This is a delicious one pot recipe for Couscous that I got from the Food and Drink Magazine, recipe by Lucy Waverman. It's a wonderful blend of flavours that my family really enjoys, I hope you do too! You can use vegetable stock if you'd like this recipe to be vegetarian. :)

1/2 cup canned chick-peas, rinsed
1/2 cup finely chopped carrot
1/2 cup finely chopped zucchini
1/2 cup chopped green onion
2 tablespoons olive oil
1 1/2 cups vegetable stock or 1 1/2 cups water
2 tablespoons chopped parsley
1 teaspoon paprika
1/4 teaspoon chili flakes
salt
1 cup couscous
1/2 cup raisins

Steps:

  • Combine chickpeas, carrots, zucchini, onions and olive oil in a pot, add stock, parsley, paprika, chili flakes and salt to taste.
  • Bring to boil and sprinkle in couscous.
  • Stir around, add raisins, cover and remove from heat, let sit 5 minutes, uncover and stir again.

These Indian-inspired roasted vegetables have a pop of flavor and a hint of heat from the aromatic and well-known Indian spice blend, garam masala. If you cannot find garam masala in the international section of your grocery store or ethnic market, there are many recipes available online to make your own.

3 tablespoons olive oil
2 teaspoons garam masala
1 teaspoon salt
2 medium potatoes, peeled and cut into 1-inch cubes
2 cups cauliflower florets
1 medium yellow onion, cut into 1/2-inch wedges
2 tablespoons minced cilantro

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Whisk olive oil, garam masala, and salt together in a small bowl. Combine potatoes, cauliflower, and onion in a large bowl. Drizzle with oil mixture and toss to coat. Spread vegetables out on the prepared baking sheet.
  • Roast in the preheated oven, stirring every 10 minutes, until vegetables are tender and edges are browned, 30 to 35 minutes. Remove from the oven and sprinkle with cilantro.

Number Of Ingredients 22

1 1/2 teaspoons turmeric (eyeball it in your palm)
1 teaspoon ground coriander (eyeball it)
1 teaspoon cumin seeds
1 tablespoon curry powder (about a palmful)
1/2 teaspoon cayenne pepper
2 pinches of ground cinnamon
3 large waxy white potatoes, peeled and diced
Coarse salt
1 head of cauliflower, cut into small florets
1 tablespoon vegetable oil (once around the pan), plus some for drizzling
2 tablespoons unsalted butter, cut into pieces
1 medium onion, chopped
3 garlic cloves, chopped
1 15-ounce can chick peas, drained
1 cup chicken stock or broth
1 cup frozen green peas
1 small head of iceberg lettuce, shredded
1/4 cup sliced or slivered almonds
4 radishes, thinly sliced
3 tablespoons chopped fresh mint
3 tablespoons chopped fresh flat-leaf parsley or cilantro, your choice
Juice of 1 lemon

Steps:

  • Combine the ingredients for the spice blend and reserve.
  • Place the potatoes in a pot and cover them with water. Cover the pot with a lid and bring to a boil. Take off the lid and add salt. Boil the potatoes for 6 to 7 minutes, then add the cauliflower to the same pot. Cook for 2 to 3 minutes longer, then drain. The potatoes and cauliflower should still be a little undercooked.
  • Heat a large skillet over medium heat. Add the vegetable oil, then the butter. When the butter melts into the oil, add in the onions and garlic and sauté for 5 minutes. Add the drained potatoes and cauliflower and the chick peas and combine. Stir the reserved spices into the vegetables and cook for a minute or two to develop the flavors. Stir in the stock and turn the vegetables to evenly distribute. The dish will turn a bright yellow. Cook over medium-low heat for 2 to 3 minutes longer. Add the peas and turn off the heat. The carry-over heat will warm them through. Taste to adjust the salt in the dish.
  • In a large bowl, combine the shredded lettuce with the almonds, radishes, mint, and parsley or cilantro. Dress the salad with the lemon juice, a drizzle of vegetable oil, and some salt. Pile the salad on plates, top with the hot vegetables, and serve.

1 tablespoon pine nuts
1 onion, sliced
1 tablespoon sweet chili sauce
1 teaspoon ground cumin
1 teaspoon fresh ginger or 1/2 teaspoon ground ginger
300 g chickpeas, drained (canned or freshly cooked dried chickpeas)
1 red capsicum, chopped
1/2-1 bunch spinach, leaves shredded
1 large zucchini, sliced
1 carrot, sliced
1 (440 g) can peeled tomatoes
1 tablespoon tomato paste
1/2 cup wine (optional)
cracked pepper
2 cups couscous
2 cups water

Steps:

  • Place pine nuts in frying pan and toast lightly for 1 minute.
  • Add onion, chilli sauce, cumin and ginger and stir over a high heat for 5 minutes or until onions are soft.
  • Add chickpeas, capsicum, spinach, zucchini, and carrot, and stir-fry for 4 minutes.
  • Add remaining ingredients and cook for 4 minutes longer or until vegetables are soft.
  • Meanwhile prepare couscous.
  • Place couscous in a serving bowl, pour on boiling water, cover and set aside for 3 minutes.
  • Use a fork to rake the couscous to separate grains.
  • Top with vegetable mixture.

3 tablespoons extra-virgin olive oil (EVOO) (3 times around the pan)
1-inch piece fresh gingerroot, peeled and minced or grated
1 teaspoon cumin seeds (1/3 palmful)
1 teaspoon crushed hot red pepper flakes
3 garlic cloves, crushed
1 head cauliflower, cut into florets
3 baby eggplants (1 1/2 pounds), cut lengthwise into 1-inch wedges
1 small yellow onion, sliced
1 can (15 ounces) chickpeas
1 tablespoon ground coriander (a palmful)
1 1/2 teaspoons turmeric (half a palmful)
1 teaspoon allspice (1/3 palmful)
1 teaspoon salt
1 cup chicken stock or broth
1/3 cup couscous
1 cup fresh basil leaves, torn or shredded, or 1/4 cup chopped fresh cilantro, for garnish

Steps:

  • Heat a deep nonstick skillet or pot (choose one that has a tightfitting lid) over medium-high heat with the EVOO. When the EVOO ripples, stir in the ginger, cumin, red pepper flakes, and garlic, then add the cauliflower. Stir and sear the cauliflower, caramelizing it at the edges, 2 or 3 minutes, then push it to the side of the pan. Add the eggplant and onion and let them sit for 3 minutes or so; they will caramelize bit as well at their edges. Toss to combine the vegetables and add the chickpeas. In a small dish mix the coriander, turmeric, allspice, and salt. Stir in the spices and chicken stock and combine well. Bring the stock up to a bubble, 1 minute. Stir in the couscous and place a lid on the pan. Turn the heat off and let the pot stand for 5 minutes, covered. Remove the lid and fluff the mixture with a fork. Top each portion liberally with either torn or shredded basil or chopped cilantro.
