1 cup small shrimps (cleaned)
1 cup cornstarch
1/4 cup flour
1 1/2 cups mung bean sprouts (togue)
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 piece raw egg
1/4 teaspoon baking powder
1 1/4 cups water
2 cups cooking oil

Steps:

  • Combine cornstarch, flour, baking powder, egg, water, salt, and ground black pepper then stir until diluted.
  • Add the shrimps and mung bean sprouts in the mixture and lightly stir to distribute.
  • Heat a frying pan or small cooking pot and pour-in the cooking oil.
  • When the oil is hot enough, scoop about 2 to 3 tablespoons of the mixture and quickly (but cautiously) drop it in hot oil.
  • Cook each side for 2 to 3 minutes or until the color turns golden brown. Please note that cooking time may vary. Repeat this step until the entire mixture is consumed.
  • Remove the deep-fried ukoy from the pan and place in a plate lined with paper towel to absorb the oil.
  • Remove the paper towel and serve with sinamak.

Ukoy recipe using papaya and squash is not only healthy but a tasty appetizer or main dish. Crispy shrimp and vegetable fritters that gets better dipped in spicy, garlicky, vinegar.

3 cups green papaya (grated)
2 cups calabasa (squash) (grated)
10 large shrimps (unshelled, with head) (or 1 ½ cup small shrimps)
1 medium onion (sliced)
4-5 cups cooking oil
1 cup cornstarch
1 cup all purpose flour
1 tbsp baking powder
1 tsp salt
1 tsp ground black pepper
1 ½ cup water
3 tsp achuete powder (for coloring )
1/2 cup vinegar
1 small red onion (chopped)
2 cloves garlic (crushed)
2 pcs. bird's eye chili
salt and pepper to taste

Steps:

  • In a large mixing bowl, mix together grated green papaya and grated squash. Set aside.
  • In a different mixing bowl. Mix together cornstarch, all-purpose flour, baking powder, salt and pepper.
  • Add water gradually while whisking until smooth and no traces of flour left. Tip in achuete powder and mix until fully incorporated.
  • Heat cooking oil using a deep frying pan over medium high heat.
  • In a small plate or saucer, pour a 2-3 tbsp of batter and then place 1 cup of grated papaya and calabasa.
  • Place 2 -3 pieces of onion slices then add 1 large shrimp or 5-6 small shrimps on top. Lastly, pour another 2 - 3 tbsp of batter on top.
  • When oil is hot enough, slide the ukoy gently into the frying pan and try to anchor the batter with a spatula so it won't spread out.
  • Cook each side for 4 minutes or until golden and crispy. Repeat the process until you finish all the batter and papaya. Serve and enjoy. Bon Appetit!

1 medium green papaya, peeled, seeded and shredded
1 egg, beaten
1 cup cornstarch
1/2 cup flour
1 cup water
1 teaspoon fish sauce
1 teaspoon salt
1/2 teaspoon pepper
1/2 small kalabasa, peeled, seeded and julienned
3 shallots, peeled and sliced thinly
1/2 cup green onions, chopped
canola oil
1/2 pound small shrimps, tendrils trimmed
1 cup vinegar
2 to 3 Thai chili peppers, minced
1/2 small red onion, peeled and diced
4 cloves garlic, peeled and minced
salt and pepper to taste

Steps:

  • In a bowl, combine shredded papaya and about 1 tablespoon salt. Let sit for about 10 minutes and using hands, squeeze to dispel juices. Rinse under cold running water and squeeze to remove excess liquid.
  • In a large bowl, combine egg, cornstarch, flour, water, fish sauce, salt, and pepper. Whisk together until well-blended and smooth.
  • Add papaya, kalabasa, shallots and green onion to batter and stir to combine.
  • In a large skillet over medium heat, heat about 2-inch of oil until hot.
  • On a large spoon, place about 2 to 3 tablespoons of the mixture and press 1 to 2 shrimps on top.
  • Gently slide mixture into the hot oil and cook for about 3 to 4 minutes on each side or until golden brown and crisp. Cook in batches as necessary.
  • Remove from heat and drain on a wire rack set over a baking sheet. Serve hot with spiced vinegar dip.

1/4 cup annatto water
1 1/2 cups shrimp broth
1 egg, well beaten
cooking oil
2 cups bean sprouts
1 cup chopped green onion
2 pieces tofu, cut into strips
1/2 lb small shrimp, cleaned
1 cup papaya

Steps:

  • Sift the first five batter ingredients together in a bowl.
  • Blend in the annatto water, broth and egg.
  • Beat until smooth.
  • Heat oil in high heat for deep-frying.
  • Set aside.
  • Arrange a bed of bean sprouts and green papaya in a saucer.
  • Top with some green onion, tofu strips and shrimps.
  • Add about 1/3 cup of batter.
  • Slide the mixture carefully into the hot oil.
  • Fry until crisp and brown on both sides.
  • Drain.
  • Serve with a mixture of vinegar and crushed garlic for dipping seasoned with salt and pepper.
