Lemon & Dill Chicken image

Fresh lemon and dill create a quick Greek-inspired pan sauce for simple sautéed chicken breasts. Make it a meal: Serve with roasted broccoli and whole-wheat orzo.

4 boneless, skinless chicken breasts, (1-1 1/4 pounds)
Salt & freshly ground pepper, to taste
3 teaspoons extra-virgin olive oil, or canola oil, divided
¼ cup finely chopped onion
3 cloves garlic, minced
1 cup reduced-sodium chicken broth
2 teaspoons flour
2 tablespoons chopped fresh dill, divided
1 tablespoon lemon juice

Steps:

  • Season chicken breasts on both sides with salt and pepper. Heat 1 1/2 teaspoons oil in a large heavy skillet over medium-high heat. Add the chicken and sear until well browned on both sides, about 3 minutes per side. Transfer chicken to a plate and tent with foil.
  • Reduce heat to medium. Add the remaining 1 1/2 teaspoons oil to the pan. Add onion and garlic and cook, stirring, for 1 minute. Whisk broth, flour, 1 tablespoon dill and lemon juice in a measuring cup and add to pan. Cook, whisking, until slightly thickened, about 3 minutes.
  • Return the chicken and any accumulated juices to the pan; reduce heat to low and simmer until the chicken is cooked through, about 4 minutes. Transfer the chicken to a warmed platter. Season sauce with salt and pepper and spoon over the chicken. Garnish with the remaining 1 tablespoon chopped fresh dill.

This is one of my family's favorite recipes. Whenever I make chicken, this is the only way everyone wants it. It's so good and also easy to make.

Number Of Ingredients 10

2 tablespoons butter
2 tablespoons all-purpose flour
1/8 teaspoon salt
Dash pepper
1 cup milk
1/4 cup mayonnaise
1/2 teaspoon dill weed
1/4 teaspoon curry powder
6 bone-in chicken breast halves
1 tablespoon vegetable oil

Steps:

  • In a saucepan over medium heat, melt butter. Add the flour, salt and pepper; stir until smooth. Gradually add milk and bring to a boil. Boil and stir for 2 minutes. Remove from the heat. Add the mayonnaise, dill and curry; stir until smooth. Set aside. In a skillet over medium heat, brown chicken in oil. Place in a greased shallow 3-qt. baking dish. Pour sauce over chicken. Bake, uncovered, at 350° for 50-60 minutes or until meat juices run clear.

2 boneless skinless chicken breasts
1 tablespoon all-purpose flour
1 pinch salt
1 pinch pepper
1 teaspoon butter
1 teaspoon vegetable oil
1/4 cup white wine or 1/4 cup chicken stock
1/3 cup whipping cream
1 tablespoon fresh dill
2 teaspoons chopped fresh chives or 2 teaspoons green onions
1/2 teaspoon lemon juice
lemon slice (to garnish)
dill sprigs (to garnish)

Steps:

  • Dredge the chicken breasts lightly in flour; season with a pinch each of salt and pepper.
  • In a skillet, heat butter and oil over medium-high heat; cook chicken, turning once, for about 6 minutes or until golden brown and no longer pink inside.
  • Remove from the pan and keep warm.
  • Pour off all the fat from the pan.
  • Pour in the wine and bring to a boil over high heat; cook, stirring to scrape up any brown bits in the pan, for about 1 minute or until reduced and syrupy.
  • Add the cream; boil for about 1 minute or until thick enough to coat a spoon.
  • Stir in the dill, chives, lemon juice, and salt and pepper to taste.
  • Stir any accumulated juices from the chicken back into the pan; pour the sauce over the chicken.
  • Garnish with lemon slices and dill sprigs.

3/4 cup dry basmati rice
olive oil
1 medium onion
2 garlic cloves
1 lb chicken breast
1 lb sour cream
1 teaspoon cinnamon
2 teaspoons turmeric
2 1/2 teaspoons dill
1 1/2 teaspoons salt

Steps:

  • Cook rice.
  • Heat up a frying pan over medium high heat.
  • Chop onion.
  • Put enough olive oil in the preheated pan to saute the onion.
  • Saute the onion.
  • After a minute or two add the garlic to the pan.
  • Saute the mixture util the onion is translucent.
  • Chop the chicken breast while the onion is cooking. Salt one side of the chicken. Make sure that the chicken is dry before cooking it.
  • Transfer the cooked onion and garlic to a wok.
  • Put the pan back on the heat and turn it up higher.
  • Once the pan is hot add enough olive oil to saute the chicken, then add the chicken.
  • Cook the chicken for about 3 minutes per side so that it gets a good sear on each side.
  • As the chicken cooks add the sour cream to the wok with the garlic and onions.
  • Heat the wok mixture on low to medium low heat. Make sure not to heat too fast or the sour cream will seperate.
  • When the chicken is done cooking add it to the wok mixture.
  • Add cinnamon, turmeric, dill, and salt to mixture and stir.
  • Once heated serve with the rice.

3 pounds bone-in chicken pieces
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup milk
1 cup sour cream
1 teaspoon dry onion soup mix
1 teaspoon dried dill weed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Place the chicken pieces into the prepared baking dish. Pour the mushroom soup (undiluted), milk, and sour cream over the chicken. Season with onion soup mix and dill. No need to stir.
  • Bake for 1 1/2 hours in the preheated oven, or until the chicken is falling off the bone. The longer you can cook it, the better it will taste.
