4 eggs
1/2 cup sugar
2 cups prepared eggnog
1/2 cup flour
2 tablespoons melted butter
1 teaspoon vanilla
nutmeg
cinnamon

Steps:

  • Preheat oven to 350°.
  • In a blender, mix until smooth the first 6 ingredients in order listed.
  • Pour into greased 9" pie pan.
  • Sprinkle nutmeg and cinnamon generously on top.
  • Bake for 40-45 minutes or until knife inserted in middle comes out dry.

I love this dessert. It tastes like a coconut macaroon, and it is simple to make. Drizzle melted chocolate on top and it tastes like a "mounds" bar. This comes from Bisquick.

1 cup flaked coconut
3/4 cup sugar
1/4 cup butter or 1/4 cup margarine
1 1/2 teaspoons vanilla

Steps:

  • Heat oven to 350ºF.
  • Grease 9-inch pie plate.
  • Stir all ingredients until blended.
  • Pour into pie plate.
  • Bake 50 to 55 minutes or until golden brown and knife inserted in the center comes out clean.
  • Cover and refrigerate any remaining pie.

1 1/2 cups water
1/2 cup Bisquick
3 eggs
1/4 cup butter, softened
1 1/2 teaspoons vanilla
1 cup flaked coconut

Steps:

  • In a blender, combine all ingredients, except coconut.
  • Blend on low speed 3 minutes.
  • Pour into a greased 10 inch pie plate; let stand 5 minutes.
  • Sprinkle with coconut.
  • Bake in 350 degree oven for 35-40 minutes or until knife inserted near edge comes out clean.
  • Cool slightly. Refrigerate leftovers.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch pie plate.
  • Combine milk, sugar, biscuit mix, eggs, butter or margarine, and vanilla in blender container. Cover, and blend on low speed for 3 minutes. Pour into prepared pie plate. Let stand about 5 minutes. Sprinkle with coconut.
  • Bake for 40 minutes. Serve warm.

1 c shredded or flaked coconut
3/4 c granulated sugar

  • 1. Heat oven to 350^. Butter a 9 or 10- inch pie plate. Place all ingredients in blender container. Cover and blend on high 15 seconds. Pour in buttered pie plate. Bake until knife inserted in center comes out clean. 50-55 minutes; cool.
