill the balloons until the chocolate has set.
  • Use a pin to gently pop the balloon and let the air out slowly. Lift the balloon out of the cup and discard. Pipe the white chocolate mousse into the cups and top with raspberries or chocolate shavings. Chill until ready to serve.

2 large eggs, room temperature
1 teaspoon vanilla extract

1 teaspoon salt
1 teaspoon baking soda

  • Preheat oven to 375°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In another bowl, whisk flour, cocoa mix, baking cocoa, salt, baking soda and baking powder; gradually beat into creamed mixture. Gently stir in marshmallow bits and chocolate chips., Drop dough by tablespoonfuls 2 in. apart onto greased baking sheets. Bake until set, 10-12 minutes. Remove to wire racks to cool completely.

12 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
Mousse
8 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
3 tablespoons water
3 large egg yolks
1/4 cup powdered sugar
1/2 cup ground toasted hazelnuts
2 tablespoons Frangelico (hazelnut liqueur)
1 1/2 cups chilled whipping cream
1/4 cup chopped toasted hazelnuts

Steps:

  • For cups:
  • Line 10 muffin cups with paper liners. Melt chocolate in top of double boiler over simmering water, stirring until smooth. Spoon 1 tablespoon melted chocolate into each paper liner. Using pastry brush, brush chocolate over bottom and up sides of liners to coat evenly. Freeze until chocolate firms, about 30 minutes
  • Remelt chocolate; add 1 tablespoon to each cup and brush over bottom and up sides, forming second coat. Freeze until completely set, about 1 hour. (Can be made 1 day ahead. Cover; keep frozen.)
  • For mousse:
  • Melt chocolate in top of double boiler over simmering water, stirring until smooth. Cool briefly.
  • Meanwhile, combine water, yolks and powdered sugar in large metal bowl. Set bowl over simmering water in base of double boiler and whisk until mixture is frothy and candy thermometer registers 160°F, about 6 minutes. Remove from over water. Using electric mixer, beat until thick and cool, about 3 minutes. Fold cooled chocolate, then ground hazelnuts and Frangelico into yolk mixture. Beat cream in medium bowl until stiff peaks form. Fold into chocolate mixture in 3 additions.
  • Peel paper liner from each chocolate cup. Arrange cups on platter. Pipe mousse into cups, dividing equally. Sprinkle chopped hazelnuts over. Serve immediately or chill up to 1 day.

300g chocolate (we used dark, but choose your favourite)
a dessert of your choice (we used ice cream and honeycomb)
4 small balloons

Steps:

  • Break the chocolate into small pieces. Put in a bowl suspended over a pan of simmering water and leave to melt. Remove from the heat and leave to cool for 5 mins. Meanwhile, blow up your balloons - you want each bowl to be about 10cm wide, so try to pick small balloons and don't blow them up too much. Tie with a knot.
  • Line a baking tray with parchment. Holding the knotted end of the balloon, dip it into the melted chocolate to create your bowl shape. Stand it on the tray and hold the balloon for a few secs until the chocolate pools around the base allowing you to let go of the balloon. Continue with the remaining balloons. Chill for at least 30 mins or until set.
  • When the chocolate has set, pop the balloons and carefully peel them away from the bowls. Fill with your chosen dessert - ice cream is good because it keeps the bowls cold.

  • Blow up 12 balloons, inflating them only to the point that the bottom 1/3 of the balloon will be the perfect size for a chocolate cup. You definitely won’t inflate the balloon to it’s full capacity. Gently wash the balloons with warm water and let them dry completely (to avoid seizing the chocolate with little drops of water). Set the balloons aside.
  • Melt the chocolate in a heatproof bowl in the microwave, taking care not to overheat the chocolate or it will seize and harden. If you want to avoid the white “blooming” lines that can appear in dried chocolate, reserve about 2 tablespoons of unmelted chocolate and stir it into the warm, melted chocolate until all the chocolate bits are melted and smooth. This is a quick and dirty way to temper chocolate.
  • Take a balloon and press it into the chocolate so the chocolate comes about 1/3 of the way up the balloon. Set the balloon on a lined baking sheet to dry. Once all the balloons have been dipped, allow the chocolate to set in a cool location (like the refrigerator or a cool storage room or non-fumy garage). Don’t discard the chocolate until you have removed the balloons from the cups, in case there is any breakage that can be repaired. Once the chocolate has set, bring the trays of balloons to room temperature and let them sit for 5 minutes or so. You don’t want the chocolate to soften too much, but you want to take the chill off a little bit.
  • Carefully snip a tiny cut in the top of the balloon, holding on to the balloon, and avoiding a huge cut (this could cause the chocolate to shatter). The goal is slow and easy here. Let the balloon gently deflate. When it has released all the air, gently press the bottom of the balloon while peeling the balloon away from the chocolate. Again slow and easy. If you use your fingers to press down on the balloon while peeling it away from the edge, it will help the process.

  • Clean the balloons. Using a damp paper towel, clean each balloon to remove any powder, residue or dust.
  • Dollop the chocolate. Drop the melted bittersweet chocolate, 1 tablespoon at a time, 2–3 in. apart on a parchment paper-lined baking sheet. There should be eight circles.
  • Drizzle. Drizzle 1 tablespoon of white chocolate over the bittersweet chocolate. Swirl the white chocolate slightly into the bittersweet chocolate with a toothpick or wooden skewer.
  • Dip the balloons. Holding the tied end, dip 1 balloon halfway into the bowl of melted bittersweet chocolate, rocking it back and forth slightly to coat.
  • Attach the balloons. To secure the balloons to the baking sheet, lightly press each balloon dipped side down on top of one of the chocolate dollops.
  • Pop the balloons. Using a toothpick or wooden skewer, gently pierce each balloon. Peel each ballon out of its chocolate bowl.
  • Fill the bowls. Fill the chocolate bowls with ice cream, fresh fruit, candy or any of your favorite sweet treats. Pro Tip: Almost any treat can be served in these bowls, just so long as its not hot.
