Home-Cured Holiday Ham image

There are many reasons for making your own holiday ham: bragging rights that you actually did this, but also that you can flavor your ham any way you want and you can control the salt content.

1 (7 pound) fresh, bone-in pork shoulder ("picnic") arm roast, with the skin still on
6 quarts water, divided
18 ounces kosher salt
2 cups brown sugar
7 teaspoons pink salt #1 (curing salt)
1 tablespoon pickling spice, or to taste
¼ cup Dijon mustard
¼ cup maple syrup
1 pinch cayenne pepper
1 pinch salt

Steps:

  • Place kosher salt, brown sugar, pickling spice, and pink salt in a container large enough to hold the brine and the ham.
  • Bring 2 quarts of water to a boil and pour over the brine ingredients; whisk to dissolve. Pour in 1 gallon fresh cold water to cool down the mixture.
  • Score the skin side of the pork roast with a sharp knife. Cut into the fat beneath the skin but not into the meat. Score about 1 inch apart, then score in the opposite direction to get the classic diamond-shaped pattern.
  • Lower scored roast into the cooled brine, skin side up. Use a plate to weigh down the roast so that it cures fully submerged in the liquid. Refrigerate for 1 day for every 2 pounds of pork (for a 7 pound roast, cure for at least 2 1/2 days). Turn the roast over halfway through the brining process.
  • Remove roast from brining liquid. Discard the brining liquid and transfer the roast back to the brining container. Cover the roast with fresh cold water to rinse off some of the salt. Depending on how salty you want your ham, you can soak it for just a few minutes or overnight. Remove roast from the water and blot dry with paper towels.
  • Preheat oven to 325 degrees F. Add a cup of water to a roasting pan with 2 whole star anise. Place roast on a rack in the roasting pan.
  • Roast until ham reaches an internal temperature of 130 to 135 degrees F, about 2 hours. Ham will not be fully cooked at this point. If water has nearly evaporated, add a splash more. Increase oven temperature to 425 degrees F. Continue to roast until skin is browned and crispy and ham reaches an internal temperature of 145 to 150 degrees F.
  • To make the optional glaze, mix the mustard, maple syrup, cayenne pepper, and salt together in a bowl. Brush glaze on the ham at this point, not before. Return roast to oven for about 5 minutes to crisp it even further.

1 can (20 ounces) sliced pineapple
1/2 spiral-sliced fully cooked bone-in ham (8 to 10 pounds)
2/3 cup maraschino cherries
1-1/2 cups packed brown sugar
1/2 teaspoon seasoned salt

Steps:

  • Drain pineapple, reserving juice. Place ham on a rack in a shallow roasting pan. Secure pineapple and cherries to ham with toothpicks. Combine brown sugar and seasoned salt; rub over ham. Gently pour pineapple juice over ham., Bake, uncovered, at 325° for 1-1/2 to 2 hours or until a thermometer reads 140° and ham is heated through. Baste frequently with brown sugar mixture.

1 boneless fully cooked ham (about 6 pounds)
1 tablespoon whole cloves
1 can (20 ounces) sliced pineapple
1 cup apricot preserves
1 teaspoon ground mustard
1/2 teaspoon ground allspice
Maraschino cherries

Steps:

  • Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Score the surface of ham, making diamond shapes 1/2 in. deep; insert a clove in each diamond. Bake, uncovered, 1-1/2 hours., Drain pineapple, reserving juice. In a small saucepan, combine pineapple juice, preserves, mustard and allspice. Bring to a boil; cook and stir for 10 minutes or until slightly thickened. , Spoon half of the glaze over ham. Secure pineapple slices and cherries on top and sides of ham with toothpicks., Bake 30-45 minutes or until a thermometer reads 140°, basting twice with remaining glaze.

I make this ham at the holidays and always receive rave reviews, this ham will be the star attraction at you table --- do not use sugar-free 7-up for this, make certain before starting this that you have a large enough roasting pan with a rack that will fit into the pan, a 12-pound ham will take a bit of time to bake so make certain that you have all your other dishes made ahead of time --- if you don't want to go the extra step with the pineapple and cherries you may omit and just make the ham using the brown sugar coating :)

1 (12 lb) bone-in ham
1/3-1/2 cup whole cloves
1/2 cup brown sugar, plus
2 tablespoons brown sugar, packed
1/4 teaspoon mustard powder
1 (20 ounce) can sweetened pineapple rings (in syrup)
2 (4 ounce) jars maraschino cherries
1 (12 ounce) can 7-Up soda

Steps:

  • Heat oven to 325 degrees.
  • Using a sharp knife "score" the rind of the ham with diamond patterns.
  • Place the ham onto a rack in a very large WELL GREASED roasting pan.
  • Insert a meat thermometer into the ham, making certain that the thermometer does NOT touch the bone.
  • Press whole cloves into the center of each diamond.
  • Drain the pineapple juice from the pineapple rings into a bowl, then stir in the brown sugar, mustard powder and 7-Up soda; mix very well to combine.
  • Coat the complete ham with the brown sugar mixture.
  • Place the pineapple rings over the outside of the ham.
  • Place a whole maraschino cherry into the center of each pineapple ring, then attach with a wooden toothpick.
  • Bake uncovered for 4-5 hours, basting frequently with the pan juices or until the internal temperature reaches 160 degrees F.
  • Remove the ham to a serving platter, then let sit for about 20 minutes.
  • Remove all toothpicks before serving.
  • Slice ham and enjoy!

1 14-16-pound whole cured, smoked bone-in ham
2 cups sweet (Auslese) Riesling, divided
2 tablespoons (1/4 stick) unsalted butter
1/4 cup finely chopped shallots
3 sprigs thyme plus 2 teaspoons fresh thyme leaves
1/2 cup whole grain mustard
1 tablespoon honey
1/2 teaspoon freshly ground black pepper
Small pinch of kosher salt

Steps:

  • Arrange a rack in lowest level of oven; preheat to 300°F. Leaving fat intact, remove outer rind from most of ham, leaving a band around the end of the shank bone. Score fat crosswise (do not cut into meat) on top of ham with parallel cuts spaced 1/2" apart. Place ham in a large roasting pan. Boil 1 cup Riesling and 7 cups water in a saucepan for 5 minutes. Pour into bottom of roasting pan. Bake ham, basting with pan juices occasionally, until an instant-read thermometer inserted into center of ham registers 110°F, 2 1/2-3 hours.
  • Meanwhile, melt butter in a medium skillet over medium heat. Add shallots and thyme sprigs; cook, stirring often, until shallots are very soft, about 10 minutes. Remove pan from heat; stir in the remaining 1 cup Riesling. Return to stove. Increase heat to medium-high, bring to a simmer, and cook until reduced to 1/4 cup, about 8 minutes. Remove the thyme sprigs and transfer mixture to a food processor. Add thyme leaves, mustard, honey, pepper, and salt. Process until well blended.
  • Remove pan from oven and increase heat to 350°F. Using a pastry brush, spread Riesling mixture over ham. Return pan to oven and bake ham, tenting with foil if browning too quickly, until internal temperature registers 135°F and crust is golden brown, 15-30 minutes.
  • Transfer ham to a large platter. Let rest for 30 minutes before carving. Skim fat from pan juices, reheat, and pour juices into a medium pitcher; serve alongside.

This is my mom's holiday ham recipe. She would cook this easy recipe on my birthday. Made with maraschino cherries, sliced pineapples, brown sugar, honey and much more yummy ingredients. You'll love this ham dinner, and it's not just for the holidays, but great any time of year!

1 cup maple syrup
1 cup orange juice
1 cup ginger ale
½ cup brown sugar
½ cup honey
1 (10 ounce) jar maraschino cherries, halved
1 (12 pound) fully-cooked, bone-in ham
1 (15.25 ounce) can pineapple slices in juice, drained
1 box round wooden toothpicks

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together the maple syrup, orange juice, ginger ale, brown sugar and honey. Stir in the juice from the maraschino cherries, and half of the cherries. Score the outer edge of the ham with a sharp knife in a diamond pattern. Cuts should be about 1/4 inch deep. This will allow the ham to soak up the juice.
  • Place the ham into an oven bag, and carefully pour the juice mixture over it, keeping all of the juice in the bag. It may look like there is too much juice, but the ham will soak it up while baking. Place the pineapples onto the top of the ham, and secure with toothpicks. Place cherries into the centers of the rings, and secure with toothpicks also. Tie the end of the bag closed with the ties provided, place in a large roasting pan, and cut a few small slits in the top of the oven bag.
  • Bake the ham for 2 hours in the preheated oven. The internal temperature should be 160 degrees F (80 degrees C) when done. Be sure not to touch the bone when taking the temperature. Remove ham from bag to a serving plate, and let stand for 10 minutes before carving.
