1/2 head iceberg lettuce, cored
1/4 cup mayonnaise
1/4 cup sour cream
1/4 cup buttermilk
Salt and freshly ground black pepper
Dash hot sauce (recommended: Tabasco)
2 tablespoons chopped chives
1 teaspoon chopped garlic
1/2 lemon, juiced
1/2 cup blue cheese crumbles
1/4 cup halved cherry tomatoes
1/2 avocado, diced
2 slices bacon, cooked crisp and crumbled

Steps:

  • Slice the lettuce into thick wedges. In a medium-sized bowl, add the mayonnaise, sour cream, buttermilk, salt and pepper, to taste, hot sauce, chives, garlic, and lemon juice. Whisk together, then slowly fold in the blue cheese crumbles. Arrange the lettuce on a serving platter and drizzle with the dressing. Garnish with tomatoes, avocado, and bacon. Serve.

1/2 cup buttermilk
1/4 cup mayonnaise
1/4 cup plain low-fat Greek-style yogurt
1 tablespoon fresh lemon juice
1/2 teaspoon coarsely chopped fresh thyme
Coarse salt and freshly ground white pepper
4 ounces crumbled blue cheese
1 head fresh iceberg lettuce, trimmed and chilled
Sliced tomato, for serving (optional)

Steps:

  • Whisk together buttermilk, mayonnaise, yogurt, lemon juice, and thyme in a bowl; season with salt and pepper.
  • Gently stir in crumbled blue cheese. (Dressing may be stored, refrigerated in a covered container, for up to 3 days.)
  • Cut iceberg lettuce into wedges and drizzle with dressing. Serve with tomatoes, if desired.

4 ounces Roquefort blue cheese, crumbled
2/3 cup good mayonnaise, such as Hellmann's or Best Foods
1/3 cup plain Greek yogurt
1 tablespoon sherry vinegar
Kosher salt and freshly ground black pepper
4 tender inside celery stalks, trimmed and sliced crosswise 1/4 inch thick
6 radishes, trimmed and sliced into thin rounds
5 scallions, trimmed, white and green parts sliced 1/4 inch thick
1 large head iceberg lettuce, wilted outer leaves removed
4 to 6 ounces Roquefort blue cheese, crumbled
Fleur de sel

Steps:

  • For the dressing, place 4 ounces of blue cheese in a small bowl and microwave for 15 seconds, until it begins to melt. Place the mayonnaise, yogurt, warm blue cheese, sherry vinegar, 1/2 teaspoon salt, and 1/4 teaspoon pepper in the bowl of a food processor fitted with the steel blade and process until smooth. Set aside or refrigerate until ready to use.
  • For the salad, combine the celery, radishes, and scallions in a bowl. Slice the whole head of lettuce across to make four 3/4-inch-thick round disks and place each on a dinner plate. Spoon the dressing on the lettuce and sprinkle on a quarter of the vegetable mixture. Distribute the remaining crumbled blue cheese on the salads, sprinkle with fleur de sel and pepper, and serve.

Freshly cracked black pepper
2 large heads of iceberg lettuce, each cut into quarters
2 green onions, chopped

Steps:

  • Whisk mayonnaise, 1/2 cup blue cheese, yogurt, buttermilk, and vinegar in medium bowl until almost smooth. Mix in remaining blue cheese. Season dressing generously with cracked black pepper. (Can be made 1 week ahead. Cover and refrigerate.)
  • Arrange lettuce wedges on 8 plates. Spoon dressing over lettuce. Sprinkle with green onions and additional black pepper and serve.

This recipe reminds me of childhood. It's extremely retro, with an optional update. Definitely not for the nutrition-conscious. Did you know iceberg lettuce has the poorest nutritional content of all lettuces? The lettuce certainly won't boost your vitamin A or C levels, or fatten you up but the dressing sure will! This was in today's NY Times, an article about "loser lettuces" (iceberg and romaine) by Mark Bittman, the Minimalist. I would take exception with calling romaine a loser lettuce; unlike iceberg it has lots of nutrition. Then again, sometimes you just can't beat the crunchy cold of iceberg. I made this last night and it was just as I remembered it :)

1/2 cup blue cheese, crumbled
1 tablespoon fresh lemon juice (or more)
salt & fresh ground pepper
1 head iceberg lettuce, refrigerated, cored and cut into 8 wedges
1/2 cup pecans (optional) or 1/2 cup walnuts (optional)

Steps:

  • Mash yogurt with blue cheese, lemon juice, a pinch of salt and a grinding or two of pepper. Taste and adjust the seasoning, adding more lemon juice if necessary.
  • Place each wedge of iceberg lettuce on a plate, drizzle with dressing and sprinkle with nuts if using.

This is a simple and fantastic retro-diner salad that is based on a recipe from the January 2003 issue of Bon Appetit magazine. Another rare recipe that my picky DH actually likes! I often serve this to compliment one of his BBQ's, and sometimes add tomato wedges, especially if I have some that are garden fresh.

1 cup mayonnaise
4 ounces blue cheese, crumbled (about 3/4 cup)
1/2 cup plain nonfat yogurt
1/4 cup buttermilk
3 tablespoons white wine vinegar
fresh ground black pepper
2 heads iceberg lettuce, each cut into quarters
2 green onions, chopped

Steps:

  • In medium bowl, whisk together mayo, 1/2 cup of the blue cheese, yogurt, buttermilk, and vinegar until nearly smooth.
  • Mix in remaining blue cheese.
  • Season with black pepper.
  • (Dressing can be made 1 week ahead and stored in refrigerator).
  • Arrange lettuce wedges on 8 plates.
  • Spoon dressing over wedges.
  • Sprinkle with green onions and season with additional black pepper.

4 ounces crumbled blue cheese, room temp

1 dash Tabasco sauce

2 tablespoons finely chopped fresh chives
extra chopped chives (to garnish)

Steps:

  • Cut the lettuce into 4 wedges and place on chilled plates.
  • In a medium bowl, whisk together remaining ingredients, until the dressing is creamy but still slightly lumpy from the blue cheese.
  • Spoon a generous amount of dressing over each wedge of lettuce.
  • Garnish with the extra chives and serve.
