BREAKFAST EGG SANDWICH
A bread free breakfast egg sandwich with all of the flavor and none of the guilt!

- 1. Preheat the oven to 425°. Cut the 1/2 bell pepper in 1/2 again, then place on a foil or parchment lined pan and place in the preheated oven.2. Heat the bacon in a skillet over medium-high heat. Cook through, then remove to a paper towel to drain.3. Coat the inside of the rings with coconut oil, then place in the skillet in the leftover bacon grease.4. Crack an egg into each ring, then pierce each yolk and scramble the whites and yolks together just a bit.5. While eggs are cooking, scoop out the avocado into a bowl and smash with the back of a fork.6. Let the eggs cook until set and almost firm, then use the tines of the fork to loosen the rings, removing them and flipping the eggs, cooking for a few minutes more, until cooked through, then remove from the pan.7. Take the bell pepper out of the oven, then stack your egg, bell pepper, a scoop of avocado and bacon. Top with the other egg.8. Eggwich!

This is a fun way to make a fried egg sandwich. I'm probably not the first person to think of this. The plus is that the egg can't slip out of the bread.

Steps:
- Note: If you are adding tomato, bacon or ham, put it in the skillet first. Arrange the ham or bacon to fit the bread. Break the egg over the tomato, bacon or ham.
- Break the egg and yolk into a buttered/sprayed preheated skillet on medium low heat.
- Try to keep the egg about the same size as your bread.
- Salt and pepper to taste.
- Place a slice of bread on the egg when the egg is almost cooked through but still gooey on top. The egg will adhere to the bread when you've finished the sandwich.
- Flip the sandwich over to brown the bread.
- Place a slice of cheese on top of the egg. To keep thinly sliced bread from burning, place a cover over the skillet to melt the cheese faster.
- Place the second slice of bread on the egg and cheese when the cheese begins to melt.
- Turn the sandwich over to brown the other side.
- Enjoy.

- Spray a skillet with cooking spray; heat over medium-high. Drop two eggs, separately, into hot skillet. This works best if you have egg molds to make a nice round shape, if not, simply babysit the eggs and continue to push them inwards while cooking, to keep them each fairly round. - Add water to a medium skillet to depth of 2 inches; bring to a boil. (While water comes to a boil, prepare Cheddar Cheese Sauce.) Reduce heat to low.
