6 tablespoons butter, softened, divided
8 slices sourdough bread
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
3 tablespoons mayonnaise
3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
4 ounces Brie cheese, rind removed, sliced
2 medium ripe avocado, peeled and sliced

Steps:

  • Spread 3 tablespoons butter on 1 side of bread slices. Place bread, butter side down, in a large cast-iron skillet or on an electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie; add avocado slices. Sprinkle cheddar cheese mixture evenly over avocado slices. Top with remaining bread slices, toasted side facing inward. Spread the butter-mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.

1 ripe Hass avocado, peeled and pitted, cut into thin slices
3 tablespoons unsalted butter, softened

Steps:

  • Preheat oven to 400°F Cook bacon in the oven on a baking sheet with sides, turning strips over once, 12 minutes, or until crisp. Drain on paper towel.
  • Place half the cheddar cheese on half the bread slices. Neatly arrange tomato slices, bacon strips, and avocado slices on top of cheese, then top with remaining cheese slices and bread.
  • Heat 2 large heavy skillets or a griddle over medium-low heat. Carefully spread both sides of each sandwich with butter. Grill sandwiches, pressing down frequently with the back of a spatula, until bread is crisp and toasted to an even golden color and cheese is melted, about 2 minutes per side. I was craving some comfort food, and created this sub sandwich. I love the saltiness of the olives, the creaminess of the avocado and cheeses, the crispness of the lettuce, with just a little contrast of sweet from the pickles! I hope you enjoy! :D

1 hoagie roll
1 slice sharp cheddar cheese
1 slice mozzarella cheese
1 tablespoon mayonnaise
1/8 cup kalamata olive
1/8 cup stuffed green olive
1 teaspoon extra virgin olive oil
1/2 teaspoon grated lemon zest
1 small garlic clove, minced
1/4 teaspoon dried oregano
1/2 small avocado, sliced
3 -4 slices tomatoes
1/4 cup shredded lettuce (I used iceburg)
4 -5 slices sweet pickles (or 1 tbls. sweet relish)
1 pepperoncini pepper, sliced
salt and pepper (optional)

Steps:

  • Preheat your oven to broil.
  • Cut the hoagie roll in half lengthwise, and pull out some of the bread on each side to make room for the filling. Place the sliced cheeses on one side of the bread and put under broiler till just starting to get brown and toasty. Remove from oven and place on plate. Spread with mayonnaise on both sides. If using relish, place over the mayonnaise now.
  • Slice olives if desired(I left mine whole). Mix with olive oil, lemon zest, minced garlic and oregano. Place olive mixture on top of the cheese. Lay avocado slices over top of olives. Next place tomato slices over avocado. Then place shredded lettuce over tomatoes and lay pickles on top. If using relish add when spreading mayonnaise.
  • Salt and pepper to taste, put the sandwich together and enjoy! :D.
