One of our favourite foodie trends is taking a beloved recipe or dish and giving it a new twist. This recipe takes all the flavours of a classic banana split (strawberry, pineapple, banana, coconut and chocolate) blended into a luscious, retro milkshake.

4 large scoops vanilla ice cream
1 banana
½ cup frozen sliced strawberries
½ cup crushed pineapple with juice
¼ cup chocolate syrup, or as needed

4 Maraschino cherries

Steps:

  • Combine ice cream, banana, strawberries, pineapple and chocolate syrup in a blender. Blend until smooth.
  • Divide shake between 2 large (or 4 smaller) glasses. Squirt a generous amount of coconut whipped cream on top. Garnish with additional chocolate syrup and a cherry (if using). Serve immediately.

After playing around making several layered shots using Amarula, I decided to make one that I thought would be pretty and certainly taste good! It is a 5 layer banana split and it is yummy! It just seems like Amarula makes everything taste so good! If you have never tried it... I would suggest getting a bottle!

1 1/2 cups flour
1/2 cup cornstarch
2 tablespoons baking powder
2 tablespoons bakers' sugar
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
2 yolks
1 1/2 cups club soda
2 bananas
Vegetable oil, for deep frying
2 cups sugar
1/4 cup of water
2 tablespoons of unsalted butter
1/2 cup of heavy cream
Pinch kosher salt
1 pint of vanilla bean ice cream
1/4 cup banana chips
1/4 cup toasted pecans

Steps:

  • Preheat your oil in a heavy-based pot for deep frying to 365 degrees F.
  • In a large mixing bowl combine flour, cornstarch, baking powder, sugar, salt, and cinnamon. Make a well in the center and add the yolks and club soda. Using a whisk, stir from the inside working your way out, slowly incorporating the dry ingredients without forming any lumps. Peel the bananas and dip in the batter and coat well. Fry in hot oil for 4-5 minutes until batter is puffy and golden brown. Drain on paper towels when done.
  • While bananas are cooking, prepare caramel sauce. Combine the sugar and water in a large heavy saucepan over medium heat. Cook, swirling the pot around, until the mixture is a deep caramel color and looks like syrup, about 8 minutes. Add the butter then carefully pour in the cream (it will bubble up) and continue to cook for another minute. Add a pinch of salt then cool before serving.
  • To serve the banana split, cut the bananas lengthwise and top with a large scoop of vanilla bean ice cream. Pour warm caramel sauce over the top and finish with a sprinkle of banana chips and toasted pecans.

One 4-ounce bar semisweet chocolate, chopped
Small pinch cayenne pepper (less than 1/16 teaspoon)
1 tablespoon unsalted butter
4 slightly underripe bananas, split lengthwise in half, then cut crosswise in half
1/4 cup light brown sugar
1/3 cup sliced almonds, toasted

Steps:

  • For the chocolate sauce: Combine the chocolate and 1/4 cup water in a heavy small saucepan. Stir over medium-low heat until the sauce is melted and smooth. Remove from the heat. Stir in small pinch cayenne pepper. Set aside.
  • For the bananas: Place the brown sugar in a pie dish or on a plate. Toss the bananas in the brown sugar until nicely coated. Melt the butter in a heavy large skillet over medium-high heat until the butter becomes golden brown. Add the bananas to the hot pan cut-side down. Turn the bananas over as soon as they are golden brown and the sugar forms a crunchy coat on the bananas, about 30 seconds per side (do not allow bananas to become soft and mushy). Divide the bananas between 2 shallow bowls or plates. Spoon the chocolate sauce over the bananas. Sprinkle with the toasted almonds, and serve immediately.
  • Cook's Notes: To toast the almonds, arrange them in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven for 6 to 8 minutes until lightly toasted. Cool completely before using.
  • An alternate way to melt the chocolate is to combine the chocolate and water in a small metal bowl over a small saucepan of simmering water, and stir the chocolate mixture until melted and smooth. Remove the bowl from over the water and set aside.

Steps:

  • In a small bowl, combine crumbs and melted butter. Set aside 1/2 cup; press remaining crumbs into a 15x10x1-in. pan. Slice bananas widthwise and layer over crust. Cut ice cream widthwise into 10 slices; place over bananas. Spread edges of ice cream slices to cover banana and form a smooth layer. Sprinkle with nuts. 2 quarts vanilla ice cream, softened
12 ounces semisweet chocolate, chopped
1 very ripe banana, mashed (1/2 cup)
1 cup heavy cream
2 pints pistachio ice cream, softened
2 pints chocolate ice cream, softened

8 ounces semisweet chocolate, chopped
2 tablespoons vegetable shortening
1/4 cup chopped pistachios, for garnish

Steps:

  • Make the bombe: Spread vanilla ice cream in an even layer on bottom and up sides of a 5-quart heatproof bowl with a 9 1/2-inch-diameter rim. Ice cream should form a concave layer that comes up to the rim of the bowl. Freeze until set, about 20 minutes. Using an offset spatula, smooth the surface of the ice cream layer. Freeze again until very firm, at least 1 hour.
  • Meanwhile, place chocolate and banana in a heatproof bowl. Heat cream in a saucepan until bubbles begin to form around edges. Pour over chocolate and banana, and let stand for 1 minute. Whisk until combined. Set bowl over a pot of simmering water, and whisk until chocolate melts. Refrigerate, stirring occasionally, until thick and spreadable, about 1 hour.
  • Spread chocolate-banana mixture in a thin, even layer over entire surface of vanilla ice cream layer. Freeze until firm, about 30 minutes.
  • Spread pistachio ice cream in a flat, smooth layer over chocolate-banana mixture, but not up sides. Freeze until firm, about 30 minutes.
  • Spread chocolate ice cream in a flat, smooth layer over pistachio ice cream. Freeze until firm, about 30 minutes.
  • Place banana cake over chocolate ice cream, top side up, and press gently until cake fits snugly against ice cream. (If vanilla ice cream and ganache layers extend beyond top of cake, trim them with a sharp knife.) Cover with plastic wrap, and freeze overnight (or up to 3 days).
  • To unmold bombe, dip bowl in a larger bowl of very hot water or use a small kitchen torch to warm outside of bowl. Continue dipping or torching bowl until bombe releases when inverted onto a serving platter. Remove bowl, wipe ice cream drips off platter, and freeze until bombe is very firm, about 1 hour.
  • Make the topping: Place chocolate and shortening in a heatproof bowl set over a pot of simmering water. Stir until chocolate and shortening melt. Let cool slightly, then slowly pour on top of bombe, spiraling in concentric circles to create a solid center with long drips down the sides. Sprinkle pistachios on top, and freeze until chocolate is set, about 10 minutes.
  • Run a large knife under hot water, and dry well. Use it to slice bombe into wedges, as you would a cake, wiping knife clean between cuts.

Steps:

  • Melt butter in a 12-inch heavy skillet over medium heat, then add bananas in 1 layer and sprinkle with brown sugar. Increase heat to medium-high and cook bananas, gently turning once and shaking skillet occasionally, until sugar is caramelized, 3 to 4 minutes. Divide bananas among 4 bowls, leaving any remaining caramel in skillet.
