Who said you need beans to make a great chili? My No Bean Chili recipe has simple ingredients and a whole lot of flavor.

2 pounds ground beef (can mix it up w/ ground pork or turkey also)
1 green bell pepper (diced)
1 large onion (diced)
4 cloves garlic (minced)
2 tablespoons chili powder
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon salt (plus more to taste)
½ teaspoon black pepper (plus more to taste)
¼ teaspoon cayenne pepper (optional)
2 tablespoons tomato paste
1 ½ cups beef broth
1 14.5 oz can diced tomatoes
1 10 oz can diced tomatoes and chilies
1 8 oz can tomato sauce
1 ½ tsp Worcestershire sauce
1 tsp granulated sugar

Steps:

  • Add ground beef to a large Dutch oven set over medium-high heat. Cook the beef for 5-6 minutes, crumbling it as it cooks, until it begins to brown. Drain off any excess fat.
  • Reduce the heat to medium, then add the green pepper, onion, and garlic and cook for 3-4 minutes, stirring occasionally, until the vegetables are softened.
  • Season the mixture with chili powder, paprika, cumin, salt, pepper, and cayenne. Stir in the tomato paste and cook for 1-2 minutes. Add the broth and deglaze the pot with a wooden spoon, reduce for about 2 minutes.
  • Stir in the diced tomatoes, tomato sauce, Worcestershire sauce, and sugar. Bring the mixture to a boil, reduce the heat, cover, and simmer for at least 20-25 minutes.
  • Taste and season if necessary, then serve with your favorite sides and toppings.

1 Tablespoon olive oil
1 onion (diced)
1 red bell pepper (diced)
1 green bell pepper (diced)
1 rib celery (diced)
2 garlic cloves (minced)
1½ pounds lean ground beef
28 ounces diced tomatoes (undrained, 2 (14 ounce cans))
8 ounces tomato sauce
1½ Tablespoons chili powder
½ Tablespoon smoked paprika
2 teaspoons garlic powder
1 teaspoon ground cumin
½ teaspoon oregano
½ teaspoon granulated sugar
dash of cayenne pepper
salt and pepper, to taste
Favorite chili toppings for serving (sour cream, shredded cheddar cheese, diced green onions, Fritos corn chips)

Steps:

  • Press the SAUTE button on the Instant Pot. When the pot is warm, add oil.
  • Add in the onion, bell peppers, celery, and garlic. Saute for 3-4 minutes or until vegetables start to turn tender.
  • Add in the ground beef and cook until it browns (about 5 minutes).
  • Scrape the bottom of the pot with a wooden spoon to make sure there are no burnt pieces on the bottom of the pot (so that you don't get the "BURN" notice).
  • Add in the remaining ingredients and place the lid on the Instant Pot.
  • Press the PRESSURE COOK button and set timer for 12 minutes. Remember that it will take about 10-15 minutes for the pot to come to pressure.
  • When the timer is done, you can do a quick release of the pressure (or you can let this sit on "Keep Warm" all day long and really let those flavors meld together!).
  • Remove lid, stir together, and serve with your favorite chili toppings.

  • Add onion, pepper, tomato sauce, diced tomatoes, tomato paste, chili powder, garlic powder, cumin, dried oregano, granulated sugar, cayenne pepper, salt and pepper to Instant Pot. Stir to combine.
  • Cover, place into lock position, and make sure the valve is in the sealing position. Press 'bean/chili button' and cook on high pressure for 15 minutes. If you don't have the 'bean/chili' button, cook on 'manual' for 15 minutes. **Remember that it will take about 15 minutes to come to pressure and then the time will start counting down**
