- Heat oil in a wok. Add ginger, red chilli paste, vegetable and sauté for a min.
- Add oyster sauce, red chilli paste, stock, seasoning, sugar, white pepper , dark soy and cornflour and adjust the gravy.
- Add tofu and fried nuts.
- Finish with garlic oil and serve hot.

- Bring vegetable/ peanut oil to high heat in a frying pan or wok. Add the tofu slices and fry 2-3 min on each side, until golden brown. Remove from the pan onto a plate with a kitchen towel to drain the oil, and set aside.
- Remove excess oil from the pan, leaving about 1 tbsp and return to stove. Bring to high heat again and add the ginger, garlic, chili and scallions. Cook 1 min until fragrant.
- Slowly stir in the cornstarch mixture and lower heat to medium-low. Simmer 5-6 min, until sauce thickens.

- Prepare your silken tofu by cutting it in half lengthwise and then slicing it crosswise into ½-inch slices. Use your knife or cleaver to transfer each half of the cut tofu to a large heatproof rimmed plate or shallow bowl (the dish should be deep enough to hold the steaming liquid and sauce). Lay the tofu on the plate so the pieces are fanned across either side. Sprinkle a pinch of salt evenly over the tofu.
- Next, steam the tofu. Add 4 cups of cold water to a wok, place the tofu on a steaming rack inside, and cover the wok. (You can set up your steaming apparatus however you’d like. Check out our full article on how to set up a steamer, even without special equipment.)
- Turn the heat to medium-high. The water should boil in about 7 minutes. After it has begun boiling, continue to steam for another 3 minutes––a total of 10 minutes.
- When the tofu goes into the steamer, heat a skillet over medium-high heat. Add 1 tablespoon of oil to the pan and brown the oyster mushrooms. Season with salt to taste. Let them brown and caramelize—flipping them when they caramelize on one side.

- In a small saucepan, bring the water and black beans to a boil over high heat. Lower the heat to simmer and cook for 20 minutes. Strain and use immediately or partially cover, cool and refrigerate for up to several days. This makes about 3 cups of stock, more than is needed for the remainder of the recipe; the stock will keep, covered and refrigerated, up to 1 week.
- Cut the tofu into chunky matchboxes, each about 1 1/2 inches by 2 inches by 1/2 inch. Line a plate with a dish towel or double layer of paper towels, then place the tofu on top to drain for 5 to 10 minutes.
- Meanwhile, in a bowl, combine the one-fourth teaspoon salt, soy sauce and black bean stock to make the seasoning liquid. Taste and season with additional salt if desired. Set this seasoning liquid with the other ingredients near the stove.
- Heat the oil in a large nonstick skillet over high heat. Blot dry the tofu, then pan-fry until golden brown and lightly crisp, 3 to 4 minutes per side. Transfer to a plate, leaving the oil behind.
