INDIAN -SPICED PORK GREEK YOGURT



Indian -Spiced Pork Greek Yogurt image

Great indoor cooking meal for a weekday or weeknight treat. Cooking time includes 35 minutes standing time.

1 teaspoon coriander seed
1 teaspoon cumin seed
1 teaspoon fennal seeds
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
1 (1 lb) pork tenderloin, trimmed
1 cup grated English cucumber
2/3 cup plain 2% Greek yogurt
1 1/2 teaspoons grated lemon rind
1/4 teaspoon salt
1 dash ground red pepper
1 garlic clove (minced)

Steps:

  • Combine coriander, cumin, fennel seeds, 1/4 teaspoon salt and 1/4 teaspoon pepper in a spice grinder, and process until finely ground.
  • Brush canola oil over tenderloin, and rub with spice mixture.
  • Place pork on a roasting pan and let stand at room temperature for 30 minutes.
  • Preheat oven to 425 degrees.
  • Roast pork at this temperature for 15 minutes or until a thermometer registers 145 degrees.
  • Let stand 5 minutes, and slice.
  • Squeeze moisture from 1 cup grated english cucumber.
  • Combine cucumber, yogurt, lemon rind, 1/4 teaspoon salt, dash red pepper, and minced garlic clove.
  • Serve with pork.
